It's my one year keto anniversary, y'all! I celebrated by going shopping at Aldi's and Walmart. Only the best, you know. I fasted until around 12 when I ate leftover sausage dip stuffed peppers. I'm making those again because, holy moly, they are good. When I was at Aldi I thought they had Kerrygold cheddar cheese on sale so I grabbed two packages. Turns out it's the Happy Farms version of Kerrygold, but it's from grass fed cows. It's Mature Irish Cheddar, so I just HAD to try it. Turns out it's amazing. @aldiusa
please keep that in stock. This afternoon consisted of eye appointments for two kids with both needing glasses 🤦. We raced from there to karate. After my class, I sat through my youngest's class then home for dinner. It was Taco Tuesday with chicken tacos. I opted for one lettuce shell and the rest straight off my plate via a spoon. After dinner I had some strawberries. It just felt right, you know?

for providing high quality raw milk. If you're in Utah, go check them out. I buy a lot of my grass-fed beef from them. I'm doing a raw milk fast for a minimum of 7 days. I have been reading up on "The Milk Cure" and have decided to give it a go. As you know, I've been very sick for the past 6 months. I'm getting no help from doctors and I'm spending thousands on medical bills. I've been 2 weeks clean carnivore eating grass-fed and finished beef and that has kept me from having symptoms everyday to only once in the past week and a half. So since Sunday I've been drinking raw milk from grass-fed cows. These cows are a mixed herd of Jersey, Brown Swiss, Milking Shorthorn so they produce the A2 protein in milk instead of the A1. They test every batch to the same standards as pasteurized milk. It's $11 a gallon but it's worth it in my opinion. Pasteurized milk tastes like garbage. I don't know how I drank it for so long. So, as far as the fast goes, I still fast all day until I get home from work and then drink a half a gallon on up to a gallon. It's really weird just drinking milk and nothing else, but the milk is delicious. I'm going to see how I feel after a week. The funny thing is that I test my ketones because I'm curious how it messes with ketosis. The lowest my ketones have dipped is 0.8 mmol/L. I don't care about ketones right now, but it is good to know. I will be teaching a group class called RESTART. It is a program that was created by another Nutritional Therapy Practitioner as a way to teach the basics of nutrition and how eating a real food diet can restore the health and vitality of your youth.
As a Nutritional Therapy Practitioner I am uniquely qualified to teach this class as it follows the guidelines of the NTP course I graduated from in June. The class will meet once a week for 5 weeks and will focus on up-to-date nutrition education, a 3 week "real food challenge" that includes a sugar detox, and the support and accountability of a small group environment. Classes will be limited to 10 participants. .

, I’ll try to link it in my profile) is SO good. AND I’ve had this thing in individual portions in my freezer for months. I just pull out a piece & heat it up when I want some. I like to have a couple options in there & Keto desserts have all kept well in the freezer so far. Go make you some 🙌😉 and save some for a rainy day (or any day you don’t want to cook) too!

Cookie dough FAT BOMBS.. FOR FUEL!? HECK YES. I add these suckers to my smoothies for a fat boost orrr just pop em in my mouth when I need a little mid-day snack to stay full! Or my personal favorite— blend up some frozen bananas with almond milk & add em in to make cookie dough nicecream!! It’s also good straight out of the bowl... trust me on this. Having these in moderation is OKAY! What’s life without a little dessert, anyway?
Feel free to use normal, dairy ingredients. I am lactose intolerant so I always use dairy free ingredients.
KETO HIGH FAT VERSION:
-1 package Tofutti cream cheese
-1/2 cup Earth Balance butter
-1/2 cup nut butter of choice (I prefer almond)
-1/3 cup sugar free sweetener of choice (I use Lakanto brand)
-1 tsp vanilla
-Lily’s sugar free chocolate chips (as much as you want! Enjoy Life is another great brand)
VEGAN HIGH PROTEIN VERSION: -1 can chickpeas, drained & rinsed (NO, YOU WILL NOT TASTE THEM!)
-1/2 cup nut butter of choice
-1/4 cup sweetener -1 tsp vanilla
-chocolate chips to taste
-OPTIONAL- scoop of vanilla protein + 2 tbsp almond milk
FOR BOTH— mix all ingredients in food processor or blender... BOOM! Done! Scoop into balls on a cookie sheet lined with parchment paper and freeze. I alwayssss have these bad boys in my freezer in case of emergency hehe.
The first 3 images are the vegan version— the last 2 images are the keto version. I personally prefer the keto version because chickpeas can hurt my tummy if I eat toooo much. The keto version is a lot creamer too! They melt in your mouth🤤Enjoy!!

Yep. I blew it today. And then I realized that ‘blowing it’ now, is still eating much better than I did before I started this process! I laugh because I had some chicken strips and cheese balls at lunch, and was regretting it because I’ve been doing really well. It’s comical really. Before, I’d have had that, a huge order of fries and a Tank’O’DrPepper. And maybe ice cream after all that. Seriously. I slipped up and STILL didn’t slide down the hill like I used to every single meal. My message is this, ‘YOU’VE GOT THIS’. #PlantYourFlagNOW

After 2 years of trying to conceive we decided to give Keto a try because I had heard so many great things about it leveling out hormones. After about 30 days of cleaning up my food habits, we finally got our positive test! ♥️🙌🏼
Now that little Miss is old enough to start solids we love watching her explore all of these new foods!
She isn’t going to be “Keto” because we want her to experience all of the things!! However, that means apples, strawberries, Greek yogurt, bananas, sweet potatoes.... all of the good stuff. Not processed convenience foods.
No shame to any parents out there, as long as your babies are fed that’s what matters. (Cuz let’s me real. In about 6 months she’s probably going to be eating food from the couch cushions 🤷🏼♀️) We’re all doing the best that we can!! ♥️✌🏼
Guys, I’m not gonna lie when I say #nosweetenerseptember
has been a trip! So difficult! But the results of not having sweeteners have been undeniable- I got to below my “goal weight” this month. I’m not ravenously craving sweet things anymore, I just miss them. On days like today, when it’s hard to push through and stick to it, it’s nice to be reminded of how far the Lord’s brought me. How much He’s sanctified and transformed my heart. My heart that idolized food and emotionally ate. Self absorbed/loathing, crying in my closet because nothing fit me, finding all my worth in how I looked. Yes, I wanted to lose excess weight but more than that I wanted to get rid of that bondage. I wanted to be free of the unhealthy cycle. Today I can praise God for setting me free through the ketogenic diet and holding on to His truths- knowing that He is the only thing that can truly satisfy me and give me worth. His love defines me and gives me purpose. When you’re His, He is faithful to complete the work that He has started in you. Thank You Jesus for not leaving me in my pit!
