Taco Friday!? My poor hubby, his bday was Tuesday and he asked for a 🌮 dinner but a little tummy bug was passing through our house at that time. So tonight is his night 🎉 🕺. Everyone had theirs different, I forwent the lettuce for some cilantro (love the stuff, my man hates it!), no taco seasoning for me just straight up grass feed ground beef, and loads of salsa and franks hot sauce. 🤤

I'm case you were looking for dinner ideas 👀 Spaghetti Bolognese Here's what you'll need: 🔅3 tablespoons oil 🔅1 medium yellow onion, finely diced or 🔅coarsely grated 🔅2 stalks celery, finely diced or coarsely grated 🔅2 medium carrots, finely diced or coarsely grated 🔅3 tablespoons minced garlic 🔅1/4 cup tomato paste 🔅21/2 – 3 pounds ground beef (I used lean beef) 🔅salt and pepper, to taste 🔅1 teaspoon italian seasoning 🔅1 tsp red pepper flakes 🔅3 tablespoons apple cider vinegar 🔅2-28 ounce can San Marzano tomatoes 🔅1-14 ounce can diced tomatoes, drained 🔅2 bay leaves 🔅1-2 parmesan rinds or 2 cups shredded Parmesan 🔅1/4 cup parsley, roughly chopped (plus more for serving) 🔅3/4 cup half and half Here's how you'll make it: 💠In a large dutch oven, heat the olive oil over medium heat. Add the onions, celery, and carrots and allow to cook for 8-10 minutes or until the onions are translucent. Drain any unnecessary grease with the exception of about 1-2 tablespoons. Add the garlic along with the tomato paste and let cook for 30 seconds. 💠Increase the flame to medium-high, add the ground beef, 1 teaspoon of salt, 1/2 teaspoon of pepper, the Italian seasoning, and the red pepper flakes. Allow the meat to brown, add the apple cider vinegar and allow the met to cook for another 3-4 minutes. 💠Add the diced tomatoes, san marzano tomatoes, bay leaves, parmesan rinds, and parsley. Turn heat to lowest setting. Add a big pinch of salt and pepper, and allow the bolognese to cook for 2-4 hours. (Or 8 hours on the LOW setting of your crockpot.) Add the half and half and adjust salt and pepper to taste. ⭐️Red lentil dal 😀 We made this delicious dal for dinner tonight and it was the perfect winter warmer on this very cold day! The girls loved getting to use the pestle and mortar to crush some of the spices. They also added everything to the pan when cooking which they’re getting more and more confident at doing. We served this with rice and pitta bread. We wanted to make naan bread but just didn’t have time🤷‍♀️ For the recipe: 300g red lentils Chopped tomatoes x 2 cans 2 onions, diced 1 tbsp ginger paste 6 garlic cloves, crushed 1 can coconut milk 1 vegetable stock cube (500ml water) 1 tsp mustard seeds 1 tsp coriander seeds 1 tsp cumin seeds 6 cardamon pods 1 cinnamon stick 1- 1.5 tbsp garam masala 2 tbsp cumin and coriander powder 2 tsp turmeric powder 1 tbsp coconut oil Juice of 1 lemon In a bowl rinse the lentils in cold water and leave to soak for 1 hour. Use a pestle and mortar to crush the coriander seeds, mustard seeds, cumin seeds and cardamom. Heat the oil in a pan and fry the onions for a few minutes. Add the garlic and ginger, followed by the spices. Fry for a couple of minutes before adding the lentils followed by the stock, chopped tomatoes and coconut milk. Mix everything together and cook for 30-40 minutes, until the lentils are cooked and liquid has reduced. For the adults I added salt and chilli powder 😋 Happy weekend 😀🧡

Going out to eat can be the downfall of some of the best and most dedicated eaters . You’ve worked SO HARD all week, counting all the calories . You went to the gym and worked SO HARD . You only snacked on fresh foods. . And then all of the sudden, you get a text from from your friends or family to go out to eat. You want to go but you don’t want to feel like all your efforts have gone away . You can go and not wreck your week long effort, here’s how! . ❄️skip the bread at the table when you sit down, and split an appetizer with everyone. . ❄️make sure you’re drinking water with your meal, to prevent over eating as well as staying hydrated too . ❄️ask for dressing on the side of your salad, you have more control over what was put on your salad! . ❄️ask for a box when your entree arrives and put half of it in the box, this helps prevent you from eating the whole thing (typically 2-3 servings worth) and you’ll have leftovers for tomorrow! . ❄️instead of getting a dessert for yourself, split it with everyone . These are simple things you can do to prevent over eating while still enjoying the meal! . Raise your hand if you’re planning on eating out this weekend🙋🏼‍♀️

Prawn, Salmon, Creme Fraiche Pasta ❤️ A Friday night treat (as healthy as we could make it!) after a long week. Perfect for our film night ❤️ Quick and simple to make too! I really am enjoying this new healthy lifestyle as part of my Gymshark66 challenge, tasty foods yet healthy! Ingredients:- Linguine fresh pasta Prawns Smoked salmon Creme Fraiche (300ml) Parmesan (2 teaspoons) Lemon zest and juice Garlic Peas Rocket Spinach Cook the prawns in a little coconut oil. Add the garlic, lemon juice, zest and peas. Add the Creme Fraiche and Parmesan. Cook the pasta. Add a little of the pasta water to the sauce. Add the salmon to the sauce. Add the cooked pasta to the sauce. Mix into rocket and spinach. I cannot say enough good things about the pork we get get from @haffnerfamilyfarm . It is so nice to know that we are getting good quality meats, and support local family farms. There is nothing better than putting a pork shoulder roast in the slow cooker before work, and coming home to the house filled with delicious aroma! Plus having dinner ready is a bonus too! 😉. . Crock pot roasts are so easy! - Place sliced potatoes and carrots on bottom of the slow cooker. - Season roast with garlic, salt and pepper. Its finally Friday. This was definitely the highlight of our dinners this week. The picture does no justice, but this is an adjusted version of a great dish by @dcfishwife. Nothing like talking to the experts to get the best recipes. This is a great way to eat seafood, and was very popular with my boys. Leftovers were minimum and it wasn’t very labor intensive. We have made it a purpose to eat seafood. at least once a week. The mix of seafood in this dish makes it more affordable than if we were just eating one fish. In a shallow bowl beat the egg. In another bowl, place the breadcrumbs. Dip each jalapeño, in flour, egg, and breadcrumbs and then once more in egg and breadcrumbs. In a skillet, heat enough oil to come 1/3 of the way up the sides of the pan to 370F over medium heat. Fry each jalapeño for 2-3 minutes and transfer to a paper towel-lined plate to drain. Cool slightly before serving. Garnish with the bell pepper and cilantro. Serve with Gold's Wasabi Sauce.
The final version! The @jus_rol pastry worked a treat & the pie was delicious. I cooked the pastry separately as was afraid it might go soggy but it probably would have been fine. I asked some of you lot on my stories yesterday if you’d like to see more of my cooking on my page, and I got a big fat yes! Being on maternity leave means that I have more time than usual for cooking, so I’ve been rustling up some lovely grub lately and feeling really inspired! I’ve been trying to cut our meat consumption a bit lately so tonight’s tea was a vegetarian Quesadilla pie. You make a veggie fajita type filling (onions, peppers, beans, corn- whatever you’ve got) then in a cake tin layer it up between tortilla wraps- then bake! As it’s a Friday I also made some nacho’s too as a treat 🌮🌽🥕🌶
Don’t over-hype the “healthy” stuff. Studies show that kids actually eat more vegetables when they are not pressured. Pressure includes praising, expressing disappointment or saying the child will be stronger, bigger, healthier by eating X food. . More than half of parents use pressuring feeding strategies to get their kids to eat. Many fear giving this practice up because it seems to work in the short term. However, in the long term it can erode the ability to eat intuitively, exacerbate feeding problems, make mealtime negative for both parents and child(ren), and create risk factors for a future eating disorder. . In addition, kids tend to be black and white thinkers, so if we say, “eat your carrots because they are good for your eyes,” they might think, “if I don’t eat carrots I will lose my sight” and create undo anxiety. . Bottom line, kids aren’t thinking about health, nor should they be. Kids will naturally vary their intake when presented with a variety of foods - some days they may eat a lot, some days a little; some days mostly the carbohydrate-rich foods, some days the protein-rich foods. It all balances out in the end when we let go and just let them eat without input or pressure. . Chilli con carne, rice, yoghurt and a few tortilla chips. My chilli is made up of 1 onion sauté in a pan add garlic, minced beef browned off in the pan, 2 tins of tomatoes, a tin of kidney beans, passata, a stock cube, chilli flakes, oregano, basil and tonight I added a drop of red wine. Let this reduce on a simmer for a good half hour. Us adults tonight will have ours with chillincornbread not tried this recipe yet so wanted to check it came out ok before giving a milder version for the kids oh and play with the recipe so that it’s munchkin friendly! Does everyone eat the same? 🤷‍♀️ In our house the answer is sometimes but now more often than not! One of the children just point blank refused to eat her meals from a very early age. I succumbed to buying nuggets and dinosaurs for her because surely she will die right if I don’t feed her nuggets 🙄 anyway at around age 2 I got fed up of the food battles and getting upset cleaning roast dinners off the floor so I started to put a fish finger/nugget/dinosaur alongside the main family meal. Eventually she started trying the main meal and it became familiar to her and she ate more and more foods and the dinosaurs and nuggets slowly disappeared from the plate. I cook a roast she eats a little bit from each section, it’s a win!! After stuffing myself with my peanut butter choc chip bread yesterday, I felt so guilty that I had to only eat a soup 🥣 for dinner 😂😂. I wanted to share the recipe because I used all the veggies I had left and it was really good. It’s a sweet potato, kale and tomato soup. I panfried 2 shallots and a garlic clove, and 3 sliced sweet potatoes for 10 minutes in olive oil. I added a bag of kale (I removed all the hard stalks) and 3 medium sized tomatoes 🍅. I added a teaspoon of ground coriander, seasoning and a vegetable stock with enough water to cover the veggies. Once cooked, just blitzed it. Really recommend it! Lunch today was pitta pizza using 3 mini wholemeal was pittas from Aldi (60g= healthy extra b choice) and 1 healthy extra ‘a’ choice. Loved the crust on these as they were nice and crispy. I would happily eat the crust of a full pizza 🍕😍. Lasagne also ready for later. I fancied making some proper white sauce so I weighed and measured my own portion. 1 level tsp butter =2 syns 12g plain flour= 2.5 syns And 1 a choice of milk (300g Bob milk - love the taste) and 1 ‘a choice cheese. So 2.5 syns and 1 healthy extra ‘a’ choice for a portion. I did have to scrimp a bit with the white sauce but I’m hoping it will still be 👌🏼. Fish is great for a Friday night in. You can even swing by the market and get it fresh. I broil mine on foil at 500 degrees and watch it closely! Trader Joe’s garlic salt is all I use on it and sometimes a squeeze of lemon. These Brussels tho. I used my air fryer( but you could roast them) and sprayed with an avocado oil spray, added minced garlic, s&p and Everything Spicy from @flavorgod. They take about 20 min in the air fryer, stirring once. I then add more fresh minced garlic, lemon, and parmesan cheese to taste. The secret sauce is the balsamic glaze drizzled over it all. This stuff is amazing and I’ve seen it in every grocery store. Mine is from Costco. Swipe to see other meals I drown with it. So good!! Anyone else addicted to balsamic glaze??
