🍋 Crockpot meals are a great way to "meal prep" a nutritious and yummy meal while on the go! Yes, please !
🍋 Herbs and spices and homemade sauces lend SO much flavor without added saturated fat or sugar. 🍋 A quick note about pork as it is contriversial... YES much of pork (and other meats) are raised in inhuman and environmemtally toxic ways. We sparingly eat pork in our household. BUT once in a while, when we do, we try to find it as local as possible, grass /organic feed fed, without antibiotics and hormones, AND WE like to research the farm and make the most responsible choice. And that's all I have to say about that!
Add to a @crockpot
1 lb chicken, pork, or top round beef (organic and grass fed preferably) - vegan alternate below
1/2 -1 cup sliced red onion depending on how much you like onion!
3/4 cup water
1/4 cup @coconutsecretofficial
4 cloves garlic
2 tbsp fresh shredded ginger
2 tbsp molasses or honey- can omit
2 tbsp sesame oil
1 tsp red chili flake
Cook on high for 4 hours and shred
2 cups shredded broccoli slaw (pre done for a time saver!)
1/3 cup chopped cucumber
Zest of 1 lime
1 tbsp sesame seeds
1/4 cup scallions or minced red onion (use the rest from above)
1 cup @Lavva
3 tbsp apple cider vinegar
1 tbsp organic rice miso
Let sit for 4-6 hours (while your meat cooks)
Serve in lettuce cups or over quinoa... top with sesame seeds if you want! I should have 🤣
For a vegan alternate simmer marinade for 10- 15 minutes until it thickens slightly then add shredded jackfruit or baked, sliced tempeh.
