First time in Portugal and I am loving it here. 😍 The vegan scene is on point. 👍 I would highly recommend vegans and non vegans come to Portugal and try the vegan Franchesinha. What an amazing dish! It is inspired by the croquet monsieur, but taken to another level. We had ours in a restaurant called Casanova. Our server Bruno was amazing, he knew exactly what we were looking for (Franchesinha) and then he knew exactly what would make it better (fries and salad). Now, vegan Franchesinhas are so popular in Portugal that even our tour guide was recommending them to the group! Come to Portugal, it is really an amazing country 🇵🇹
If you’re a veggie- or not, you need this in your life. Corn- bake in foil for 15mins, brush with sriracha mayo, drizzle lime, crumble feta, add some coriander and salt and black pepper. Mushroom rice- fry mushrooms with garlic add lime and mix with a bag of microwave rice. Salad- spinach, pomegranate seeds, bell pepper, cucumber, tomatoes and coriander then drizzle olive oil, lime juice and salt and black pepper ✌🏻

I needed to make something that is super quick to throw together so I did this slow-cooker honey-garlic chicken. It takes about 5 minutes to pull the bits together for the sauce and then you just throw it all in the slow-cooker and leave it! Once it’s cooked the chicken pulls apart and you can shred it into the sauce- serve it with toasted sesame seeds and it’s way too tasty for so little effort! On the plan: weeding celebration in Slovakia, city discovery in Austria and chillin’ on the beach in Croatia. Relaxing and having fun is exact what I need 😎 And I know that a delicious and crunchy batch of granola is waiting for me when I come back home 😁 Just baked this superfoods recipe before leaving to make my first morning after holidays a little bit smoother. Recipe:
* 1 cup GF rolled oats * 1 cup quinoa flakes
* 1 cup chopped almonds
* 1/2 cup sunflower seeds * 1/2 cup pumpkin seeds * 2 tbps chia seeds * 1/2 cup buckwheat flakes * 1/3 cup goji berries
* 1/2 tsp ground cinnamon
* 2 pinches of sea salt
* 1 tsp vanilla extract
* 2 tbsp coconut oil, melted
* 3 tbsp maple syrup
Preheat oven to 140°C (280°F). In a mixing bowl, add all dry ingredients (except goji berries) and stir. In another bowl, combine melted coconut oil, maple syrup and vanilla and stir. Pour wet ingredients into the dry and mix throughly. Pour the mixture evenly onto a parchment lined baking sheet. Bake for 10 minutes, then stir and spread back to an even layer. Return to the oven for 15 more minutes. Let it cool, then combine with the goji berries. Enjoy 😋 💫

🌿💚🍃 Linsen unter fließendem Wasser waschen und nach der Packungsanleitung kochen. Gekochte und ausgekühlte Kartoffeln in Scheiben schneiden und in eine hohe ofenfeste Form schichten. Währenddessen den Backofen auf 160 °C Umluft, oder 180 °C Ober-/ Unterhitze vorheizen. Ein Esslöffel Olivenöl in einer Pfanne erhitzen. Chili, Knoblauch und Schalotten darin für einige Minuten weich dünsten. Dann die Tomaten, den Thymian und die gekochten Linsen hinzufügen. Mit Salz und Pfeffer kräftig würzen. Anschließend die Linsen-Mischung auf die Kartoffelscheiben geben. Währenddessen Auberginen in Scheiben schneiden. Olivenöl in einer beschichteten Pfanne erhitzen. Die Auberginenscheiben darin nacheinander hellbraun anbraten und salzen. Anschließend die gebratenen Auberginenscheiben auf die Linsen-Mischung schichten. Die Eier mit der Sahne verquirlen und über den Auflauf gießen. Dann den Schafskäse bzw. Feta darüberbröseln und den Auflauf auf dem Rost im unteren Drittel des Ofens für 45 Minuten garen. 🌿💚🍃 …/… 🌿💚🍃 Wash lentils under running water and cook according to the package instructions. Tutto questo era uno spettacolo magnetico per me, spingeva la mia curiosità alla stelle e mi incantava. Oggi sono cambiate tante cose, sono cresciuta, non ho più quella voglia incontenibile di aprire il forno quando i dolci ancora non sono cotti, e non posso più guardare la mia nonna mentre cucina, ma una cosa non è cambiata, la curiosità che suscita in me il cibo.
