Ok guys these potato pancakes I had at the Mainz Christmas market were legit the best thing I’ve ever had at a Christmas market and I will be talking about them for the rest of my life😍😍😍 The potatoes were more doughy and less like hash browns, but still crispy on the outside, and tasted sooo good dipped in applesauce🤤

U-MA-MI Soup 🍜 •
Umami, nicknamed in Japanese cooking as the ‘fifth flavour’ after bitter, sweet, sour, or salty, has a strong meaty or savoury flavour, and is most notable in Kombu, or kelp. Kombu is minerally very rich (and GREAT for the kidneys+reproductive organs) and is what imparts the intense flavour found in Japanese stock, Dashi - which forms the basis for umami soup.
Umami soup can be created by combining seaweed, mushrooms, root vegetables, leafy greens and taste adjusting condiments.
Mine has Kombu, carrot, parsnip, daikon radish, butternut squash, shiitake mushrooms, kale, parsley & thyme. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
