All of our favorite things in one skillet 🥑 🧀 🌯
Chicken Enchilada Skillet
Preheat oven to 400°
Sauté one small onion; chopped, two cloves garlic, chopped, 1 tsp cumin and a pinch of salt, about 5 mins, til onion is soft. Add to a large bowl, set aside skillet to use again.
Mix in 1 bag @fronterafoods
Enchilada sauce or 1 can Enchilada sauce of your choice. Add 1/4 cup chicken broth and mix well.
Add 1 can black beans, drained
Add 1 rotisserie chicken, shredded. Mix well.
Take 5-6 corn tortillas and cut into quarters.
Layer tortillas on the bottom of a skillet, preferably cast iron. Add chicken mixture, and continue to layer tortillas then mixture. Top with shredded cheese and bake for about 20-25 mins until cheese is golden and bubbly. Top with avocado and anything else that sounds yummy to you. Enjoy!
