Josep, the artisan cheesemaker of the small (10 person operation), family owned Formatges de Sant Gil, welcomed us into his small factory in the Catalonian countryside 1.5 hrs north west of Barcelona. It was amazing to see the work and care put towards the making of the aged goat’s milk cheese, Garroxta. The Garroxta is meticulously cleaned of the natural molds that form on the rind many times before being rubbed in olive oil and shipped off to the states.
