Blondies over Brownies?? . Yes! Give these a chance!! . Cooking is my therapy. It always picks me up, calms me down and makes me feel creatively quenched. And cooking is always a pure comfort!! ❀️ . Whole-wheat walnut and white chocolate Blondies- chewy, fudgy, mildy gooey and full of buttery goodness. These luscious bars are truly amazing. . . Here's the list of ingredients πŸ‘‡ 1 cup butter, melted 2 cups brown sugar 2 eggs 1 tbsp vanilla extract 2 cups whole-wheat flour 1 tsp salt 1/4 tsp baking powder 1 cup white chocolate chips 1 cup walnuts, coarsely chopped . . Instructions: Preheat the oven to 180Β°C. Grease the baking pan with butter and apply the parchment paper and keep aside. In a large bowl, add butter, eggs, brown sugar and whisk until smooth. Fold in flour, baking powder, vanilla extract and salt. Stir in walnuts and white chocolate chips into the batter and transfer the batter to the prepared baking pan, smoothing it in an even layer. Bake for 35-40 minutes or until set around the edges but still soft towards the center. Cool completely and cut into squares. Serve. You can serve with vanilla ice cream and caramel syrup too. . . . . Instructions: In a bowl, add chicken, salt, tumeric powder and lemon juice and mix well. Set aside for 10-15 minutes. Heat oil in a non-stick pan. Add curry leaves, ginger garlic paste and saute for a minute. Add onion and saute on medium heat till translucent. Now add chicken, garam masala, red chilli powder and cumin powder and mix well. Saute the chicken for 2-3 minutes. Add 1 cup of water, stir to mix, cover and bring to boil. Lower the heat and simmer for 7-8 minutes. Add coconut milk, mix well and again simmer for 3-4 minutes till chicken is fully coated in the curry. Serve hot with steamed rice. Enjoy!! . . . . Now take almost 2 tbsp of poha mixture in your hand and give a shape of tikkis. Roll the cutlets in sooji and coat from all the sides. Heat oil in a non-stick pan over medium heat. Everyone has their favorite Mac and cheese recipe.....and this is mine.....easy stovetop mushroom Mac and cheese. It uses a combination of cheese and milk and melted as a creamy cheese sauce, for the ultimate in cheesy deliciousness!! The flavors of this easy homemade macroni and cheese are very mellow and the texture is spot on. . It's cheesy. Oh yes...very cheesy. . It's rich, ooey, gooey and yeah.. in my humble opinion- the best macroni and cheese recipe ever. . Seriously!! . . . . Ingredients: 1 cup elbow pasta (macroni) 1 cup mushrooms, chopped 1 tbsp butter 1 tbsp garlic, chopped 1tbsp flour 2 cups milk 1/2 cup cheese, grated Salt and pepper to taste 1/2 tsp dried oregano 1/2 tsp dried basil Few fresh chopped basil leaves for garnishing . . . . Instructions: Cook macroni until Al Dente. Once cooked, strain and rinse under cold water. Keep aside. Heat butter in a non-stick pan over medium heat, add garlic and mushrooms and saute for 2-3 minutes. Add flour and cook for a minute. Slowly add milk while whisking it into the flour to make sure there are no lumps. Let it come to a boil. Add oregano, basil, salt and pepper. Lower the flame and cook for 2-3 minutes till the sauce thickens up and it's consistency is almost thick like a cream. Add cheese and macroni and mix gently. Garnish with chopped fresh basil and serve hot. . . . . Super simple and scrumptious hash browns!! . . There's nothing better than super crispy hash browns for breakfast or after school snacks while keeping crust crispy and the center of the potatoes tender. These are incredibly delicious, easy and sure to impress! The key to making perfect homemade hash browns is getting rid of excess water in the potatoes. Simply shred the potatoes with a grater and add them to the pan with butter and cheese and watch the magic unfold!! . . Here's the list of ingredients: 4-5 potatoes, peeled and shredded 1/2 tsp garlic powder 2 tbsp butter 2 tbsp corn flour 1/4 cup grated cheese Salt and pepper to taste Oil for shallow frying . . Instructions: Rinse shredded potatoes until water is clean. In a bowl, add potatoes, 1 cup water and few ice cubes. Keep the potatoes for 10-15 minutes in ice cold water and then squeeze the potatoes in the muslin cloth to remove excess water and empty them into a medium bowl. We do this for removing the extra starch from the potatoes. Add butter, cheese, garlic powder, corn flour, salt and pepper and mix well. Take 2-3 tbsp of mixture into your hand and press it firmly and make your own desired shape. Keep in the freezer for 1-2 hours or until hash browns are bit firmed. Instructions: Preheat the oven to 180Β°C. In a bowl, add whole-wheat flour, baking powder, baking soda, cinnamon powder and salt and mix it properly, keep aside. In an another bowl, add yogurt, sugar, oil, milk and vanilla extract and beat with an electric beater until creamy. Add dry ingredients to the yogurt mixture and fold gently with spatula until mixed. Add dried fruits and tutti frutti to the batter keeping some aside to sprinkle on the top and fold to mix. Pour the mixture in a greased pan and add rest of the dried fruits and tutti frutti on the top of the batter. What say..... Here goes the recipe for walnut whole-wheat brownie!! . . Ingredients: 3 eggs 1/2 cup butter 1.5 cup castor sugar 2 tbsp cocoa powder 1 cup whole-wheat flour 1/4 cup dark chocolate 1/2 cup walnuts, chopped 1/4 cup milk 1 tsp vanilla extract A pinch of salt 1/4 tsp baking powder . Instructions: Preheat the oven to 180°C. Grease the mould and apply parchment paper and keep aside. In a double boiler, melt butter with dark chocolate. Set aside and let it cool. In a big bowl, whisk eggs with sugar and vanilla extract, till it becomes fluffy. Combine whole-wheat flour, salt, baking powder, cocoa powder and mix well. Add chocolate butter mixture and milk and make sure everything is well combined. Add half of the walnuts in the batter and mix well. Transfer the batter into the greased mould and add the rest of the walnuts on the top of the batter. Here is a spicy, easy and low fat pav bhaji recipe for you to easily cook this iconic dish at home. . . Ingredients: 1 cup onions, finely chopped 1 cup tomatoes, puree 1 tbsp ginger garlic paste 1 potato, diced 1 carrot, diced 1/4 cup cauliflower, chopped 2 beetroot, diced 1/4 cup bottle gourd, chopped 1 tsp red chilli powder Salt to taste 2 tbsp butter 1 tsp lemon juice 2-3 tbsp pav bhaji masala Cilantro for garnishing 4-6 pav buns . . Instructions: Pressure cook all the vegetables in 1 cup of water and some salt. Heat butter in a thick bottomed pan. Add onions and ginger garlic paste. Saute them for 2-3 minutes. Add tomato puree, pav bhaji masala, salt, red chilli powder and cook tomatoes till they are fully cooked. Now add pressure cooked vegetables along with water in which they are cooked. Add 1 cup of more water and allow the bhaji to simmer till it becomes thick gravy like consistency. Toast the sliced pav buns with some butter on the tawa. Top the bhaji with lemon juice, cilantro and chopped onions. Serve hot with toasted pav buns. . . . Fresh figs lettuce saladπŸ’š . Fresh figs is the main attraction in this vibrant salad. A simple combination of creamy textures and rich sweetness, served with sweet and tangy dressing on the bed of fresh lettuce leaves. Figs are possibly my favorite fruit. I absolutely love them on their own and they also taste delicious in salad. This salad is just lettuce, bell peppers, cucumber, tomatoes and figs with some feta cheese. It's super simple but it all works together beautifully and of course the figs are the star of the show. Figs are high in protein and are a good source of many minerals. Lettuce gives a good crunch to this salad with the sweet figs and tangy cherry tomatoes. The addition of cucumber adds freshness to the salad and soft feta cheese helps to get whole salad together. The dressing gives this salad the zing making it refreshing!! . . Ingredients: For the salad- 2 cups lettuce, roughly chopped 8-10 fresh figs, cut into quarters 12-15 cherry tomatoes, halved 1 cucumber, peeled and sliced 50 gms feta cheese, chopped 1/2 cup yellow and red bell peppers . For the dressing: 2 tbsp olive oil 2 tbsp vinegar 1 tsp mustard 2-3 garlic cloves, minced 1 tsp honey Salt and pepper to taste . . Instructions: Whisk all the dressing ingredients in a small bowl and keep aside. In a large salad bowl, add all the salad ingredients. Pour the dressing all over the top and toss well to coat. Kulchas are Indian flat breads and quite soft, very popular in North India. The kulcha is crispy from the outside and soft on the inside. This recipe can be prepared in under 20 minutes. This easy recipe is loaded with fresh cottage cheese that is healthy and nutritious. It's soft succulent and tasty paneer filling stuffed in between fluffy and tasty kulcha bread which is toasted to perfection. It's quick to prepare, easy to carry in tiffins and will never leave you hungry and may leave you craving for more...it's that addictive!! . Week night dinner....after school snack or tiffin.... All sorted in one go!! πŸ’• . . Ingredients: 1 tsp oil 2 garlic cloves, chopped 1/4 cup yellow capsicum, chopped 1 onion, chopped 1 tomato, chopped 150 gms paneer, chopped Salt and pepper to taste 1 tbsp tomato ketchup 1 tsp butter 2 kulchas . Instructions: In a non-stick pan, heat oil over medium heat. Add onions, garlic and capsicum. Saute till it turns translucent. Now add tomatoes and cook for 2-3 minutes till they are pulpy and soft. Add tomato ketchup, salt and pepper and mix well. Add paneer cubes in the mixture and mix well. Now apply a layer of paneer mixture on the inner side of kulcha. Cover it with the other kulcha and toast it in a grill toaster by applying butter on the exposed side. Or toast it in a griddle. Cut into halves and serve hot!! . . Instructions: Heat 1 tsp olive oil in a non-stick pan over medium heat. Add the tomatoes and beans, cook, tossing occasionally for 2-3 minutes. Add salt and pepper and toss well. Transfer to a plate. Heat the remaining olive oil in the non-stick pan, add eggs and cook, stirring, until set and scrambled but still soft for 2-3 minutes. Season with salt and pepper and transfer to a plate. This coconut basil chicken curry is an incredibly fragrant coconut milk based curry. It's very quick and so full of flavor. One of the things I lived about curries is that they are so varied and adaptable- from soupy to thick and creamy, from mild to fiery and in different colors yellow, red, brown and all. This is one of my favorites, a yellow curry in a coconut milk based with plenty of fresh basil. The flavors were so subtle yet blended perfectly. This chicken curry comes together in about 15-20 minutes. Super easy to make, even if you are too busy. Trust me, if you are fan of curry in any way, shape or form, you need to try this!! It will definitely become one of your favorites! . . Ingredients: 300-400 gms chicken breast boneless, cut into small cubes 1 onion, finely chopped 4-5 cloves garlic, minced 2 red chillies, chopped 1 tbsp curry powder 1/2 tsp chilli powder 1/2 tsp tumeric powder 1/2 tsp cumin powder 1 tbsp olive oil Salt to taste 1/4 cup fresh basil leaves, chopped 500 gms coconut milk 1/4 cup water . . Instructions: Add the chicken to a small bowl and add curry powder, salt, tumeric, chili powder and cumin powder. Toss the chicken well and set aside. In a large skillet, heat olive oil over medium high heat. Add onions, red chillies and garlic and saute for a minute. Add chicken and cook for 5-6 minutes just until the chicken is tender and starts to brown. Add water and coconut milk to the skillet. Bring to a boil, then turn the heat to medium and cook for another 4-5 minutes. Add salt and basil and mix well. Stir completely and remove from the heat. These blueberry orange oatmeal muffins are full of fiber and bursting with fresh orange and dried blueberry juiciness!! . Fresh oranges are in season and I love baking with seasonal produce and took out the juice from those oranges which were perfect for these muffins. These muffins are wonderfully soft, subtly sweet satisfying and the ideal accompaniment to my freshly poured cup of coffee. . It's a combination of oats, olive oil, orange juice, whole wheat flour and it's incredibly easy. This baked muffins are good kind of snack comfort foods. The muffins turned out great, sweet, wholesome and fragrant just bursting with juicy blueberries. . . If you love baking as much as I do, you must also give this recipe a shot..... Here's the list of ingredients: 1.5 cup whole-wheat flour 1/2 cup olive oil 1 cup castor sugar 3 eggs 1 cup oats 1.5 cup fresh orange juice 1 cup blueberries ( I took dried but you can take fresh too) 1 tsp baking powder 1/2 tsp baking soda A pinch of salt 1 tsp orange zest . . Instructions: Preheat the oven to 180°C and line a muffin pan with liners. In a large bowl, whisk eggs with oil and sugar until the mixture is fluffy. In a separate large bowl, add whole-wheat flour, baking soda, baking powder and salt together to combine. Sift this dry mixture into the egg mixture and combine well. Fold in the oats, orange juice and mix until everything is well combined. Fold in the orange zest and blueberries. Using an ice cream scoop, transfer the batter into the lined muffin pan. Top with more oats and blueberries. Bake the muffins at 180°C for 22-25 minutes until the muffins are golden brown and a skewer inserted into the center comes out clean. Your muffins are ready! Made with blend of rava with some veggies, curd and spices. The grainy texture of rava along with veggies takes this toast to a whole new level with such awesome taste. And it's a simple recipe which is always a hit with kids and adults alike and it's a perfect healthy dish. . Here goes the recipe ........ . . Ingredients: 4-5 brown bread slices, cut into circles 1/2 cup rava (sooji) 3-4 tbsp thick curd 1 cup carrot, grated 1 onion, finely chopped 1 tomato, finely chopped 1 green chili, chopped 1/4 cup cilantro, chopped Salt and pepper to taste Butter for roasting . . Instructions: Add all the vegetables into a large mixing bowl. To that add rava, curd, salt and pepper. Mix everything to make a semi thick batter of spreadable consistency. Rest the batter for 5-10 minutes. Heat the non-stick tawa on a low medium heat and grease it with butter. Take a spoonful of the batter and spread it evenly on one side of the bread slice with the help of a spoon. Place each toast on the tawa such that the batter side faces downwards. Roast it on a medium low heat till the batter turns golden brown in color. Flip over and roast the other side too. A healthy and tasty toast is ready to serve. Serve hot with cilantro dip. . . . . Ingredients: 4 tbsp rice 1 litre milk 1/4 cup sugar 1/4 tsp cardamom powder Saffron, a pinch 1/4 cup almonds and pistachios, roughly chopped . . Instructions: Wash the rice and soak in water for almost half an hour. Discard the water and blend the rice in blender to a coarse paste, keep aside. Take a heavy bottomed pan, add milk to it and boil the milk on a low to medium heat. Add the rice paste and stir continuously for 10-12 minutes, else lumps might form. Simmer the heat and cook for another 5-8 minutes stirring in between. Add saffron and mix well. Cook till the rice gets thickens and turns creamy. Further add cardamom powder and sugar and mix well. Garnish with almonds and pistachios. Serve chilled. . . . Crumbly and soft, these Besan Ladoos are to die for! ❀️ Getting ready for Diwali celebrations, these are easy to make and absolutely delightful! These gorgeous golden brown delights are not just the perfect Indian sweet but they are also nutritionally dense and a perfect snack. Besan Ladoos is a popular Indian sweet dish made of chickpea flour, sugar, ghee and almonds. The aroma of besan cooking in ghee is irresistible and if it's homemade, it is just the best! These are made during Indian festivals and special occasions. . . Here's the list of ingredients πŸ‘‡ 2 cups besan (chickpea flour) 2-3 tbsp sooji 1and 1/4 cup powdered sugar 1.5 cup ghee 1.5 cup almonds, roughly chopped . . . Instructions: Heat ghee in a heavy bottomed pan. Add besan and sooji one by one. I added sooji as it adds an extra crunch, but it's optional. If you don't want, feel free to leave that out. Mix it well and cook on a low flame. Keep stirring continuously to prevent burning. After 15-20 minutes, colour starts to change and ghee will come on the top of the flour. Add almonds and mix until well blended. Again stir the mixture for another 2-3 minutes on a low flame. Switch off the flame. Then add powdered sugar to the mixture and mix it well. When sugar is mixed properly, then the mixture will come together. Allow the mixture to cool a little. When comfortable enough to touch, take some mixture in your hand. Make a tight fist and squeeze the mixture in between your fingers. Shape it like a round ball. Store in an airtight container and it will last for 1-2 months. Instructions: In a microwave safe bowl, add dark chocolate, cream, milkmaid and cocoa powder. Gently mix the mixture. Melt this mixture for 2 minutes in microwave on high power. Combine well. Add crushed biscuits and walnuts ( save some for toppings) to the mixture and gently mix it. Evenly spread this mixture to a greased pan/mould. Add remaining walnuts on the top. Keep the mould in the refrigerator for at least 3-4 hours or until the mixture sets completely. Once done, loosen the mould. Cut the fudge into thin fingers and garnish with icing sugar. Diwali is one of the grand festival of India celebrated with much enthusiasm and joy! Diwali is one of my favorite festival and started getting into this festive feel. Festivals are always incomplete without sweets and these homemade ladoos are delectable delicacies. These ladoos are made up of whole-wheat flour, sugar, ghee and almonds and it's very healthy and delicious and flavored with cardamom to give a perfect taste. Soft fluffy whole-wheat walnut and banana cake, not to sweet and just right!!πŸ’• This cake is extremely light, crumb and moist, with the natural sweetness of bananas and the warm toastiness of nuts. A great way to use ripe bananas, this easy-to-make cake incorporates everything you love about banana cake and add a few more favorites- cinnamon and walnuts and makes it simply irresistible to stop at only one slice. For me this cake is a great comfort food and best to give kids for their evening snack or pack for their school snack tiffin box. I love eating this slice of cake with my cup of tea!! πŸ’– . . Ingredients: 1/2 cup butter or oil 1/2 cup brown sugar 2 ripe bananas, mashed 2 eggs 50 ml milk 1.5 cup whole-wheat flour 1/4 tsp baking soda 1/2 tsp baking powder 1/4 tsp salt 1/4 tsp cinnamon powder 1/2 cup walnuts, roughly chopped . . Instructions: Preheat the oven to 180Β°C. Cream the butter with sugar with an electric mixer until light, about 3-4 minutes. Add eggs to the butter mixture and whisk it well. Pour in the milk and combine well. Add mashed bananas. Combine well with a spatula. Mix flour, baking soda, baking powder, salt and cinnamon powder together in another bowl. Sift this mixture into the banana mixture and combine well. Sprinkle half of the walnuts and fold in the batter. Transfer the batter into a greased baking mould. And sprinkle rest of the walnuts on the top of the batter. Bake for 30-35 minutes or until lightly brown and cooked through. Slice and serve. Enjoy! 😍 . . . . Happy Friday folks! Palak Paneer, Indian cottage cheese in spinach gravy, is a distinguished Indian curry of spinach and paneer cooked together in onions, tomatoes and aromatic spices. I love to cook spinach gravy at home because it's very nourishing and healthy yet delicious. It's bursting with flavor and bright green color and dotted with paneer. Spinach is very nutritious and together with paneer takes care of calcium, iron and protein levels of the body which makes a wholesome low fat meal too. This simple meal though came together in a jiffy. I paired it with steamed rice and rotis. . . Here's the list of ingredients πŸ‘‡ 300-400 gms spinach 1 green chilli, chopped 1 tbsp oil 1 tsp cumin seeds 1 cup onions, finely chopped 5-6 garlic cloves, crushed 1 inch ginger, crushed 1 cup tomatoes, puree 1 tsp coriander powder 1/2 tsp garam masala Salt to taste 1 tbsp fresh cream 1 tbsp gram flour 200 gms paneer, cubed 7-8 cherry tomatoes, halved . . Instructions: Clean the spinach and wash it thoroughly under running water. Heat water in a large pot. Once the water comes to boil, add spinach and blanch it for 3-4 minutes. Drain the water and let the spinach comes to a room temperature. Put the spinach in a blender and make a smooth paste. Heat oil in a pan. Once the oil is hot, add cumin seeds and green chillies. Let them crackle for a few seconds. Add onions, ginger, garlic and fry until onions turns translucent. Add tomatoes and cook for 3-4 minutes. Now add gram flour and fry it for another 2-3 minutes. Add coriander powder, garam masala and fry for another a minute. Add spinach puree and saute on a high to medium heat. Add salt, paneer, cream and mix well. Close the lid of the pan and let the gravy cooks for 2-3 minutes. Garnish it with some more slices of paneer and cherry tomatoes. Serve hot with rotis. Ingredients: For the chicken- 250 gms chicken breasts, cut into pieces 1 tbsp olive oil 2 tbsp garlic, minced 1tsp dried basil 1 tsp dried oregano 1 tsp dried parsley 1/2 tsp dried rosemary Salt and pepper to taste . . For the vegetables- 1/2 cup broccoli, florets 1/2 cup mushrooms, chopped 1/2 cup zucchini, chopped 1/2 cup beans, chopped 10-12 cherry tomatoes 1 tbsp olive oil 1 tbsp garlic, minced 1tsp dried oregano 1 tsp dried parsley Salt and pepper to taste . . Instructions: For marination of chicken, take a large bowl, add chicken and other chicken ingredients and mix well. Cover the bowl with a cling wrap and keep aside for an hour. Heat olive oil in a non-stick pan, add garlic and saute for a minute. Now add all the veggies, sprinkle salt and pepper over it and cook on high medium heat for 4-5 minutes. Add oregano and parsley. Mix everything well and keep aside. For the chicken, heat non-stick skillet, add marinated chicken and let it cook for 4-5 minutes. Now turn the chicken to the other side and cook for another 4-5 minutes. You will find this curry in practically all of the dhabas (roadside restaurants) that line up at almost all the highways in Northern India. Infact, economical and tasty! It gives you a taste of simple Punjabi cooking. This dhaba style chicken curry is one of my favorite. It's an easy to cook North Indian recipe which is sure to be loved by all chicken lovers. Chicken is sauteed in onion tomato masala and flavored with aromatic spices that is what makes this dish so delicious and yummy. I am sharing my version of making this chicken curry here! Hope you'll enjoy cooking it. . Here's the ingredients list πŸ‘‡ For marination 500 gms boneless chicken, cut into pieces 1 tbsp ginger garlic paste 1 tsp salt 1 tsp lemon juice . For the curry- 1 cup onions, puree 2 cup tomatoes, puree 1 tbsp ginger garlic paste 1tbsp oil 1 bay leaf 1 cinnamon stick 3-4 cardamoms 5-6 peppercorns 4-5 cloves 1 tsp cumin seeds 1/2 tsp tumeric powder 1 tsp red chilli powder 1 tsp coriander powder 1 tsp garam masala Salt to taste . . Instructions: Marinate the chicken pieces with ginger garlic paste, lemon juice and salt. Set aside for 30 minutes. Heat oil in a heavy bottomed pan, add cumin seeds, cinnamon stick, cardamoms, peppercorns, bay leaf and cloves. Once they start to splutter, add ginger garlic paste and saute for a minute. Add onions paste and cook the onion paste on low to medium heat till it is reduced to a golden brown color and oil is separated. Add tomatoes, salt, tumeric, red chilli, corainder powder. Cook till the tomatoes are cooked and almost forms a paste, stirring occasionally. Add marinated chicken, garam masala and 1/2 cup water. Close the lid of the pan and let the chicken cook for almost 10-12 minutes on low to medium heat. Uncover the pan and again cook for another 5-6 minutes till the water evaporates and curry starts to thickens. Serve with rotis or rice. Ingredients: 1/2 cup barnyard millet (sama ke chawal) 1 cup pomegranate seeds 1 carrot, grated 1 apple, chopped 1/2 cup cherry tomatoes, halved 2 tbsp pumpkin seeds 1 tbsp freshly squeezed lemon juice rock salt and pepper to taste . Instructions: Wash the millet thoroughly. Add 1 cup of water to the pan and let it comes to a boil. Once it starts to boil, add millet and cover the pan with lid and let it cook for 15-20 minutes. Fluff the millet and remove millet to a bowl. Let it cool completely. Take a salad bowl, add millets, apples, carrots, pomegranate seeds and cherry tomatoes and combine well. Tapioca pudding is a delicious combination of sago and milk, served with lots of fruits. It's texture is creamy, luscious and absolutely melts in the mouth. This time I have not added any artificial sweetener to this pudding, but infact just added dates mixture in sago for sweetness which turned out very healthy and delectable. This dish is quite filling and perfect for navratri vrat meals. This is a very easy dish to cook and requires some basic ingredients which are mostly available at home. Here's the recipe πŸ‘‡ . . Ingredients: 1/2 cup tapioca pearls 1/2 litre milk and 1/2 cup warm milk 1/2 tsp cinnamon powder 12-15 pitted chopped dates 1 cup pomegranate seeds 1 cup apples, chopped 1 banana, chopped 3-4 tbsp dried blueberries 2 tbsp almonds, chopped . . Instructions: Take 1/2 cup warm milk in a small bowl and add dates. After 5-10 minutes blend this mixture in a blender and makes a smooth paste. Keep aside. In a large bowl, add 1 cup of water and soak washed sago pearls for 1-2 hours or till they bloom completely. Heat milk in a heavy bottomed pan, till it starts to boil. Add sago pearls and cook for 10-12 minutes stirring continuously on low to medium heat till the milk thickens and sago pearls starts turning transparent and light. Add cinnamon powder and dates paste and stir till date mixture dissolves completely. Cover and refrigerate until chilled at least 3-4 hours. Time to assemble! In a bottom of your wine glasses, add a tbsp of pomegranate seeds, apples and bananas. Spoon a thick layer of sago pudding on the top of the fruits. Again add a layer of pomegranate seeds and apples. Garnish with few blueberries and chopped almonds. Eat immediately or keep refrigerated until you are ready to eat. Enjoy! . . . Good morning friends!! . Today's recipe is Potato Rosti with hung curd and absolutely can be eaten during navratri fasting. This dish is quite filling and perfect for vrat meals. Rosti is a Swiss potato dish in the style of fritter, crisp on the outside and soft on the inside and outcome is very delicious everytime. Instead of deep frying, I shallow fried it in a non-stick pan to avoid oil and makes it more healthier option. And topped with hung curd with cucumber and roasted peanuts. Ingredients: 2 potatoes 2 tsp black pepper powder Rock salt to taste 1 tbsp oil 3-4 tbsp hung curd 3 tbsp grated cucumber 2-3 tbsp roasted crushed peanuts Mint leaves to garnish . . Instructions: For the dip- Take a small bowl and whisk together hung curd, grated cucumber, roasted peanuts, rock salt and pepper and set aside. For the Rosti- Grate the potatoes using the large holes of a hand grater. Put the potatoes in a large bowl, add rock salt and pepper and toss to coat thoroughly. Using your hands, squeeze as much liquid as possible out of potatoes and keep aside. Heat a non-stick pan and add oil to it. Once the oil is hot, add grated potatoes in the shape of tikki or any other shape and thickness you prefer. Cook the potatoes over medium heat for 5-6 minutes, until they become golden brown on one side. Then flip and repeat on the other side. Once done, layer a tbsp of hung curd mixture on the potato rosti and garnish with mint leaves. Tapioca is a delicious way to keep full during the fasting season and this sabudana pulao is a very simple dish made with tapioca pearls cooked with carrots and potatoes. . Ingredients: 1 cup sabudana (tapioca pearls) 1/2 cup potatoes, boiled and cubed 1/2 cup roasted peanuts 1 carrot, grated 1 tsp ginger, grated 1 green chilli, chopped 1 tsp cumin seeds 1 tbsp freshly squeezed lemon juice 3-4 tbsp chopped cilantro 1 tsp ghee or oil Rock salt to taste . . Instructions: Soak tapioca in water for 1-2 hours. Drain the tapioca quite well and keep aside in a bowl. In a non-stick pan, heat oil or ghee over medium heat. Add cumin seeds and let it crackle. Add green chillies and ginger and fry them for a minute. Add potatoes and carrots and let it fry again for a minute. Add tapioca pearls and keep stirring the mixture. When the tapioca pearls looses their opaqueness and starts becoming translucent, they are cooked. Cover the pan with a lid and let it cook further for 1-2 minutes. Don't over cook as they might become lumpy and hard. Add salt, lemon juice and roasted peanuts and mix well. Garnish with cilantro and serve hot. . . . . Today is the first day of Navarti, also called as Maha Navarti. It's the beginning of the most auspicious nine days period. . Many of you must be observing fast for these nine days as fasting is considered as an intergral part of this auspicious occasion and many people eat gluten free food and refrain themselves from eating grains like wheat and rice. They eat lots of fruits but very less vegetables. Today, I cooked gluten free vrat ki tikki made out of barnyard millet which is popularly known as sama ke chawal. . . Ingredients: To cook barnyard millet- 1/2 cup sama ke chawal 1 cup water . For tikki- 1 cup potatoes, boiled 2-3 tbsp chopped cilantro 1 green chilli, chopped 1 tsp grated ginger 1 tsp lemon juice 1 tsp black pepper powder Rock salt to taste 1-2 tbsp oil for shallow fry . . Instructions: Wash the rice thoroughly. Add 1 cup of water to the pan and let it comes to a boil. Once it starts to boil, add rice and cover the pan and let it cook for 15-20 minutes. Fluff the rice and remove the rice to a bowl. Let it cool completely. Take a separate bowl, add all the ingredients along with rice except oil and combine well. Shape the tikkis in a round shape or your own desired shape. Heat oil in a non-stick pan and add tikkis to it. Cook them from both the sides or until golden brown color from both the sides. These grilled chicken skewers are so tender, juicy and flavorful- quick and easy meal. The chicken is marinated in lemon garlic dressing for a few hours to get all tasty yum. And then they are threaded onto skewers and grilled to delicious perfection and topped with some fresh cilantro and served with mint dip. . I always love quick cooking specially in weekdays. That's why, I love simple marinades, you can mix them up in less than 10 minutes early in the day and all you have to do at dinner time is throw stuff on the grill or pan. This is hands- down my favorite kind of cooking. . . Ingredients: 300 gms boneless chicken breasts 2 tbsp hung curd 2 tbsp olive oil 2 tsp minced garlic 2 tbsp freshly squeezed lemon juice 2 tbsp fresh minced cilantro 1 tsp red chilli powder 1/4 tsp tumeric powder 1/2 tsp cumin powder Salt and pepper to taste . . Instructions: Cut the chicken into 1.5 inch strips for skewering. In a bowl, whisk together all the ingredients and add chicken to it. Cover the bowl with the plastic wrap and place the bowl in the refrigerator and let the chicken marinate for 2-3 hours. Meanwhile, soak the wooden skewers in water about half an hour. Generously grease the grill pan with oil and heat over medium heat. Skewer the chicken evenly divided between 6-8 skewers. Place the skewers on the pan and cook for 10-12 minutes, turning once or twice during cooking until cooked through or till it turns golden brown in color. A quick and easy Indian appetizer. Amazingly simple and delicious recipe of Paneer Tikka. It's a kind of finger licking starter which none of us can resist! It's one of the easiest and healthiest snack that can be made at home very easily and these succulent chunks of paneer, capsicum and onions are marinated in a mixture of yogurt and other spices. Tikkas are always a treat and can't be resisted because of the spices and tenderness of paneer. This paneer recipe is a hassle free and a delicious dish that everyone will enjoy. . . . Ingredients: 200 gms paneer, cubed 1 onion, petals 1 green capsicum, cubed 1/2 cup hung/thick curd 1tsp ginger garlic paste 1 tsp kashmiri red chilli powder 1/2 tsp tumeric powder 1/2 tsp coriander powder 1/2 tsp cumin powder 1/2 tsp garam masala 1/2 tsp kasoori methi 1 tsp chaat masala 2 tsp gram flour 1 tsp lemon juice Salt to taste 2 tsp mustard oil . . Instructions: In a large bowl, add hung curd. Further add all the spices along with1tsp of oil. Mix well till all the spices are combined well with curd. Now add onion petals, cubed capsicum and paneer. Mix gently till all the vegetables and paneer are coated well. Cover the bowl and refrigerate it for 1-2 hours. Meanwhile, take few wooden skewers and dip them in water for 15-20 minutes. Insert the marinated paneer, capsicum and onions into these wooden skewers. Heat the grill pan with1tsp of oil over medium heat. Place the skewers on the pan and grill the paneer and vegetables till roasted well. It's a healthy tasty salad for midweek or for the weekend. This can be eaten all by itself as a meal. It's well balanced, filling and so good on it's own. The bulgur wheat cooks in just some minutes as it is partially precooked grain. It has high fiber, low fat, low calorie and nutty flavor and always the perfect addition to salads, pilafs and can be tossed into soups as well . .. .. ... Ingredients: For the salad- 1/2 cup chicken boneless, boiled and sliced 1/2 cup broccoli florets 1 cup bulgur wheat 1/2 cup cherry tomatoes, halved 1 cucumber, diced 2 tbsp pickled jalapenos, sliced Pomegranate seeds for garnishing . For the dressing- 2 tbsp hung curd 1 tbsp extra virgin olive oil 1/2 tsp tabasco 1 tsp fresh lemon juice 2 tbsp chopped spring onion greens Salt and pepper to taste . . Instructions: In a small bowl, add all the dressing ingredients and whisk well and set aside. Place bulgur wheat in a bowl. Add 1 cup of boiling water, stir and cover the bowl with lid and let stand for 15-20 minutes. Drain off any excess liquid and set aside. Meanwhile, in the boiling water, boil broccoli florets for a minute and drain and set aside. In a salad bowl, add all the salad ingredients except pomegranate seeds and mix well. This dip is considered a healthy dish. It's high in both dietary fiber and protein!! . . Ingredients: 1 aubergine 2 tbsp tahini 2 tbsp fresh lemon juice 1 tsp cumin powder 5-6 cloves of garlic 2 tbsp olive oil Salt to taste Pomegranate seeds for garnishing . . Instructions: Prick the aubergine at many place with a help of fork. Roast aubergine on stove top from all the sides till it is soft from inside. Check with the help of knife if its done, when you prick with a knife it will go in smoothly and would feel cooked. Remove from the burner and place on a plate to cool. Peel the blackened skin from it and discard it. Chop the flesh. In a blender, add all the ingredients except pomegranate seeds and blend till smooth. Add little water if required. Drizzle with olive oil and garnish with pomegranate seeds. Serve with your choice of pita bread/ chips/ vegetables.
