TONIGHTS DINNER: RAINBOW RATATOUILLE WITH QUORN, BAKED SWEET POTATO & AUBERGINE FINGERS....After making a mountain of ratatouille, I have tried to think of different ways to use it in recipes....Loïc had quorn as an alternative to meat which he loved and Pete and I went for a veggie option of ratatouille stuffed aubergine......RECIPE: 1 aubergine, 1/2 courgette, 2 medium sweet potatoes, a handful of quorn pieces, left over ratatouille (as much as you want), oil.......METHOD: LITTLE ONES; Use the leftover ratatouille and cook gently with the quorn for approximately 10 minutes. Cut the sweet potato into fingers and cut the middle of an aubergine into fingers and roast in hot oil for approximately 20 minutes until soft and golden. BIG ONES; cut the aubergine in half and cut the middle out as fingers, slice the courgette thinly and layer into the bottom of the aubergine, top with the ratatouille, serve with sweet potato fingers. #leftovers #fiveaday #ratatouille #vegetarian #sweetpotato #cleaneating #familymeals #quorn #familyledweaning #weaning
It was only as I got back in the door from the hairdressers that I realised I had no plan for dinner today, and not a lot of food in either 🙈 A quick fridge raid and a dinner that I pretty much made up as I went along! This was kind of inspired by a Tuscan sausage pasta dish I saw in a magazine a while ago. To make push the meat out of the sausage skin, fry off in a pan and break up with the back of a spoon. Add in chopped onion, chopped celery and fry until soft. Then add in grated carrot, grated courgette, crushed garlic clove, 1 heaped tsp fennel, a stalk of rosemary and fry off a little longer. Add a generous splash of red wine and simmer to cook off the wine before adding in a jar of tomato pasatta. Simmer gently for about 20-30 minutes or as long as you can. Best served with pasta that grabs hold of the sauce and grated parmesan 😊 Empty plates all round, plus an empty bowl of steamed broccoli!

Incorporate leftover greens if you have them on hand and make magic. What we are limited to in budget, we build in imagination. I chose to saute asparagus, cherry tomatoes and some spinach for my vegetable choice. To avoid mayo, I threw on spicy mustard as a good flavor and heated up @boarshead_official
Honey Turkey, Swiss and American Cheese. Anyone like me who happens to have a griddle at home can make some serious sandwich magic.

A smoothie a day keeps the doctor away!..... Too cringe right?😩 _
I just love making a smoothie every morning to have with my breakfast. Lately my favourite recipe is using strawberries, spinach leaves, handful of sunflower seeds, teaspoon of lemon juice, a chopped up apple and banana.
Its also fun making smoothies with my two year old son, he helps me wash the fruits and vegetables and put the pieces in the cup.
By the way is it just me, or is the nutri bullet/ magic bullet the best piece of kitchen equipment I've ever purchased! I love it so much.I remember when my mum first ordered her one and that was about 15 years ago! She ordered it from QVC l, me and my 6 siblings were sooooooo excited for it to come, we used to watch that same cheesy advert on repeat for weeks!😂 _

LOÏC’S & DADDIES LUNCH: SPIRAL CARBONARA WITH SALAD.....Loïc and Pete both had homemade healthy carbonara for their lunch today and Loïc clearly enjoyed it 😂....RECIPE: 2 cups of pasta spirals, 1 cup of peas, 1 cup of sweetcorn, 1 small onion diced, 3 tables spoons of cream cheese, 1 tsp of garlic granules..... My lunch looks awful and like it consisted of almost nothing but it wasn't and it didn't!
I had a big salad with mixed leaf, carrot, spinach, red cabbage, sweetcorn, cherry tomatoes, cucumber, @taifuntofu
rossa tofu, Sriracha, nutritional yeast, garlic powder and onion powder.
I also had two toasted thins. One was sandwiched with a little more rossa tofu and Sriracha and the other was topped with Vitalite, onion powder and nutritional yeast.
I also had an Oreo and a satsuma.

Friday breakfast; this time sticking to what I know. Sometimes I don’t wake up feeling particularly hungry 😐, but it’s those days that I have to remind myself that 1) breakfast (especially for me) is the most important meal - it sets me up for the day and 2) that my hunger usually kicks in once I relax and start eating. Thankfully today, it did exactly that.
Deets 🍫🥣: hot chocolate oats (1/2 heaped cup oats // 1 scoop soya protein // 2 tbsp cacao // 1 tsp maca powder // 1 chopped date and 1 cup soya milk cooked stove top) topped with greek yoghurt, figs, pear, + @pipandnut

HOMEMADE: Last night's nourish bowl. ☺️ BBQ'd teriyaki chicken, courgette, onion and mushrooms along with sushi rice, edamame, avocado, carrot, seaweed salad, wilted spinach, cucumber and spring onions and a homemade miso Mayo and sriracha 🤤🌶 So much goodness! I can never finish the beautiful bowls I make so I always have an awesome lunch the next day too! 😃😝 #forthewin
Indian breakfast with mango and melon this morning: Idli (made from rice) and coconut chutney.😍 This goes on the list of recipes I want to try when back home next year.💞 Delicious and welcome change from oatmeal (although I also love that 😊). Breakfast is just my favourite meal of the day.😊
As promised here is the recipe for my chilli, sweetcorn and coriander fritters. It was SO easy and quick to make, and it tasted 👌🏼 It’s a fab one to make for brunch guests, and you can batch cook them in advance and reheat in the oven for when you need them. I used a couple of dessert spoons of flour, 1 egg, a quarter of an onion, a handful of coriander, half a chilli and 3 dessert spoons of sweetcorn. It yielded 5 decent sized fritters so you can adjust according to your quantities needed. I wouldn’t bother weighing the flour, just use enough to make a thick-but-still-slightly-runny batter. Add milk to get the consistency you want and don’t over mix the batter so the fritters remain tender. Throw in however much of the seasonings you like according to your taste, it’s your brunch! Enjoy! 🤗
