Batata vada is a popular Indian vegetarian dish and literally means potato fritters. Made these for today's navratri fast! It's a traditional deep fried snack often served with spicy cilantro dip but I cooked these in paniyaram pan to avoid too much of oil and turned out very delicious. These farali batata vada is made during fasts and can be eaten with curd or cilantro dip. These luscious piping hot vadas are a treat for all who are too fond of eating spicy food but you can make it less spicy if you want. Ingredients: 1/2 cup barnyard millet (sama ke chawal) 1 cup pomegranate seeds 1 carrot, grated 1 apple, chopped 1/2 cup cherry tomatoes, halved 2 tbsp pumpkin seeds 1 tbsp freshly squeezed lemon juice rock salt and pepper to taste . Instructions: Wash the millet thoroughly. Add 1 cup of water to the pan and let it comes to a boil. Once it starts to boil, add millet and cover the pan with lid and let it cook for 15-20 minutes. Fluff the millet and remove millet to a bowl. Let it cool completely. Take a salad bowl, add millets, apples, carrots, pomegranate seeds and cherry tomatoes and combine well. Add lemon juice, rock salt amd pepper and toss well. Garnish with pumpkin seeds and serve chilled. . . . . Tapioca pudding is a delicious combination of sago and milk, served with lots of fruits. It's texture is creamy, luscious and absolutely melts in the mouth. This time I have not added any artificial sweetener to this pudding, but infact just added dates mixture in sago for sweetness which turned out very healthy and delectable. This dish is quite filling and perfect for navratri vrat meals. This is a very easy dish to cook and requires some basic ingredients which are mostly available at home. Here's the recipe πŸ‘‡ . . Ingredients: 1/2 cup tapioca pearls 1/2 litre milk and 1/2 cup warm milk 1/2 tsp cinnamon powder 12-15 pitted chopped dates 1 cup pomegranate seeds 1 cup apples, chopped 1 banana, chopped 3-4 tbsp dried blueberries 2 tbsp almonds, chopped . . Instructions: Take 1/2 cup warm milk in a small bowl and add dates. After 5-10 minutes blend this mixture in a blender and makes a smooth paste. Keep aside. In a large bowl, add 1 cup of water and soak washed sago pearls for 1-2 hours or till they bloom completely. Heat milk in a heavy bottomed pan, till it starts to boil. Add sago pearls and cook for 10-12 minutes stirring continuously on low to medium heat till the milk thickens and sago pearls starts turning transparent and light. Add cinnamon powder and dates paste and stir till date mixture dissolves completely. Cover and refrigerate until chilled at least 3-4 hours. Time to assemble! In a bottom of your wine glasses, add a tbsp of pomegranate seeds, apples and bananas. Spoon a thick layer of sago pudding on the top of the fruits. Again add a layer of pomegranate seeds and apples. Garnish with few blueberries and chopped almonds. Eat immediately or keep refrigerated until you are ready to eat. Enjoy! . . . Good morning friends!! . Today's recipe is Potato Rosti with hung curd and absolutely can be eaten during navratri fasting. This dish is quite filling and perfect for vrat meals. Rosti is a Swiss potato dish in the style of fritter, crisp on the outside and soft on the inside and outcome is very delicious everytime. Instead of deep frying, I shallow fried it in a non-stick pan to avoid oil and makes it more healthier option. And topped with hung curd with cucumber and roasted peanuts. Ingredients: 2 potatoes 2 tsp black pepper powder Rock salt to taste 1 tbsp oil 3-4 tbsp hung curd 3 tbsp grated cucumber 2-3 tbsp roasted crushed peanuts Mint leaves to garnish . . Instructions: For the dip- Take a small bowl and whisk together hung curd, grated cucumber, roasted peanuts, rock salt and pepper and set aside. For the Rosti- Grate the potatoes using the large holes of a hand grater. Put the potatoes in a large bowl, add rock salt and pepper and toss to coat thoroughly. Using your hands, squeeze as much liquid as possible out of potatoes and keep aside. Heat a non-stick pan and add oil to it. Once the oil is hot, add grated potatoes in the shape of tikki or any other shape and thickness you prefer. Cook the potatoes over medium heat for 5-6 minutes, until they become golden brown on one side. Then flip and repeat on the other side. Once done, layer a tbsp of hung curd mixture on the potato rosti and garnish with mint leaves. Tapioca is a delicious way to keep full during the fasting season and this sabudana pulao is a very simple dish made with tapioca pearls cooked with carrots and potatoes. . Ingredients: 1 cup sabudana (tapioca pearls) 1/2 cup potatoes, boiled and cubed 1/2 cup roasted peanuts 1 carrot, grated 1 tsp ginger, grated 1 green chilli, chopped 1 tsp cumin seeds 1 tbsp freshly squeezed lemon juice 3-4 tbsp chopped cilantro 1 tsp ghee or oil Rock salt to taste . . Instructions: Soak tapioca in water for 1-2 hours. Drain the tapioca quite well and keep aside in a bowl. In a non-stick pan, heat oil or ghee over medium heat. Add cumin seeds and let it crackle. Add green chillies and ginger and fry them for a minute. Add potatoes and carrots and let it fry again for a minute. Add tapioca pearls and keep stirring the mixture. When the tapioca pearls looses their opaqueness and starts becoming translucent, they are cooked. Cover the pan with a lid and let it cook further for 1-2 minutes. Don't over cook as they might become lumpy and hard. Add salt, lemon juice and roasted peanuts and mix well. Garnish with cilantro and serve hot. . . . . Today is the first day of Navarti, also called as Maha Navarti. It's the beginning of the most auspicious nine days period. . Many of you must be observing fast for these nine days as fasting is considered as an intergral part of this auspicious occasion and many people eat gluten free food and refrain themselves from eating grains like wheat and rice. They eat lots of fruits but very less vegetables. Today, I cooked gluten free vrat ki tikki made out of barnyard millet which is popularly known as sama ke chawal. . . Ingredients: To cook barnyard millet- 1/2 cup sama ke chawal 1 cup water . For tikki- 1 cup potatoes, boiled 2-3 tbsp chopped cilantro 1 green chilli, chopped 1 tsp grated ginger 1 tsp lemon juice 1 tsp black pepper powder Rock salt to taste 1-2 tbsp oil for shallow fry . . Instructions: Wash the rice thoroughly. Add 1 cup of water to the pan and let it comes to a boil. Once it starts to boil, add rice and cover the pan and let it cook for 15-20 minutes. Fluff the rice and remove the rice to a bowl. Let it cool completely. Take a separate bowl, add all the ingredients along with rice except oil and combine well. Shape the tikkis in a round shape or your own desired shape. Heat oil in a non-stick pan and add tikkis to it. Cook them from both the sides or until golden brown color from both the sides. Serve hot with vrat ki chutney or dip. . . . . . . These chicken skewers are full of flavor, and so easy to make either on the grill or on the stove. It's delicious and a healthy meal. These grilled chicken skewers are so tender, juicy and flavorful- quick and easy meal. The chicken is marinated in lemon garlic dressing for a few hours to get all tasty yum. And then they are threaded onto skewers and grilled to delicious perfection and topped with some fresh cilantro and served with mint dip. . I always love quick cooking specially in weekdays. That's why, I love simple marinades, you can mix them up in less than 10 minutes early in the day and all you have to do at dinner time is throw stuff on the grill or pan. This is hands- down my favorite kind of cooking. . . Ingredients: 300 gms boneless chicken breasts 2 tbsp hung curd 2 tbsp olive oil 2 tsp minced garlic 2 tbsp freshly squeezed lemon juice 2 tbsp fresh minced cilantro 1 tsp red chilli powder 1/4 tsp tumeric powder 1/2 tsp cumin powder Salt and pepper to taste . . Instructions: Cut the chicken into 1.5 inch strips for skewering. In a bowl, whisk together all the ingredients and add chicken to it. Cover the bowl with the plastic wrap and place the bowl in the refrigerator and let the chicken marinate for 2-3 hours. Meanwhile, soak the wooden skewers in water about half an hour. Generously grease the grill pan with oil and heat over medium heat. Skewer the chicken evenly divided between 6-8 skewers. Place the skewers on the pan and cook for 10-12 minutes, turning once or twice during cooking until cooked through or till it turns golden brown in color. A quick and easy Indian appetizer. Amazingly simple and delicious recipe of Paneer Tikka. It's a kind of finger licking starter which none of us can resist! It's one of the easiest and healthiest snack that can be made at home very easily and these succulent chunks of paneer, capsicum and onions are marinated in a mixture of yogurt and other spices. Tikkas are always a treat and can't be resisted because of the spices and tenderness of paneer. This paneer recipe is a hassle free and a delicious dish that everyone will enjoy. . . . Ingredients: 200 gms paneer, cubed 1 onion, petals 1 green capsicum, cubed 1/2 cup hung/thick curd 1tsp ginger garlic paste 1 tsp kashmiri red chilli powder 1/2 tsp tumeric powder 1/2 tsp coriander powder 1/2 tsp cumin powder 1/2 tsp garam masala 1/2 tsp kasoori methi 1 tsp chaat masala 2 tsp gram flour 1 tsp lemon juice Salt to taste 2 tsp mustard oil . . Instructions: In a large bowl, add hung curd. Further add all the spices along with1tsp of oil. Mix well till all the spices are combined well with curd. Now add onion petals, cubed capsicum and paneer. Mix gently till all the vegetables and paneer are coated well. Cover the bowl and refrigerate it for 1-2 hours. Meanwhile, take few wooden skewers and dip them in water for 15-20 minutes. Insert the marinated paneer, capsicum and onions into these wooden skewers. Heat the grill pan with1tsp of oil over medium heat. Place the skewers on the pan and grill the paneer and vegetables till roasted well. For the dressing- 2 tbsp hung curd 1 tbsp extra virgin olive oil 1/2 tsp tabasco 1 tsp fresh lemon juice 2 tbsp chopped spring onion greens Salt and pepper to taste . . Instructions: In a small bowl, add all the dressing ingredients and whisk well and set aside. Place bulgur wheat in a bowl. Add 1 cup of boiling water, stir and cover the bowl with lid and let stand for 15-20 minutes. Drain off any excess liquid and set aside. Meanwhile, in the boiling water, boil broccoli florets for a minute and drain and set aside. In a salad bowl, add all the salad ingredients except pomegranate seeds and mix well. It's simple and delicious Middle Eastern eggplant dip that is low carb, gluten free and vegan. You can pair it with pita bread, crackers, nachos or vegetables like carrots, cucumber for a mouth watering appetizer that your family and friends will love! ❀️ And is a tasty little spread. This dip is considered a healthy dish. It's high in both dietary fiber and protein!! . . Ingredients: 1 aubergine 2 tbsp tahini 2 tbsp fresh lemon juice 1 tsp cumin powder 5-6 cloves of garlic 2 tbsp olive oil Salt to taste Pomegranate seeds for garnishing . . Instructions: Prick the aubergine at many place with a help of fork. Roast aubergine on stove top from all the sides till it is soft from inside. Check with the help of knife if its done, when you prick with a knife it will go in smoothly and would feel cooked. Remove from the burner and place on a plate to cool. Peel the blackened skin from it and discard it. Chop the flesh. In a blender, add all the ingredients except pomegranate seeds and blend till smooth. Add little water if required. Drizzle with olive oil and garnish with pomegranate seeds. Serve with your choice of pita bread/ chips/ vegetables. Freshly baked breads and cakes are usually a delight for me but this time I got an inspiration to try my hand on one of the baked twisted cheese bread sticks. I absolutely loved baking them and it was super fun. They go best with dips like hummus, cheese dip and many more. And these makes a stunning centerpiece to share with friends and family over drinks or as a party starter. . Make ahead, for fuss-free entertaining. Everyone will love it. Believe me.... Thats true! . . . Ingredients: . *1 cup water *1 tbsp sugar *1 tbsp active dry yeast *1 cup whole-wheat flour *1 cup all purpose flour *1 tsp salt *1 tbsp extra virgin olive oil To brush on top- . *3-4 tbsp butter *1 tsp dried oregano *1 tsp red chilli flakes . * 1/2 cup grated cheese . . Method: In a small bowl, mix the water, yeast and sugar together and let it sit for 5 minutes. In a large bowl, add both the flours, salt amd mix. Pour the yeast water to the bowl amd make the dough until smooth. Apply olive oil to the dough and cover it with cling wrap and set aside. Let the dough rise for 30 minutes. Roll out the dough on the floured surface into a large square. Brush the top with melted butter, sprinkle oregano, chilli flakes and cheese. Fold the dough in half and cut into 15-20 long thin strips. Twist each strip with fingers and place on a baking pan. Let the twist sit for another 15-20 minutes to rise a bit. Preheat the oven to 200Β°C. Bake them for 15-18 minutes or until golden brown. Once they are baked, again brush the sticks with some butter. Ingredients: 200 gm wholewheat pasta (You can choose your own favorite pasta) 2 cups vegetables (I chose broccoli, red, yellow, red bell peppers, zucchini) 1 onion, finely chopped 1 tbsp olive oil 1 tbsp chopped garlic 4-5 tbsp Italian tomato pasta sauce (You can check this recipe in my earlier post) 2 tbsp fresh chopped basil leaves Salt and pepper to taste 1/4 tsp dried oregano 1/4 tsp red chilli flakes . Method: Boil the pasta in a big pan with plenty of water and salt till Al Dante. Drain and set aside. Heat olive oil in a non-stick pan, add onions and garlic and saute for 1-2 minutes till it is lightly brown. Add all the vegetables and saute for 4-5 minutes and mix well. Add the boiled pasta in the pan with the vegetables. And add Italian tomato pasta sauce and mix well. Add salt, pepper, oregano, red chilli flakes and basil leaves and mix well till sauce is coated well with veggies and pasta. Transfer the pasta into a serving dish and serve hot with your choice of garlic bread. . . . . I love this cake because it turns out perfect everytime. It never disappoints. It is super moist and kids will definitely love it. Just top the cake with simple vanilla glaze and it always turn out impressive. . . Pumpkin itself is actually a nutrition powerhouse. It is packed full of vitamin A which promotes good vision and maintains healthy skin. Pumpkin is loaded with fiber too and contains vitamin C and potassium and potassium refuels your body, it can keep you feeling full for longer on fewer calories. It's a perfect dessert to make ahead of time. Infact, I think this cake tastes even better the next day!! . And fresh tomatoes are essential for this recipe which enhances the flavor and toss in some fresh basil for a great aroma. A great homemade Italian tomato sauce is easy to make and little patience you require , but it's definitely worth it. The secret lies in slowly simmering the tomatoes with onions, basil and garlic until it reaches a creamy but still a bit chunky texture and has just the right balance of sweetness and salty when you taste it!! . . . Ingredients: 8-10 tomatoes 1 onion, finely chopped 7-8 cloves garlic, crushed A bunch of fresh chopped basil leaves 1 tbsp olive oil 1 tsp dried oregano 1tsp red chilli flakes Salt and pepper to taste A pinch of sugar 1/2 tsp vinegar . Instructions: Wash the tomatoes and make a cross section on the top using a knife. Heat water in a large pot and once the water boils, add tomatoes and let them cook for 2-3 minutes. Drain the water and let the tomatoes get cool. Remove the skin of the tomatoes and cut into halves. Mash the tomatoes with your hands and keep aside. Heat oil in a pan, add garlic and saute for a minute. Add onions and cook till onions are translucent and then add tomatoes. Let it cook for atleast 8-10 minutes. Add basil leaves and season with salt and pepper, oregano, red chilli flakes and a pinch of sugar and gently stir fry for further 4-5 minutes. In the last add vinegar and cook for another 1-2 minutes. Vinegar is added so that sauce doesn't spoil easily. The sauce is ready and has just the right balance of sweetness and savoury when you taste it. This creamy and delicious tagliatelle recipe really showcases the power of simple but classic flavors and it's quick meal which is extremely tasty as well. This pasta is rich, a treat to enjoy occasionally, but the bright hits of basil helps to make it a much more well rounded dish!! ❀️ . . Ingredients: 300 gms tagliatelle 50 gms butter 250 ml cream 2 cloves garlic, crushed 50 gms mozzarella cheese 4 tbsp basil, finely chopped 1/4 cup boiled 1 inch chicken pieces 1/2 onion, finely chopped Salt and pepper to taste Instructions: Bring a large pot of salted water to boil. Add pasta and cook for 3-4 minutes till pasta is tender. Drain the pasta and set aside. Melt butter in a sauce pan over medium low heat. Add garlic and onions, cook for 2-3 minutes until onion is light golden and soft. Add chicken and saute for another 2-3 minutes. Add cream and simmer for 5 minutes, then add cheese and whisk quickly, heating through. Season with salt and pepper. Add basil and boiled pasta and toss gently in the sauce for about a minute. If you ever wonder how the name'frittata'came into existence was because it was called as the egg cake in Italian. There are different techniques to make frittata but I made using a saucepan and cooked over medium heat. . I created this recipe to use up some fresh yellow zucchini, tomatoes, jalapenos, onions and spinach. It is so easy to make because you don't have to fuss with a crust. Give it a different twist by trying it with whatever veggies you have in hand. And can be served anytime, tastes so good cold or warm. So simple, you'll go gaga for frittata. Having this is a perfect dose to add in the required amount of nutrients into your body. Eggs are fantastic source of lean protein and also contains heart healthy omega-3 fatty acids. I paired this with whole-wheat toasted bread to make it a healthy diet!! .. . . Ingredients: 2 whole eggs 40 ml milk 1 tsp minced garlic 1 tsp olive oil 1 onion, sliced 1 tomato, sliced 1/2 cup yellow zucchini, chopped 1/4 cup Spinach, chopped 2 tbsp jalapenos, chopped 1 tsp dried oregano 1 tsp red chilli flakes Salt and pepper to taste Instructions: Heat oil in a 10 inch skillet over medium heat. Add garlic and fry it for a minute. Add all the veggies and saute for 2-3 minutes and sprinkle red chilli flakes and oregano. Beat eggs, milk, salt and pepper together with a whisk in a small bowl and pour over the veggies mixture in the skillet. Cover the skillet and reduce the heat to medium low and cook until the egg is lightly browned on the bottom and firmed, approx 3 to 5 minutes. Carefully flip the frittata and cook until the other side is again lightly browned. I was majorly craving brownies today, so instead of driving or ordering from the store, I decided to whip some flour less chickpea chocolate brownies and they are scrumptious! I topped it with chocochips and cocoa powder inside it for a yummy taste. And absolutely loved them with my coffee. . Just ooey, gooey, fudgy they are and complete with a decadent chocolate center and the perfect crackly top. They are absolutely gluten free. No one can tell that they're made with chickpeas instead of the flour because they taste exactly like a chocolate brownie. Chickpeas are just very versatile and I thoroughly enjoyed making these succulent chocolate brownies out of beans. They are just the perfect way to satisfy your sweet tooth. They are healthy, fudgy, rich, moist and addicting and completely nutritious in addition to being tasty. . . Ingredients: 2 cups boiled chickpeas 2 eggs 1 cup powdered sugar 1/2 cup olive oil/ vegetable oil 1/2 tsp baking soda 1 tsp baking powder A pinch of salt 1/4 cup cocoa powder 1/2 cup chocolate chocochips . . Instructions: Preheat the oven to 180Β°C. Line a approx 10 inch square baking tin with a parchment paper. In a food processor, blend chickepas, eggs, oil, sugar, baking powder, baking soda, salt and cocoa powder. Once creamy and smooth, take off the lid and stir half of the chocolate chocochips. Pour into a baking tin, and again add rest of the chocochips on the top of the batter . Bake for 30-35 minutes or until toothpick inserted in center comes out clean. It's a lip smacking Indo Chinese preparation of chicken tossed in intense flavors and made into gravy, goes best with noodles or fried rice. It instantly lifts up the dish, giving it a lovely after taste!! It's basically fried chicken cubes coated with egg batter but I didn't fry it. I chose to stir fry the chicken to make it healthy with a mouth watering sweet and sour sauce. And you can make this food right in your kitchen with simple ingredients that you have in your pantry. . . Ingredients: 400 gms boneless chicken, cut into 1 inch cubes 1 tbsp cornstarch 1 egg Salt and pepper to taste 1 tsp oil 1 tsp minced garlic 1 tsp minced ginger 1/4 cup red capsicum, cubed 1/4 cup broccoli, florets 1/4 cup onions, cubed 1/4 cup zucchini, cubed For the sauce- 4-5 tbsp water 2 tbsp tomato ketchup 1 tbsp vinegar 1 tbsp dark soy sauce 1 tbsp sugar 2 tbsp orange juice 1 tsp red chilli sauce 1 tbsp cornstarch Instructions: Whisk all the sauce ingredients in a small bowl and keep aside. Marinate the chicken with an egg, cornstarch, salt and pepper in a large bowl and keep it aside for 30 minutes. Later, in a wok, heat oil and cook the marinated chicken until done. Add broccoli, onions, capsicum and zucchini and saute for 2-3 minutes on a high heat. Add 2 cups of water in the wok. Add the sauce mixture and let it comes to a boil. Cook till the sauce thickens. Garnish with spring onions greens. Serve hot with fried rice or plain rice.
