Santa Fe chicken was a huge hit in our house tonight!! So so yummy. And only 4 WW points for my whole dinner (3 of those points were from the rice). I made a super delicious taco and for seconds I used the chicken on a salad with salsa for the dressing. 🔸⠀ 🔸⠀ Y’all.. this chicken was so juicy and full of flavor. ¡Pon a remojar las LENTEJAS y prepara mañana esta rica SOPA calientita! 🍛😊 INGREDIENTES: Para el caldillo: - 3 jitomates en cuartos - 1/4 de cebolla - 1/3 de taza de cilantro Para las lentejas: - 1/4 de taza de cebolla picada - 1 cdita de ajo picado - 1/2 taza de chorizo en rodajas - 5 tazas de lentejas lavadas y remojadas - 6 tazas de agua - 2 cdas de sal - al gusto de plátano en rebanadas PREPARACIÓN: 1. Licúa el jitomate, la cebolla, el cilantro, y el ajo. 2. En una sartén cocina la cebolla, el ajo y el chorizo hasta dorar. Reserva unas rodajas para decorar. 3. En una olla cuece las lentejas con el agua, el caldillo de jitomate, el chorizo y la sal, tapa y cocina por 30 minutos hasta que las lentejas estén suaves. Sazona. 4. My hubby discovered this recipe for Zucchini fries a couple months ago and it's been a popular way to use up zucchini. The kids usually don't mind it but tonight they couldn't get enough, good thing I made a double batch!

🍔🍔 VEGAN BURGERS | $10.10 total / 3 adult & 2 children’s serves @ $2 per serve 🍔🍔 I I tried the self-proclaimed @jamieoliver best ever vegan burgers last night and they the ✔️ if approval from me because they were quick, easy, cheap, and the kids ate them! - vegan patties (tinned organic chickpeas, 1 cup of frozen corn kernels, homegrown parsley & lemon zest, spelt flour and spices) $2.00 - burger buns $4 - salad (cucumber, grated carrot & beetroot, organic lettuce) $2.00 - grilled onion $0.60 - sweet potato chips (cooked in the air fryer) $0.75 - condiments $0.75 I don’t love the texture of plant based patties but this was one of the better ones I’ve tried. TACO 🌮 TUESDAY // chicken & avocado tacos with lentils, turmeric rice, and plantains! plantains cooked in avocado oil + smashed avocado 🥑 were my highlight! . This is my hubby’s plate. I actually ate super light because I wasn’t even that hungry. That’s been happening to me since starting @saramcglothlin Blood Sugar Balance Program! I had a @nikkiscoconutbutter coconut butter on-the-go for a bridge snack and found I only wanted a small amount for dinner. 🤷🏼‍♀️ I find I’m still pretty darn hungry in the first half of the day and then at night my body gets ready to go into repair mode and wants a break from the task of digestion. . It’s been blowing my mind how often during the day I eat for anxiety relief, instead of actually waiting until my body tells my I’m hungry! I’ll walk into the pantry and grab something crunchy out of habit then ask myself “am I hungry for this?” The answer is almost always no. Still learning so much about how to nourish my body and listen to its needs and I’m grateful Sara shares her knowledge so beautifully!

Tonight's one pot meal was Dutch oven lasagna and crusty shepherd's bread (top two photos) served with garlic butter. We dug into the pot before I remembered to capture an unblemished photo (bottom left), but you get the idea with the close up (bottom right). I garnished the top with fresh basil leaves. So many of you emailed me for yesterday's one pot recipe, that I decided to include from the get-go. DUTCH OVEN LASAGNA total time: 55 MINS prep time: 10 MINS cook time: 45 MINS INGREDIENTS: 1 pound Ground Beef (93% lean or leaner) 1 medium zucchini, chopped (about 1-1/2 cups) 2 garlic cloves, minced 1/2 onion, chopped fine 1 red bell pepper, chopped fine 1 green bell pepper, chopped fine 1 jar (24 to 26 ounces) garden-style pasta sauce 2 cups water 6 ounces uncooked mini bow tie pasta (about 2-1/8 cups) 1/2 teaspoon ground black pepper 2/3 Cup ricotta cheese 1-2 cups Mozzarella Cheese, sliced Thinly sliced or chopped fresh basil DIRECTIONS: Preheat oven to 375°F. Heat ovenproof 5 to 6-quart Dutch oven over medium heat until hot. Add Ground Beef, garlic, onion zucchini, and peppers; cook 8 to 10 minutes, breaking beef into small crumbles and stirring occasionally. Stir in pasta sauce, water and ground black pepper. Bring to a boil, stirring occasionally, for about 5 minutes. Remove from heat. Stir in pasta. Spoon heaping teaspoons ricotta cheese over top of sauce. Slightly swirl ricotta into sauce, not mixing in completely. Cover with foil and bake in 375°F oven 10 minutes. Uncover. Sprinkle with mozzarella cheese. Bake 7 to 10 minutes or until pasta is tender. Let stand 5 minutes. Sprinkle with minced fresh basil leaves before serving.

En una olla, calienta el aceite de oliva y sella las piezas de pollo por ambos lados hasta que se vea doradito. Sazona con sal y pimienta. Retira y reserva. 2. En el mismo sartén, cocina la cebolla hasta que esté transparente. Agrega el ajo y el arroz, fríe hasta dorar. Añade el pimiento, la zanahoria y cocina por 5 minutos. 3. Agrega el jitomate y cocina por 1 minuto, incorpora el sazonador para paella, vierte el agua y agrega los chícharos. Deja que suelte el hervor. 4. Regresa las piezas de pollo, tapa y cocina a fuego bajo por 30 minutos o hasta que el arroz y el pollo estén cocidos, moviendo a la mitad de la cocción. 5. Retira y deja reposar 15 minutos. 6. #familymeals Eggplant is closely related to the tomato and the potato. When we cook eggplant, we love grilling it or in this case, we sear it on the griddle. Great paired with any lamb dish. Here is how we made ours. 1 large eggplant 1 oz. feta cheese, crumbled 1 teaspoon thyme (add rosemary too) 1/4 cup extra virgin olive oil 1 clove garlic, crushed salt and pepper to taste Slice the eggplant about 1/2 inch thick. Place on a baking sheet and salt both sides. Cover with another baking sheet and weigh it down for approximately 20 minutes. This process will extract all the moisture out of the eggplant. Now wipe away the moisture on both sides with a paper towels. you'll go through quite a bit. Lay them down on a kitchen towel or more paper towels and let dry completely. In a small boll crush or finely chop the garlic. chop the thyme and rosemary if using and add to the bowl. Add the olive oil. Season to taste. For a little spice, red pepper flakes should be added to this stage. Stir then brush onto both sides of eggplant. Sear about 3-4 minutes per side. Add to serving dish with lemon wedges. Be inspired, get creative and include the kids.
Carter was unsure of trying these meatballs. So I just gave him one and one green bean with his zucchini noodles. The zucchini noodles are familiar to him. He ended up eating the entire meatball, a few zoodles, and didn’t touch the green bean. I’ll take it! Probably the most delicious 30 min meal I've ever made on the fly! Eating food that is nourishing and fast to make is my jam ❤ Don't be afraid of fat. Fat doesn't make you fat!! Enjoy that butter, olive oil, avocado, olives. First off it is satisfying to the tastebuds, keeps you feeling fuller longer (no need for midnight snacking) and helps you burn fat! Eating #lowcarb so I skip the rice/ potatoes. Tonight's dish: Salmon filets are from @ikeacanada Recipe: In cast iron pan heat up olive oil and 1tbsp of butter. Rinse, pat dry and season filets with salt. Cook on each side until browned on medium-low heat (approx 5-7 min per side) Season with pepper Set filets aside and saute onions with capers (add a bit of their juice) until browned. Dinner tonight was amazing thanks to my MIL! Dishes done by the hubs = sitting with my feet up 🙌 Real talk the lil guy barely ate. I thought maybe it was the large amount of food in front of him, so I took the plate away and offered a smaller portion of the food but still no give. Turns out he had a pretty good portion of full fat yogurt 1.75 hrs before so maybe he wasn’t super hungry. He was as content as could be for being overtired so I didn’t force it on him. He loves to eat and makes it known so Bc he wasn’t into it and not asking for anything else I went with it. He got his 🛀 🍼 then 🛏 (early Bc we don’t mess around with tiredness)! #pedirdmomtip if your lil one is not eating much at meals and you notice they are snacking “grazing” all day try to space out the snacks and meals to a more regular set schedule to help improve meal time eating. Como dice el dicho: “Este ARROZ ya se coció!” (¡Y quedó DELICIOSO!) 🍗🍚 INGREDIENTES: - 3 cdas de aceite de oliva - 1 pollo entero sin piel, cortado en piezas - al gusto de sal - al gusto de pimienta - 1/4 de taza de cebolla fileteada - 1 cda de ajo picado - 2 tazas de arroz para paella - 1 pimiento rojo en juliana - 1 zanahoria en cubos pequeños - 1 jitomate escalfado y picado - 1 sobre de sazonador para paella - 3 1/2 tazas de agua - 1 taza de chícharos Para decoraR: - al gusto de perejil fresco PREPARACIÓN: 1. En una olla, calienta el aceite de oliva y sella las piezas de pollo por ambos lados hasta que se vea doradito. Sazona con sal y pimienta. Retira y reserva. 2. En el mismo sartén, cocina la cebolla hasta que esté transparente. Agrega el ajo y el arroz, fríe hasta dorar. Añade el pimiento, la zanahoria y cocina por 5 minutos. 3. Agrega el jitomate y cocina por 1 minuto, incorpora el sazonador para paella, vierte el agua y agrega los chícharos. Deja que suelte el hervor. 4. Regresa las piezas de pollo, tapa y cocina a fuego bajo por 30 minutos o hasta que el arroz y el pollo estén cocidos, moviendo a la mitad de la cocción. 5. Retira y deja reposar 15 minutos. 6.
