I slept for 12 hours. Something I haven't allowed myself to do since... since I don't even remember. And sometimes I forget how to let myself rest. Taking time to make breakfast and really sit down with no time restraint to enjoy it was seriosuly a blessing.

Haven’t had a bagel in a hot minute and I missed everything about them
Sunday.. other than the day following the last day competing this is the first day of zero physical activity and prior to that was weeks without down days. A breakfast of organic farmers market eggs, oat smoked Scottish cheese also local produce, quick smash guacamole and some pink salt and ground pepper. Low carb meal.. why?? No training no need for high carb intake. Also eating some delights over the weekend such as anything I can get my hands on that resembled processed food means the last thing I need to be doing is working my pancreas and liver some more. The next 3 weeks will consist of a heavily periodized training plan with zero down days leading up to a vacation in Dublin and the following week will consist of a week in Barcelona. Also more tattoo and hopefully 3 weeks of strict eating and minimal sugar consumption.
Healthy baked chicken strips ?! Yes please 😍💁🏻♀️ • I covered these with almond flour, Panko, paprika, garlic powder, salt+pepper, and oregano. • Dip each chicken piece in an egg mixture, and then in the almond meal mixture and bake for 20 minutes on 400! • The bulk of this mixture was almond flour- I only used about a tablespoon of Panko because I wanted to keep it low carb... despite having very little bread crumbs these strips still turned out incredibly crispy not to mention super tasty 😋 🐔😍#chickenstrips #quickandeasymeals
Meal prepping is the key to success. Great fitness is 80% great nutrition. Here are some tips for success: follow an anti-inflammatory diet. Keep it simple make small changes at first that you can live with. The better you feel the more you will be inspired to go all in. Buy the best quality fresh food you can. Eat organic as much as you can. Eat Whole Foods. Meal prep ahead of time so you have good food at the ready. Some of these cookbooks and recipes blow my mind. I just keep it simple: roasted and raw veggies, big mixed green salad bowl in the fridge at all times. Fresh fruit chopped up, dried cherries, nuts if you eat them to garnish. Its becoming a wee bit ritualistic getting up early, driving to the capital absorbing the high volume of varying nationalities soaring through the busy city seeing all the different faces and looks and shapes of people from all walks of life to buy about 80% of my weeks food from local producers.
Part of the beauty of making the effort each week to go to the farmers market is you actually get to interact with people and have conversations instead of opting for the social recluse choice of self service. It's nice the vendors actually recognise you and make an effort to engage in conversation and keep you well informed on what they're doing to expand and build their brand.
Highlight of my week?? Ethiopian coffee 😊 why? Because coffee originated in Ethiopia and was then taken world wide by the Dutch (I think) something very decent about Ethiopian coffee maybe it's the cliché of it being the origin of coffee but none the less I'm all for the placebo effect 😂.
Vegan Salted Choc Chip Cookies 🍫🍪
1 cup wholemeal flour
1/4 tsp salt
1/4 tsp baking soda
1/2 tsp baking powder
2/3 coconut sugar
1/3 cup melted coconut oil
1/4 cup water
1/3 cup chopped dark vegan chocolate
Preheat our oven to 180 degrees celsius, and line baking tray with baking paper. In a medium bowl, whisk together the flour, salt, baking soda, and baking powder. Then, in a separate bowl, mix together the sugar, melted oil, and water. Add the wet mixture to the dry mixture and combine until you have a nice cookie dough. Fold in your chopped chocolate. Roll out about 12-14 cookie dough balls and place them a few cm's apart on your tray. Bake for around 14 minutes, the cookies will be soft to touch but harden as they cool.

Hey sugar! Summertime is here and many of my wellness clients ask what sort of drink they should have especially given the amount of “party time” they are logging. Gotta protect that bikini body.
It’s hard to give an exact answer because the serving size and ingredients used in mixed cocktails vary - even for the same drink! However this I will tell you: sugar is a waistline killer and mixed drinks are some of the worst culprits because of the MIXERS USED. .
For instance a basic Apple Martini has approximately 235 calories, which includes 3 teaspoons of added sugar! Think about it. The American Heart Association recommends not more than 6 teaspoons of added sugar a DAY for women, and 9 for men. So this one popular drink has half the recommended daily allowance for women and a third for men.
My words of wisdom on this Wednesday are simple: if you insist on mixed drinks try to stick with natural mixers like a splash (operative word, splash) of real fruit juice, soda water, sliced lemon or limes in mixed drinks. .
Just keep it all in balance. I’m certainly enjoying this chili passion martini but I only had ONE!
