Kidding... Final Product from the cured Cantaloupe. Super concentrated, floral flavor, with a certain je ne sais quoi. The liquid is mostly garbage, but maybe I’ll find something. If there was no salt, the liquid would be a perfect syrup for cocktails.
Steamed miso milk buns. It is hot out and baking anything in the kitchen doesn’t sound all that appealing but what about steaming? For a fraction of the heat, steamed buns are a great option if you crave that homemade bread fix but don’t feel brave enough to run the oven. I will be posting the recipe on the blog very soon. It’s been a while since shared anything here or on the blog. I’ve been traveling, moving apartments, getting over a leg injury and though I never planned on stopping any cooking/blogging I was kinda forced to for a bit. Anyways, enough excuses. I hope everybody on this hemisphere is having a great summer!!! More coming up soon!
If you can’t wait for the blog post here’s the recipe:
500g AP flour
300g whole milk
2 tbsp miso paste
1 tbsp sugar
1 tsp active yeast
1/2 tsp salt
Add all the ingredients to the bowl of your stand mixer. You can warm up the milk to speed things up a bit but there’s really no need. Mix on low for about 15 minutes. Cover the bowl with sarin wrap or a wet kitchen towel. Place in the fridge overnight.
The next day take it out of the fridge and allow to come to room temperature. It will take a few hours. Dust your work area with some extra flour. Remove the dough from the bowl and knead by hand. Shape into one and a half inch balls. Allow to proof for another hour.
Prep your steaming station. I use a large pot with about an inch of water and a canning basket raised over the water level using whatever I can find. I use a strainer that has no handle so it fits in the pot. Place parchment paper over the basket and bring to a boil. Have the lid ready. Also have a kitchen damp towel handy.
Place the dough balls in the steamer. Cover the pot with the damp kitchen towel and place the lid on top. Fold the corners of the kitchen towels over the lid. This will prevent water form dripping back down over the dough balls. Remember, you have a piece of fabric over the stove so make sure you work safely.
Steam for 15 minutes but since you’re steaming there’s no risk for overcooking the buns. In some of my tests I steamed the buns for over an hour and I actually liked the result better. Work in batches if necessary. Getting a

UDANG GORENG MAYONESE
15 ekor udang, kupas kerat punggung
2 siung bawang putih
Garam + merica
1 putih telur, kocok
Minyak untuk menggoreng
Tepung, aduk rata :
3 sdm tepung bumbu siap pakai
150 gr terigu
Saus mayo (aduk rata):
1 sdm skm
4 sdm mayonese
1 sdt air perasan jeruk lemon(sy jeruk nipis)
Garam + merica
1.Balur udang dengan garam merica dan bwang putih, diamkan 15 menit.
2.Tuang putih telur + 2 sdm bahan tepun, aduk rata. Gulingkan udang ke bahan tepung, sampai terbalut rata.
3.Goreng di minyak dengan api sedang. Angkat tiriskan.
4.Sajikan dengan saus mayo. Boleh langsung diaduk atau dicocol 😋.
