The BEST❗️ Banana & Blueberry Loaf. 🍌
2 cup spelt flour (240g)
1 tsp bicarbonate of soda
3/4 tsp baking powder
3/4 tsp salt
1/2 tsp cinnamon,
3 medium bananas mashed
1/2 cup Greek yogurt
1/2 cup pure maple syrup
1 tsp stevia
1/3 cup milk of choice
2 tsp pure vanilla extract
1 cup frozen blueberries
In a bowl mix together all the wet ingredients, in another bowl mix together all dry ingredients, other than the blueberries. Add the wet to the dry, add the blueberries. Mix well to form a batter. Place into a prepared loaf tin. Press-down a sprinkling of blueberries on the top. Bake in a preheated oven at 170.c for 30 minutes, leave in the oven for a further 10. (Oven off) check it’s cooked by inserting a skewer into the centre, if it comes out clear, it’s ready, if not turn the oven back on and cook in 3 minute increments until cooked.
Let cool completely. Cover and refrigerate overnight. Taste and texture are much better the second day - if you can wait that long. Leftovers can be sliced and frozen for up to a month.

The food and service you get her is just amazing. The place it self is a massive old manor house that has a huge amount of interesting history about it. It's even listed in the doomsday book! Once you have been welcomed and you have a drink in hand from their extensive wine list, you are presented with nibbles and canapés, all of which were delicious and got your taste buds warmed up for the food ahead. 🍷🍾 -
Next we got a pre starter of a white onion veloute topped with a thyme foam. This is something I am trying very soon as it blew my mind how something so simple can be so satisfying.
We were then presented with some fresh focaccia bread, which is possibly the best I have ever had. I managed to replicate it fairly well so check out my previous post if your interested to see the outcome. 🍞🥖🍷 -
For starter I went for the pigeon, however I didn't manage to photograph it because I ate it so quickly, but I can assure you it was delicious! The picture above is of my main course. I had partridge breast, (can you see the theme of game here?) It was accompanied by different textures of potato and black pudding. Again if you follow me you will know my love for black pudding, hence why I swayed towards this dish. 🍗🍽️😋 -
This partridge it self was cooked to perfection and melted in the mouth. The black pudding elements included a kind of crumb that topped the breast, which was a welcome change in texture. Also there was a croquette and a puree, both very different and very enticing, the puree especially grabbed my attention because of its bold flavour. This dish was also garnished with small onions which I think we're pickled slightly and added a great zing that broke this dish up nicely. 🌰🦆 -
All in all a great experience, I shall showcase another main course from here and my phenomenal dessert too very soon! Keep an eye out. 👀😃

It might looks messy but this veggie soup is so yummy and easy to make and perfect for this cold weather. Just shred 1 big onion, 2 carrots, 2 potatoes, 3 stiks of celery, 4 garlic cloves, 2 big tomato; sautéed all well to extract all flavours, add water and 1 blok of veggie broth, add half cup of red lentils, and some frozen kale, cook for 30 min on low fire, then add half cup of rice and cook until rice is soft, even my daughter love it, im so proud of her 😁

Seoul delicious~! Must eat korean barbecue when in Korea... and drink some soju!
An awesome meal with prime beef steak, and korean pork belly over a charcoal grill. We also tried jumulleok, which is short steak marinated with sesame oil, salt and pepper - it is really juicy!
The great part was that the cold weather and high quality smoke suction hoods meant we still emerged smelling fresh and not like we had been barbecued too! 😝

Seoul colourful~! An unexpected find in Seoul's Jungbu dried seafood market - dried fruit!!
Really blessed as I had just been lamenting that we didn't get to try any dried persimmons. Needless to say, we tried almost every kind of dried local fruit and vegetable produce Korea has to offer here - taro/yams, pumpkins, beetroot, tapioca, kiwi, apricots, etc. In many forms too - dried whole fruit, dried outer layer only, freeze dried, dried with sugar, etc.
My favourites have to be the strawberries and the persimmons. I get why Korean persimmons are so famous now - they are really juicy and sweet!

Seoul American~! You probably spotted the ham and ramen in the picture and guessed what this is - Army Stew!
Army stew is literally translated to budaejjigae (or 부대찌개) and is a popular fusion dish bblending korean kimchi stew with American military processed food from the 1950s. That's how it got its name.
Think spam, hotdogs, bacon, processed cheese - and perhaps you can understand why so many people love it. It also includes Korean food such as rice cake and ramen. This really helped stem hunger post Korean war and was a great way to make good use of leftovers. A really tasty combination!

On the weekend I trawled through old food magazines looking for new recipes looking for inspiration when I found this recipe ... I can't tell you what it is because I ripped the recipe card but its Moroccan (shout to those who get the reference). It's got chickpeas, squash, sultanas in it with harissa paste and homemade el hanout (thanks to range of spices in my cupboards). It's the perfect balance of sweet and spice 🌶
