A little later than expected, but still getting this delicious recipe out to y’all to enjoy next week!
A busy weekend didn’t stop me from prepping some delicious food because I keep it high on my priority list to get done. It makes my week so much less stressful and makes my belly super happy and full 🙌🏼 ••ingredients••
•1/4 t black pepper
•1/4 t salt
•2 pounds boneless skinless chicken breast cut into bite-size pieces
•2/3c cashew or roasted peanut
•2 bell peppers
•2 medium zucchini
•1/2c low-sodium soy sauce •1/2c water
•3T honey or agave
•2T hoisin sauce
•3 garlic cloves, minced
•1/4t ginger or 1t fresh ginger
1/4t dried red pepper flakes
(2T cornstarch with 2-3 T water) ••directions••
1️⃣Sprinkle salt and pepper over chicken.
2️⃣Put chicken in slow cooker.
3️⃣In a medium bowl, whisk together soy, water, honey, hoisin sauce, garlic, ginger, and red pepper flakes. Pour over chicken.
4️⃣Cover and cook on high for 1.5-3 hours or low for 2.5-4 hours
5️⃣About 30 minutes before serving, whisk together cornstarch and water. Stir into the slow cooker. Add in peppers and zucchini.
6️⃣Cover and cook on high for 20-30 minutes or until veggies are tender and sauce has thickened.
7️⃣Sprinkle with cashews, sesame seeds, and green onions. Serve over rice noodles, quinoa, rice, or zoodles if you prefer.

Tonight I did a 10 minute sample workout of Shaun Ts new program. I used the step for the first time. I had to modify and I didn’t keep up with the crew.
I finished, covered in sweat 💦 I didn’t know what I could accomplish in 10 minutes. I’m ready for 20!

Just ran/jogged 2 miles from manhattan to hermosa just for the fun of it, because I felt like it. Ended things on a ((high note)) barefoot on the beach. & watched some of the surfers enjoy the waves. •
