Haven’t posted in a while but I’m now back with some new recipes ! 💖—————————————————————SPINACH AND CHEESE FATAYERS
Ingredients for the dough :
7 cups flour
1 teaspoon sunflower oil
1 teaspoon milk powder
1/4 teaspoon salt
1 teaspoon sugar
1 teaspoon instant yeast
1 to 2 cups warm water —————————————————————
Ingredients for the spinach and swiss chard filling :
1 kg spinach cleaned, cut, washed and drained
1 kg swiss chard cleaned, cut, washed and drained
1 teaspoon salt
1/4 teaspoon paprika
1 teaspoon sumac
3 tablespoons lemon juice
4 medium onions finely chopped
1/4 cup mixed sunflower and olive oil
Ingredients for the cheese filling: 1/2 kg feta cheese
1/2 teaspoon paprika
1/2 teaspoon dried mint powder —————————————————————
To brush the pastries :
1/4 cup sunflower oil
1 tablespoon melted butter
For the dough:
Mix all the dry ingredients together. Add the oil, butter and gradually add the warm water and mix until you obtain soft dough. Cover and let it rest for at least 1/2 an hour.
For the spinach and swiss chard filling:
Mix the onions, sumac, paprika and a bit of salt and squeeze until they are discarded from their juice. Leave aside.
In another bowl put salt on the spinach and the Swiss chard and squeeze until the vegetables drop their juices again. Discard the juices. Mix the onions and the spinach, Swiss chard, oil and the lemon juice. —————————————————————
For the cheese filling :
With a fork mix the feta cheese with the paprika and dry mint.
Roll out the dough in small circles. For the spinach filling let the dough be thinner put 1 tablespoon from the spinach mixture and fold the 3 sides to make a triangle.
For the cheese filling roll the dough a bit thicker. Put the cheese filling and fold over in the shape of half moon and with a cookie cutter seal the edge of each fatayer. Arrange on a slightly greased tray and brush the surface with the butter and oil mixture. Bake at 350 °F until the bottom is baked and the top is slightly pink in color.
