•Fresh Raspberries with Vanilla Whipped Cream•
Easy peasy snack with high impact. Perfect for summer nights when you’ve already had ice cream basically every day in a row.
Coconut curry vegetable ramen!
I originally was going to make vegetable lo Mein tonight, but then I wanted coconut curry... so I decided to just combine them together lol
Adapted from @minimalistbaker

-1 Tbsp toasted sesame oil
-1 inch ginger peeled and grated
-5 cloves garlic, grated
-1 small onion sliced length wise
-1 jalapeño sliced and seeded
-1/2 cup carrots chopped
-1 cup broccoli florets
-1 1/2 cup shiitake mushrooms sliced
-1/2 cup baby corn (optional)
-2 tbsp curry powder
-1 tsp chili garlic paste
-4 cups vegetable broth
-2 cups light coconut milk
-1 Tbsp coconut sugar (optional for sweetness)
-1 tsp ground turmeric
-1 Tbsp miso paste
-2-3 cups noodles of choice (I used ramen)
-Fresh Thai basil chopped for garnish
-Sriracha or chili garlic sauce (optional garnish)
-Heat a large pot over medium-high heat. Once hot, add oil, garlic, ginger, onion, jalapeño. Sauté, stirring occasionally for 5 min. Add vegetables and sauté an additional 5 minutes.
-Add curry paste and sauté for 1-2 minutes more, stirring frequently. Then add vegetable broth, coconut milk and stir to deglaze the bottom of the pan.
-Bring to a simmer over medium/low heat, and cover for 20 minutes. If you want a deeper more developed flavor simmer on low for an hour.
-Taste broth and adjust seasonings as needed, adding coconut sugar for a little sweetness, turmeric for more intense curry flavor, or more sesame oil for nuttiness.
-Garnish with Thai basil and any additional spices if wanted.

sauté onions and mushrooms in EVOO, salt and pepper. once they start to cook through, add in frozen gnocchi and cooked chicken. heat all the way through and add minced garlic and spinach. top it all off with red pepper flakes. enjoy!! #dinewithdg

made batch last week and again this past weekend. Iwas crushing them before my morning workout 🎾 Even Mr. Peel is on the Protein Buckeye bandwagon. We used the Peanut Butter Chocolate Protein Powder from @amazinggrass
but you can absolutely substitute vanilla protein powder and almond butter if you want to keep is strictly paleo. Love a recipe with options!

I'm from Oklahoma, so any dish that involves biscuits gets my heart pumping 😋
The shortcake biscuits featured here are gluten-free and just sweetened a tad with a sprinkling of turbinado sugar on top. Sandwiched between the halves of the biscuits are macerated sliced strawberries and lightly sweetened whipped cream. Even with the biscuits, these make for a delicate summer treat 🍓
Gluten-free Shortcake Biscuits
320g gluten-free all-purpose flour blend
8g xanthan gum
5g fine sea salt
10g baking powder
30g granulated sugar
6 tablespoons of really cold cubed butter (I cut into 1cm chunks/cubes)
3/4 cup cold buttermilk
1. In a medium-large bowl, whisk together the dry ingredients--flour, xanthan gum, salt, baking powder, and sugar--until thoroughly mixed.
2. Dump in the butter. Quickly cut the cold butter into the dry ingredients with a pastry blender or your fingers (I use my fingers since I hate cleaning the blender). Stop once you get course cornmeal consistency with smattering of petite pea sized chunks.
3. Slowly stir in the buttermilk. You want to get a shaggy, cohesive dough. I used the whole 3/4 cup since it's dry here, but you might not need it all.
4. Move the dough to a lightly floured surface and lightly knead it a few times. Pat the dough into a 1.5 inch thick square. Cut the dough into 9 equal squares with a sharp knife. Place the squares on a baking sheet lined with parchment.
5. Brush the tops of the squares with buttermilk. Place into an oven preheated to 425F and bake for about 15 minutes, until the tops are golden. It is best served warm

happy Monday! started the day trying to sweat out my crazy allergies and came home craving a huge salad. this Cobb salad was so good and I’m already wishing I had more, this will def be in the meal prep routine once I go back to work🥗 . .

•Sunnyside Pavilion and Cafe•
This is the summer of me realizing how awesome Toronto really is, complete with a swim at the Sunnyside Bathing Pavilion (free!) which makes me feel like I’ve transported back to the 1920s. They do an afternoon pool clean so my best girl treated me to lunch in the cafe. We enjoyed this wild mushroom pizza and Greek salad (Greek salad a secret menu item!) in wicker chairs by the lake with a view of the volleyball court and some drinks with tiny umbrellas in them. Honestly it was the perfect way to spend the day and to beat the heat. HIGHLY RECOMMEND.

Things I’ve been working are: adding veggies and fruit to my foods whenever possible 😁 (Hello zucchini brownies), reducing sugar where possible, and cutting out weird ingredients by choosing less processed foods.
