This salad is quite easy to make, and you can prepare it ahead of time if you like. All you need to do is cook the pasta, add the vegetables and toss all the ingredients together to make this incredible combination of Italian flavors.
Here's the recipe 👇
For the salad-
1 cup spaghetti pasta
1 cucumber, chopped
1 cup cherry tomatoes, halved
1 small onion, sliced
1/4 cup black pitted olives, sliced
1/2 cup yellow and red bell peppers, chopped
2 tbsp grated parmesan cheese
For the dressing-
2 tbsp extra virgin olive oil
2 cloves of garlic, minced
1 tsp Dijon mustard
2 tbsp fresh lemon juice
1/2 tsp dried oregano
1/2 tsp dried parsley
1/2 tsp dried basil
Salt and pepper to taste
Combine all the dressing ingredients in a small mason jar, close the lid tightly and shake well. Set aside.
In a large pot, add water and cook the spaghetti till Al Dente.
Drain the pasta and rinse in cold water and set aside.
In a large salad bowl, add pasta, cucumbers, cherry tomatoes, olives, onions, red and yellow bell peppers.
Add the dressing all over the salad and toss well.
Sprinkle parmesan cheese and serve chilled. .
