Once the ganache has finished crystallizing, a thin layer of tempered chocolate is used to seal in the filling. This process is called “capping” or “bottoming.” A good cap (meaning without any cracks or leaking) helps to maximize the shelf life of the bonbons. When packaging my bonbons I check the bottom of each one to verify there are no issues. If any cracking has occurred they are perfect for sampling.
