This Low Carb Ham & Cheese Quiche is a super simple brunch recipe with a low hassle GF crust using only #coconutflour
! Ideal to portion and eat throughout the week, or maybe share if you’re feeling kind ❤️ Replace ham with mushrooms for an easy #vegetarian
option 🍃 Check out the recipe below 👇🏻👇🏻 Crust Ingredients
2 cups Coconut Flour
2 heaped tbsp Parmesan
Salt and pepper
3 tbsp melted butter
1 tbsp olive oil
1 cup Half cream
90g Prosciutto Cotto chopped
1/4 cup almond milk
Salt and pepper
1/4 tsp ground nutmeg
1/2 cup grated cheddar
1/4 cup chopped spinach
1. Combine crust ingredients. Press evenly to the base of an oven proof dish and up the size about 2 inches.
2. Bake in preheated oven at 180C for 15 minutes or until golden brown.
3. Combine filling ingredients in a bowl, mixing well to incorporate (stir in spinach, ham and cheese last).
4. Pour over the pre-baked crust and bake at 160C for 45 minutes or until cooked through.
5. Cool for 10 minutes before serving.

We have chosen a Barolo Riserva 2011 from our wines cellar.⠀
Did you guess it? This is Pissaladière which originates from Nice in the South of France. It is essentially a caramelised onion and anchovy savoury tart and is eaten as an appetiser with a glass of crisp, chilled rosé. The onions take a while to cook down but once there, they are gloriously smooth with a deep, rich, sweet taste. There should be some black olives too but it was only when I got to the larder that I realised I only had Spanish ones which just won’t do! ☺️ Delicious hot, cold or even luke warm, this dish takes me to the winding streets of the old town, sat at a bar on the way back from the beach. Today I share with you these delicious overnight rolls by @essenundtrinken_magazin
They're very easy to prepare. I make the dough one night in advance and bake them the next day in the morning.
Here's what you need for about 15 small rolls
400g wheat flour (GermanType 550)
100g rye flour (German Type 1150)
Mix the flour and make a small hole in the middle of the flour. Here's where you add the yeast with a cup of warm water (about 340ml). Disperse everything and then form it to one big dough ball. I usually use my kitchen machine here since the dough is very sticky.
Let everything rest in the fridge covered with a towel or some kitchen plastic wrap. I let the dough rest over night for about 12 hours.
Preheat your oven to 250°C. Take the dough out of the fridge and scatter some flour over it. Now you can start forming small rolls with a tablespoon by just taking a small bit of the big dough mass and directly putting it on the preheated baking tray. Bake for 20 minutes and enjoy your morning!
