Idli are a type of savoury rice cake, popular as breakfast foods throughout India and northern Sri Lanka. The cakes are made by steaming a batter consisting of fermented black lentils (de-husked) and rice. The fermentation process breaks down the starches so that they are more readily metabolized by the body. Idli have several variations, including rava idli, which are made from semolina. Regional variants include sanna of Konkan and Enduri Pitha of Odisha. To make Idli, four parts uncooked rice (Idli rice or parboiled rice) to one part whole white lentil (urad dal, Vigna mungo) are soaked separately for at least four hours to six hours or overnight. Optionally spices such as fenugreek seeds can be added at the time of soaking for additional flavor. Once done soaking, the lentils are ground to a fine paste and the rice is separately coarsely ground, then they are combined. Next, the mixture is left to ferment overnight during which its volume will more than double. After fermentation some of the batter may be kept as a starter culture for the next batch. The finished idli batter is put into greased moulds of an idli tray or "tree" for steaming. The perforated molds allow the idlis to be cooked evenly. The tree holds the trays above the level of boiling water in a pot, and the pot is covered until the idlis are done (about 10–25 minutes, depending on size). A more traditional method is to use leaves instead of molds.
Since plain idlis are mild in taste, a condiment is considered essential. Idlis are often served with sambar but this varies greatly by region and personal taste. Idlis are also frequently served with chutnies (coconut based), kaara chutney (onion based) or Spicy Fish Curries. The window is open. It’s mid-Spring in Southern California. There’s a light breeze. In direct sun, you’re in mid-summer. A voluptuous bumble bee is circling the young olive tree on the patio. A regular bee is more interested in the handful of orange blossoms on the small tree in the green pot. Screen door separates us. Scent of wet soil and garden work fills the air. Squirrels rush by somewhere out of sight.
The inviting sound that comes while opening a can of diet-coke. Tish-caaah. A treat. A sip clears the throat sharply. When we were young, we were only allowed soft drinks at events or parties. That stuck with me. I rarely drink them. So whenever I do now, it makes an ordinary afternoon a special occasion. Bonus: a colored straw makes the whole situation nearly festive.
Lightly salted roasted pumpkin seeds. In a large jar by my laptop. Grabbing handfuls at a time. Spreading them on the counter in front of me. Snap. Snap. Crack with my front teeth as I work. One by one. Work turns into play. The censored-sweet flavor of the diet-coke and the kick of the soda bubbles complementing the salt and crunch perfectly. A lesson in how the simplest things can bring much pleasure and joy. Grateful.

🌸Моченые сливы с медом🌸
• 10 кг неповрежденных твердых зрелых слив
• 400 г меда
• 75 г соли
• 5 л воды
🌿Сливы уложите в эмалированное ведро или кастрюлю, положите кружок, поставьте гнет и залейте рассолом. Заквашенные сливы будут готовы к употреблению через 20-30 дней.
🌿В течение этого периода периодически снимайте пену и плесень, не менее 1 раза в неделю промывайте в горячей воде кружок и груз. Храните в холодильнике не более 4-5 месяцев.
🌿Для рассола добавьте в воду мед, соль, перемешайте и прокипятите. Кисло-сладкий рассол из-под моченых слив немного газирован и является прекрасным напитком, утоляющим жажду.
