It’s #selfcare #sunday !! I decided to whip myself up an amazing mask and take a bubble bath! 〰️ It’s pretty cold here in NYC, which means dry skin for a lot of us. So I decided to whip up this nourishing and gently exfoliating mask to give my skin a little boost! And when I was done, my skin was oh-so-glowy!! 〰️ Here’s the recipe: take 1/4 ripe avocado (mashed), 2 TB 100% pure pumpkin purée and 2 TB dry rolled oats. Mix well. Apply to face. That’s it! 〰️ Now, you can totally get all fancy and throw these things in a blender to make it go on smoothly and look nice. I, however, skipped this step because I just wants to smear this nourishing mix all over my face ASAP, not caring what it looked like 😇. 〰️ If you liked this recipe, I have a WHOLE BOOK full of ‘em! You guys! I got my meal prepping on HARD today! Ever find an amazingly exotic fruit at the store and Just Have to get it?!?⁣ ⁣ Then get home and realize you have no idea what this thing is or how to eat it... so you decide to dehydrate some raspberries and throw some of this new thing in there as well...? 🤷‍♀️⁣ ⁣ That was me. I'm excited they will be done dehydrating in about 12 hours and my kitchen smells better than a yankee candle!! 💃⁣ ⁣ Turns out this is called a Buddha Hand, it's citrusy and a bit more bitter than a lemon. It's also packed with super great side effects like a easy remedy for cough, relieves pain and quickens the healing process, controls blood pressure, boosts and stimulates the immune system, and great for relieving gastrointestinal issues. ⁣ ⁣ Looks like I'll be getting this on a regular basis from now on 🙌🏻⁣

I can’t get enough soup this winter! Split Pea and Potato topped with Plant Based Sour Cream and Parsley. Super easy and satisfying. You could also make this in the Instant Pot in the same way I made the Tomato soup. Sauté the veggies and then throw everything in, set the timer for 18 min and let the pressure come down naturally. Swipe left for the stove top recipe and to see the process. For the Plant Based sour cream that has changed my life: . ✔️1 1/2 c raw cashews soaked in water at least 6 hours or pour boiling water over them and soak 1 hr. ✔️3/4 c water ✔️1-2 tbsp fresh lemon juice ✔️2 tsp apple cider vinegar ✔️1/2 tsp salt Blend all on high until smooth. Adjust the ingredients to taste. I like mine really tangy so I add a bit more vinegar. Thickens as it cools in the fridge. My dear friend and mentor Vicky paid respects to my parents today with a delightful visit. My parents had a car accident on November 21 and Mom was admitted to the hospital for 3 days. She is getting better without medications. She is currently on ASEA and CBD oil. She used to take several medications for her high blood pressure, diabetes, neuropathy, IBS and pain. She is improving daily. I am helping her restore gut health recently by taking small amounts of celery juice in the morning. She also started this week on vitamin B12 and D3. We are also improving lifestyle by trying to walk three times a week, eat well, live well and laugh more. As you can see we are all glowing!😁 . I’m excited to share that next semester, I will be a lab assistant to Vicky at my alma mater, Cal State University Northridge, in the physical therapy program. The class is being taught for the first time and it’s called “Pro Bono.” We will offer three physical therapy clinics during the semester for free to the community! . Community service is something I am passionate about and the opportunity to do it through a learning and teaching experience is a dream. For the first day of class, Vicky asks me to share about The Better Angels Festival. A snowy day means cooking - and so I tweaked a family recipe. I’ve been wanting to make my grandmother’s Sweet Potato Pudding for a while, and here it is. Sort of. . I used half the sugar the family recipe lists (and coconut sugar instead of white sugar), subbed almond milk instead of cow’s milk, and skipped the margarine for grass-fed butter. . Sweet potatoes are not just a vehicle for brown sugar and cinnamon. They’re a great source of fiber, B vitamins, vitamin C, and minerals such as selenium, iron and calcium. And they’re high in beta carotene, which converts to vitamin A. . So can this count as dinner? Asking for a friend.
