Same event. Same stage. One year apart. More has changed this year than I could have possibly imagined. 🌻🌻🌻 In the first picture, I’m convinced that losing weight is the only thing I’m good at; my one and only purpose. I’ve just ended a relationship because I ‘needed more time to focus on restricting and exercising’. I weigh myself up to 8 times a day and I loathe myself for the rest of the day if the number hasn’t gone down. 🌻🌻🌻 In the second picture, I know that I am good at so many things. I know that I am worth so much more than ‘skinny’. I am LOVING my curves instead of trying to starve them out of existence. I have amazing friends and a family I create the most amazing memories with. I love food, in a healthy, non-disordered way. And now, I love my body, not ONLY for the way it looks and feels, but for everything it lets me do and the way it has bounced back from this illness. ❤️ I’m very proud of how far I’ve come and I want to say to you, YES YOU, that if I can do it, you can. You are stronger than you can possibly imagine and I know you will get through all the little ups and downs, because one day you’ll look down at yourself and know that you are so much more than you thought you were. 💃🏻💃🏻💃🏻

Tonight’s family dinner was BBQ beer can chicken, with sweet potato wedges, corn cob, slaw and salad. Yum! Despite looking well charred this Beer can chicken was super juicy and super tasty to eat! To cook rub a small chicken in a spice mix of 1tbsp muscavado sugar, 1tbsp paprika, 2tsp mustard powder, 2 tsp thyme, 1tsp cayenne pepper and 1tsp onion powder. Meanwhile crack open a 350ml can and drink 1/3-1/2 of the beer (daddy’s job!), add any remaining spice mix to the beer can and then sit the carcass of the chicken on top. Use the legs as a tripod if it isn’t balanced well. Transfer to the preheated BBQ and cover with the lid to cook. Try to keep the bbq temp around 180c. Recipes seem to give different times and after a few flops we now use a meat thermometer to determine when it is cooked. The chicken seems to takes half the time to cook than it would if roasting it, it is essentially being steamed from the inside as well as cooked from the heat of the covered bbq grill on the outside. Today a 1.3kg chicken that takes 1h25m to roast reached cooked poultry temperature in about 40 minutes. I think it must be the sugar in the rub that catches as it can be hit and miss how charred it comes out looking 🤔 Daddy still ate the skin though and said it didn’t tastes as charred as it looked! Jack I skipped this bit! 🍋 Lemon Blueberry Almond flour Pancakes - the perfect springtime Sunday breakfast 🥞 • This recipe made six 3-inch cakes, could easily be doubled. 2 large eggs 1 tsp vanilla extract 2 tsp avocado oil (any oil/butter will do) 1/8 cup milk 1/8 cup fresh lemon juice (juice from ~half a lemon) Zest of half a lemon 2 tsp sugar 1 cup @bobsredmill almond flour 1/2 tsp baking soda 1/4 tsp sea salt Handful of blueberries 1. In a medium bowl, add first 7 ingredients and blend together with hand mixer until smooth. 2. Add remaining ingredients (except bluebs) and mix for one minute on medium speed, then fold in blueberries. 3. Heat skillet on medium, grease with butter/ghee/nonstick spray, use 1/4 cup scooper to drop batter onto pan and cook for a couple minutes on each side. We had a quick breakfast of banana on toast again today then headed off to the beach with a picnic lunch. The forecast wasn’t great but was dry and calm so we went anyway as Jack wanted to show daddy his new sand grabber 👍 We took ploughman’s baguettes with ham, cheese, red onion marmalade and salad, plus a shared yumbox with carrot, celery and hummus, olives, blueberries, mango and strawberry. I took mini pork pies, apple and veg crisps as needed too 😊 I use the yumbox to save space and also to make sure we take out only what we are likely to need, saves waste on food perishing through the day as cool blocks/bags can only do so much. The crisps and apples are coming home with us untouched but are reusable 👍. I don’t tend to list drinks but we pack that too. This is my greatest discovery. Accidentally bought it before instead of feta cheese for a Greek salad and it’s basically feta but not as strong (which is great for me) and it’s only 52 calories for half a pack (which is more than enough for a serving) ... expect to see ALOT of Greek salad from me now (tomato cucumber & red onion, olives are VILE) !
