If you know me then you know I don’t mess around with the classic recipes that have been handed down to me by my mother, aunts and gr(n)aany* And by handed down I mean acquired in bits and pieces and out of order, as I call them from my kitchen in slightly panic mode as they grumble and tell me how to make something, all the while bickering- ‘pakana sikho bole to sunti nai thi diwaani ghodi’(exactly translates as ‘mental mare -nope not a cool nickname just mare as in a female horse- didn’t bother learning when we told you to). Ok sidetracking aside, I do tend to experiment with new things I try and come across and give it my own spin. This up here is my desi spin on what is known as Soul Sweet Taters. A sweet potato casserole which originated from southeastern America and makes a special appearance at thanksgiving feasts. Of course I desi-fied it by adding some khoa, ground almonds, cardamom and nutmeg. Turned out great, more flavorful than its original version and extra decadent. Served it as a warm halwa topped with ghee roasted blitzed nuts. And the next day when I came across some fillo dough in the fridge I obviously made turnovers using the sweet taters as filling and deep fried then to a crispy perfection- Because that’s we do. We find a decent dish and make it an artery clogging agent. And no food ends without desserts. Red velvet cake and choco lava cake with ice cream makes you go ooey gooey good with its to-die-for chocolate fudge sauce🤷♀️🤷♀️🤷♀️
