Some inspo for your Thursday night dinner ❤️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This kinda dish is one of my faves, not only is it packed with plenty of protein from the rice and chickens it's also full of fibre and healthy goodness from each ingredient. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ For the curry base I generally use: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 can coconut milk (full fat) 1/2 carton coconut cream (full fat) 1 tbsp curry powder 1 tbsp Turmeric 1 tbsp cumin 1tbsp paprika coconut/EVOO to cook with onion garlic chilli ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This is the perfect winter meal which is also yummy as leftovers 👌🏼
LOVE the holiday season. The family gatherings, friend outings, traditions, smells (yes smell – there is something in the air or perhaps my SeasonsJoy essential oil) and even the hustle and bustle. But one things for sure, a lot of us enjoy getting our BAKE-ON!! I know many people who are planning a baking get together this coming weekend. My daughter has plans for an ambitious tiered cake so that will be fun…. to clean up 😂. ⠀ The positive side when making your own desserts is that YOU control the ingredients. Couple of tips for making your sweet treats more on the healthier side – hold the sugar, there are many amazing substitutes for baking, or at least a more natural sweetener.⠀ ⠀ And if possible, add fibre. Most of us hardly get enough fibre in on a normal day, let’s at least try if we are indulging a bit 😉⠀ ⠀ Tis the gingerbread month so a little spin on the original with added protein may become your new fav! ⠀ ⠀ 1 1/4 cups Almond Flour⠀ 1/2 cup Vanilla Whey-based Protein Powder⠀ 3 tbsps Coconut Sugar⠀ 1 tsp Baking Powder⠀ 1 tsp Cinnamon⠀ 1/4 tsp Nutmeg⠀ 2 tbsps Fancy Molasses⠀ 1 tbsp Maple Syrup⠀ 1 Egg⠀ 1/4 cup Tapioca Flour for dusting⠀ ⠀ Preheat oven to 375ºF (191ºC) and line a baking sheet with parchment paper. Combine almond flour, protein powder, coconut sugar, baking powder, cinnamon and nutmeg in a bowl. In a separate bowl, whisk together the molasses, syrup and egg. Add wet ingredients to the dry ingredients and mix until a dough forms.⠀ Generously dust a flat surface, a rolling pin and cookie cutter with tapioca flour. Roll out the dough and cut out shapes.⠀ Bake for 8 to 10 min. Let cool completely before serving. Makes 12 depending on the size and shape of your cookie cutters. 🎄 #holidaybaking ⠀ ⠀
***Protein Cookie Ice Cream Sandwich*** . Macros below . I had a dream about ice cream sandwiches last night (yes, it’s sad, I know) so I was craving one this morning after doing some cardio. . Googled “protein cookies” and found this recipe by @wellplated which came out awesome. I subbed no salt added sunbutter for peanut butter since peanut butter unfortunately gives me serious gas. 🤨💨 . Also, I used whey protein isolate (not concentrate) by @isopurecompany since it’s low FODMAP. . Threw some @lactaid chocolate ice cream between two cookies and BAM 👊 epic protein ice cream sandwich.😋 . If/when I make this again I’ll probably use almond butter instead because I wasn’t a huge fan of the flavor the sunbutter gave the cookies. . What's for dinner tonight? Italian chicken sausage with northern beans, spinach and sundried tomatoes. The beans were simmered in low-sodium vegetable stock, and once the liquid cooked off, I added sauteed spinach and these amazing antipasto-style sundried tomatoes from (where else?) @traderjoes. I browned the chicken sausage whole first to get a nice sear and then cut it up into pieces and finished it off in the pan. It's a protein-packed, hearty and delicious meal that fills the stomach and the soul. . ***Home Made Buffalo Chicken Cauliflower Pizza*** . Breakfast of champions 💪💪💪 . I was digging in the fridge this morning and feeling bored with my typical egg whites, spinach and rice breakfast when I noticed we had some frozen cauliflower pizza crusts by @caulipowered. . Buffalo chicken pizza came to mind immediately as it’s one of my faves when eating out, but I wanted to make sure the macros fit my goals. . I had meal prepped some chicken thighs earlier in the week so I threw this together and I have to say it came out pretty damn good. . For people worried about cauliflower being a high FODMAP veggie, this pizza crust didn’t bother me but everyone is different. If I have steamed or raw cauliflower I get intestinal issues but no problems for me from this pizza crust for whatever reason. 🤷🏻‍♂️ . Cheese will often give FODMAP sensitive folks issues due to the lactose but I have found that cultured cheeses don’t bother me as much. . As pictured with optional avacado added by @cookingwithkristina. I didn’t need the extra fats in my macros for my half the pizza 😉 . Feel free to try chicken breast instead of chicken thighs if you want to drop some of the fats. . So what does this mean? Well, swiss chard can help with lowering blood pressure, improve cardiovascular performance when exercising, decrease risk of osteoporosis and help manage diabetes. . My boyfriend and I stumbled upon this adorable cafe after trying to hike Kaaterskills Falls (tip: you need crampons if you hike during the winter!). Cold and tired, we decided to pull up to Circle W General Store - and boy, was I glad that we did! It's so cute inside! They have a few small aisles of basic grocery items, teas, essential oils, and local upstate NY goodies (maple syrup, honey, jams, etc.) But the main draw is the cafe in the back. We weren't that hungry but were in desperate need of something hot with caffeine so we got a cappuccino, coffee, and granola+ yogurt+ fruit (the paninis and soups sounded really yummy though!). We gave our orders to the super friendly staff and then grabbed one of the tables by the side. They brought us our order and I was so happy with the foam on my cappuccino (that *jiggle jiggle*) - I love me some frothy caps! The yogurt and granola was really good too. It was just what we needed on a cold winters day. Good Morning! Gave my husband (non keto eater ) a double chocolate muffin to go with his coffee and he said “Omg! This is so good. It just melts in your mouth.” I know babe! I know! Double Chocolate Muffins 10 servings 1 1⁄4 cup almond flour 3⁄4 cup powdered erythritol 1⁄2 cup sugar free chocolate chips 1⁄2 cup Unsweetened Cocoa Powder 2 Tbsp ground flax meal 2 tsp baking powder 1⁄2 tsp ground cinnamon 5 Tbsp butter, melted 1 tsp vanilla extract 1⁄2 cup unsweetened almond milk 1⁄4 cup sour cream 2 eggs 1. Preheat oven to 350F 2. Line muffin tin with liners, and set aside. 3. In a large bowl, mix almond flour, erythritol, flax, unsweetened cocoa powder, baking powder and cinnamon. 4. Stir in butter, vanilla extract, almond milk, and sour cream. 5. Add eggs to mixture and gently stir until fully combined. 6. Fold in chocolate chips/chopped chocolate. 7. Fill muffin tins about 1/2-3/4 full with mix 8. Bake for 20 minutes or until toothpick comes out clean. Let cool for at least 30 minutes. GLUTEN-FREE CLEAN CHOCOLATE CHIP COOKIES 🍪 Need I say more? ! • • Taylor couldn’t keep her hands off of them and she kept wanting “more, more, more”. Definitely got upset when I took the plate away from her 🤷🏼‍♀️. So, gotta say the trick that I used that I think made these cookies everything they are is sprinkling each cookie w/ himalayan salt right before I baked them. The salt enhances the flavors of the sweetness in the cookies and you also get a bit of a salty flavor to it 👌🏻 (obvi) 😬. These would be great to bring to a Christmas cookie swap or just to have in the kitchen during the holiday season.
