TONIGHTS DINNER: RAINBOW RATATOUILLE WITH QUORN, BAKED SWEET POTATO & AUBERGINE FINGERS....After making a mountain of ratatouille, I have tried to think of different ways to use it in recipes....Loïc had quorn as an alternative to meat which he loved and Pete and I went for a veggie option of ratatouille stuffed aubergine......RECIPE: 1 aubergine, 1/2 courgette, 2 medium sweet potatoes, a handful of quorn pieces, left over ratatouille (as much as you want), oil.......METHOD: LITTLE ONES; Use the leftover ratatouille and cook gently with the quorn for approximately 10 minutes. Cut the sweet potato into fingers and cut the middle of an aubergine into fingers and roast in hot oil for approximately 20 minutes until soft and golden. BIG ONES; cut the aubergine in half and cut the middle out as fingers, slice the courgette thinly and layer into the bottom of the aubergine, top with the ratatouille, serve with sweet potato fingers. #leftovers #fiveaday #ratatouille #vegetarian #sweetpotato #cleaneating #familymeals #quorn #familyledweaning #weaning
It was only as I got back in the door from the hairdressers that I realised I had no plan for dinner today, and not a lot of food in either 🙈 A quick fridge raid and a dinner that I pretty much made up as I went along! This was kind of inspired by a Tuscan sausage pasta dish I saw in a magazine a while ago. To make push the meat out of the sausage skin, fry off in a pan and break up with the back of a spoon. Add in chopped onion, chopped celery and fry until soft. Then add in grated carrot, grated courgette, crushed garlic clove, 1 heaped tsp fennel, a stalk of rosemary and fry off a little longer. Add a generous splash of red wine and simmer to cook off the wine before adding in a jar of tomato pasatta. Simmer gently for about 20-30 minutes or as long as you can. Best served with pasta that grabs hold of the sauce and grated parmesan 😊 Empty plates all round, plus an empty bowl of steamed broccoli!

What we are limited to in budget, we build in imagination. I chose to saute asparagus, cherry tomatoes and some spinach for my vegetable choice. 💛 Dhal 💛 . . What’s your comfort food? My ultimate comfort food is... A big bowl of spicy Dhal... 😍 I could literally eat bowls of it... in fact when I make dhal... I make a HUGE pot of it & let it simmer for as long as possible... For dinner I mixed together leftover quinoa, leftover jackfruit and green lentil stew, a pack of defrosted tofu puffs, half a tube of tomato puree and a little water. This was half of the mixture and it was actually really good! . . . I also had steamed veg (I bought two packs reduced to a quid from Scotmid) and three rice cakes with a little Vitalite, onion powder and nutritional yeast. My lunch looks awful and like it consisted of almost nothing but it wasn't and it didn't! I had a big salad with mixed leaf, carrot, spinach, red cabbage, sweetcorn, cherry tomatoes, cucumber, @taifuntofu rossa tofu, Sriracha, nutritional yeast, garlic powder and onion powder. As promised here is the recipe for my chilli, sweetcorn and coriander fritters. It was SO easy and quick to make, and it tasted 👌🏼 It’s a fab one to make for brunch guests, and you can batch cook them in advance and reheat in the oven for when you need them. I used a couple of dessert spoons of flour, 1 egg, a quarter of an onion, a handful of coriander, half a chilli and 3 dessert spoons of sweetcorn. It yielded 5 decent sized fritters so you can adjust according to your quantities needed. I wouldn’t bother weighing the flour, just use enough to make a thick-but-still-slightly-runny batter. Add milk to get the consistency you want and don’t over mix the batter so the fritters remain tender. Throw in however much of the seasonings you like according to your taste, it’s your brunch!
