These individual chocolate puddings were a huge hit last year. The cookie dirt, the petite fondant pumpkins, meringue ghosts & the deeply chocolate pudding come together quite quickly. 🎃

Last week a lovely co-worker left this on my desk. She’s very sweet and she complains I’m too skinny. I practically never eat swiss pastry but there are these moments.
Switzerland is known for its mountains, cheese, cows, clocks, banks and chocolate 🍫 (maybe more?)
The most famous of Swiss pastries is the Gipfeli (croissant). This flaky moon shaped pastry is very similar to its French relative but slightly less buttery. You can find Gipfeli in every bakery, café and supermarket. Many times you can choose between the classic Buttergipfeli (butter croissant) and its variants such as Schoggigipfeli (chocolate croissant. The one on the photo with Cailler Branche chocolate), Laugegipfeli (lye covered croissant) or Vollkorngipfeli (whole-grain croissant). The tip of my Schoggigipfeli reminds me the peak of Matterhorn, one of my favorite mountains in Switzerland. I was mesmerized the first time I’ve looked at it in Zermatt. The Matterhorn, the king of mountains, is the most-photographed mountain in the world. It is myth and emblem for Alpinists and photographers alike, as well as Switzerland’s most famous landmark and symbol.

Haciendo un mix de ambas, salió esta receta con un poco menos de azúcar impalpable, por lo q les aconsejo dejarla secar un poco más.
Como no tenía una cantidad exacta de dulce de leche, hice una fórmula para poder repetirla cada vez q quiera: x gramos de dulce de leche repostero + (1/2x +1/8x) de azúcar impalpable bien mezclados, se extiende sobre placa con papel manteca espolvoreado con azúcar impalpable, se aplana como se pueda, se vuelve a espolvorear, y se deja 2 o 3 días. El 1/8 puede ser otro ingrediente seco: coco rallado, polvo de almendras, avena? Q más se les ocurre?
Yo las corté y las volví a dejar en porciones un par de días más, porq me gusta más bien durita. Y listo, se envuelven, se les pone moñito, y se regala a todo el mundo para festejar el #diadeldulcedeleche

Plan on making chili this weekend? Don’t forget this tip. Chili’s flavor often improves as it simmers over low heat—the beans’ texture does not. You know what I’m talking about...mush. Smaller beans like black beans, great northern beans, and chickpeas hold-up best in soups and chili, but I recommend reserving any and all beans until minutes before serving. That way you can simmer the rest of your chili ingredients as long as you like and rest assured the beans will stay firm and whole. You can’t beat freshly baked bread 🍞
The smell is unique and comforting. Bread has a significance beyond mere nutrition in many cultures in the West and Near and Middle East because of its history and contemporary importance. Bread is also significant in Christianity as one of the elements (alongside wine) of the Eucharist. Bread has symbolic roles in the Abrahamic religions of Judaism and Christianity. In the Christian ritual of the Eucharist, bread is eaten as a sacrament either as a symbolic representation of the body of Christ or, as in the Catholic liturgy, as a real manifestation of the body of Christ. (It doesn’t surprise me that levels of inflammation related diseases in these cultures are becoming so problematic?)
I rarely eat bread, I’ve had several problems with gluten in the past and somehow I get used to bread alternatives (and flours). But sometimes the magic happens. For this one I used spelt, chia and poppyseeds. .
I’m moving at the moment and everything is chaos. Moving is a great phenomenon to remind us how much unnecessary stuff we collect and keep and we “carry” a burden without even realizing it. Again, the time as come to make it right. (Again - because in the last 6 years I’ve been moving every year or two years) .

Having too many sesame seeds in the cupboard makes things like these happen. Sesame energy bars 💪
In Greece and Cyprus, sesame seed candy is called pasteli and is generally a flat, oblong bar made with honey and often including nuts.
This one is a variation. Still delicious, powerful and energizing.
1 1/2 cup (360 ml / 150 g) walnuts
1 cup (240 ml / 145 g) sesame seeds
1/3 cup (40 g) goji berries
1/2 cup (70 g) dried super berries (I’ve used white mulberries and aronia berries)
4 tbsp maple syrup
3 tbsp coconut oil
1/2 cup (55 g) shredded unsweetened coconut
1 tsp salt
Lightly toast the walnuts in a large saucepan on low heat for a few minutes. In a food processor turn them into flour. Add the sesame seeds to the sauce pan, low heat as the sesame seeds are very heat sensitive – you want to lightly toast them without burning. Meanwhile, add all the berries to the food processor. Pulse for a minute, then pour everything into the sauce pan. Add maole syrup, coconut oil, shredded coconut and salt and stir until everything is combined, sticky and warm.
Cover a 20×25 cm (8×10-inch) baking dish with parchment paper and pour the sesame mixture into it. Flatten it out with your fingers and the backside of a spoon (dip it in water to prevent the sesame seeds from sticking to it). Put in the fridge for at least an hour, then cut them up and wrap in parchment paper.
