Simple & budget-friendly meal idea:⠀
🌯 Bean burrito bowls! 🌯⠀
We used a mix of dried beans and rice from our pantry to save money and reduce food waste. We also used sour cream and salsa that we already had on hand. The ONLY things we bought were some fresh bell peppers to liven things up 😱🤗⠀
Here are some other ways you could customize this meal:⠀
▪️ swap rice for quinoa or any other grain you have on hand⠀
▪️ swap rice for riced cauliflower or lettuce for a lighter/low-carb option⠀
▪️ add avocado instead of sour cream to make this vegan⠀
▪️ top with any veggies you have on hand⠀
▪️ include canned beans or meat if you don’t have dried beans ⠀

Happy Father’s Day, yesterday!! And in honor of that day...here’s an example of a man-sized healthy breakfast. This is what I make for my hubby almost every morning...
4 scrambled eggs, the other half of my breakfast avocado, 2 @bobsredmill protein waffles, sugar free syrup (not pictured)
Crack the eggs into the pan and scramble only when the whites are nearly cooked.
Mix the pancake mix with cashew milk and use a mini waffle maker to cook...makes it more fancy.
