Anyone else have a freezer drawer full of frozen berries and other fruits? I find it a blessing that you can freeze most fruits. I never waste any fruit that I cannot consume. As soon as I know the amount I need for that week I just freeze what's left before it starts to go bad. I will just grab some berries and add them to my overnight oats and they are perfect and ready to enjoy by morning. If I'm baking and want to add cherries etc...I just add frozen and bake as normal. Still tastes just as good. For smoothies and acai bowls having lots of frozen banana is an absolute must so you never run out. As promised to my lovely Melody the recipe for my homemade lime biscuits. . Line a baking tray ready for biscuits In a bowl mix:- 30g coconut 10g coconut oil 50g honey or maple syrup (I used maple) 100g flour (I used spelt flour) Juice of one lime and use zest if preferred for added texture Pinch of Salt This will form a dough like mixture. Leave to settle for 5 minutes then divide into balls and flatten like a biscuit. Smaller size results in more biscuits. Bake 180' for about 10 minutes and then turn over and bake further for 2 minutes. Cool on cooling rack before melting 2 squares of Dark chocolate to be drizzled over biscuits.
