Happy Friday Friends! There’s something so serene about being 35,000 feet in the air. My first experience of being on a plane was when I was 6 months old and we took a family trip to India. Traveling and seeing new places far and near has been enlightening over the years. I don’t think you need to travel across the world to experience something new. It could be something as close as the neighboring town or city. I say make the best of every situation, explore, and appreciate what’s around you! BREAKFAST 🥞 LOVER ♥️ • • • Mi relación más formal y duradera definitivamente ha sido con mis desayunos 😂🤞🏻😍 se me puede olvidar comer o cenar pero desayunar jamás🙌🏻 #breakfastideas #breakfastlover • • • 👩🏼‍🍳Panquecas de avena 🥞 Ingredientes secos: 🔸 1/3 de taza de harina de avena 🌾 🔸 1 cucharadita de canela 🔥 🔸 1 cucharadita de semillas de chía 🥄 🔸1 cucharadita de maca (opcional) 💥 🔸 1 cucharadita de monkfruit o endulzante sin calorías (opcional) 🍯 Ingredientes húmedos: 🔸 1 huevo + 2 claras 🥚 🔸 1 chorrito de leche de almendras sin endulzar 🥛 Preparación: ▶️ En un bowl mezcla todos los ingredientes secos y en otro bowl bate los huevos con la leche. ⏩ Incorpora los secos a los húmedos y mezcla muy bien todos los ingredientes (también puedes hacer todo en la licuadora). ⏭En un sartén a fuego medio 🔥 agrega la mezcla y ve cocinando las panquecas. ⏺Sirve en un plato y lo que yo hice fue una torre de panquecas y entre cada una agregué yogurt griego natural sin azúcar y por encima miel maple sugar free y blueberries 🤤 #afitstrawberry

VEGAN BUDDHA BOWL 400g sushi rice  1 small cucumber  1 tbsp coconut sugar  1 -2 tbsp rice vinegar 2 avocados cooked brocoli or any other veggies of your choice  200g cooked chickpeas  2 tbsp soy sauce  2 tsp coconut sugar 1 tbsp tomato paste  2 tbsp water  1/4 tsp ground ginger  1 tsp minced garlic  1 tbsp sesame oil  sesame seeds  cilantro  juice of 1 lime 1-2 tsp miso paste wakame seaweed (optional)  chili •cook sushi rice according to the packaging and set aside •slice cucumber and place them in the small bowl add 2 tbsp rice vinegar, coconut sugar, pinch of salt, sesame seeds mix and set aside in the fridge •for the chickpea marinade use medium bowl and mix soy sauce, coconut sugar, tomato paste, ground ginger, garlic, sesame oil and water then add chickpeas and let them marinade 15 min •preheat oven to 200’C •place chickpeas on the tray make sure they don’t overlap •bake 10-15 min turning them once •cook your broccoli or add any other veggie of your choice ( zucchini, mushrooms, carrot, eggplant etc..) •to make the dressing - in the mixer mix 1 avocado, bunch of cilantro, juice of 1 lime, pinch of salt and pepper and 1 or 2 tsp of miso paste, add little bit of water for the thickness you desire •to assemble the bowl place cooked rice on the bottom then add veggies, fresh sliced avocado, cucumbers, chickpeas, top with dressing and extra toppings like sesame seeds, wakame, fresh cilantro, lime juice and chili ENJOY!

Happy Wednesday! Lately I’ve been in a mental fog. Not sure if it’s the time of year or whatnot but I’ve been emotional, unmotivated, uninspired and just not my true happy self. I got a note from “the universe” this morning about how “we are in control of how we feel”. It’s crazy how that note came today. I’ve decided to do just that and let today be better. Throwing it back to this awesome burger place called @zinburger that I tried the last time I visited my sister and cousin in Jersey. Got there “El Diablo” burger which I highly recommend. Happy Tuesday!! I’ve been on a go with the flow mode since I didn’t meal prep because I’m leaving for Dallas on Friday! If you guys have good food/ coffee recs for Dallas comment below! Whipped up this quick and easy meal last night! I used @traderjoes cauli fried rice which is a life saver. I also tried @hempeplantprotein for my protein for the first time and I really liked it! I cooked the hempeh in sesame oil, coconut aminos and siracha. This entire meal was put together in under 30 minutes. I’m all about quick and easy on weeknights. Hope everyone has a great day!

Happy Thursday! Woke up this morning feel a hell of a lot better. Made his chicken chili this past weekend for my fam and myself! This is such an easy, cozy crock pot meal! ~dEATS~ 2 (14 oz) cans petite diced tomatoes, drained 2 (7 or 8 oz) tomato sauce 2 large skinless boneless chicken breast 1 cup chicken broth 1/2 cup yellow onion diced+ 1 large green pepper diced 1 (14 oz) can rinsed and drained corn (or 1 package frozen) 1 (14 oz) black bean can rinsed and drained 1 small jalapeño minced (remove seeds/ribs) 1 Tsp salt + dried oregano 2 Tsp chili powder (1 Tsp if you want less spicy) 1 Tbs ground cumin (this is key for chili taste) 1 Tbs minced garlic 4 oz brick style cream cheese ( for dairy free use @kitehillfoods cream cheese) ~Directions~ Add all ingredients to slow cooker EXCEPT cream cheese. Give a good stir so it’s all mixed. Cook on low for 6-7 hours or on high for 3-4 hours. Remove chicken and chop into pieces or shred. Return chicken to slow cooker and give everything a few stirs. Stir in cream cheese until fully melted and combined. Then let it sit for another 15 minutes! You can top this with cheese or crackers etc! I topped mine with half an avocado + EBTBS! Tasty Tuesday... Taco Salad!⁣ ⁣ It’s Taco Tuesday in our house.... again! 😝 ⁣ ⁣ I love tacos but I usually skip on the flour tortilla and just make a salad using spinach and romaine lettuce as my base.⁣ ⁣ Most times I will add extra veggies like mini sweet peppers for some color and additional flavor but when I’m tired like today I keep it simple!⁣ ⁣ With my meal plan this is 2 Green (veggie) portion fix containers and 1 Red (protein). No Avocado this time but if I did, only a quarter of one or whatever would fit in my blue container.⁣ ⁣ I added sprinkle of cheese, a little salsa and VOILA! Easy peasy simple dinner that works with my meal plan😁 ⁣ ⁣ It may not look like it but it really is a lot of food! This girl does not starve herself!! 😋
