Seriously pleased with how last night turned out. Amazing wine flights at a cellar door, then one of the best meals we’ve had at @automata_syd.
We sort of stumbled across it by accident but everything about it was phenomenal. We love eating and finding fantastic new restaurants. Although we basically needed to be rolled out after 7 courses!

Who else loves avocados? 🥑 what about bananas 🍌? Me too! Did you know that avocados are a fruit? Well a berry actually! It also has more potassium then a banana. Double of what a banana has actually. So why not add the two together and make a chocolate mouse 😏 -
This afternoon I spent creating this little treat for the week. 🤭
Chocolate avo mousse tart 🥑🍫
- 145 grams almonds - 170 grams medjool dates soaked and pitted - 30 grams happy way vegan vanilla protein. - Food process the almonds first then add your dates and protein. Food process and then press into your base and pop into freezer - AVO BANANA MOUSSE 🥑🍌
- 2 very ripe bananas
- 3 ripe avocados (the riper the better)
- 30 grams happy way vegan chocolate protein - 80ml pure maple syrup - 40 grams cacao powder - 50 grams loving earth chocolate which is 8 squares roughly
- food process everything but the chocolate. Melt that first then add and process together until it’s creamy. Continue to scrape down sides. Add to your base and pop back into freezer or fridge. Decorate with whatever your feeling 🤘🏼 sky is the limit beautiful people .. -

The boys always want French Toast and I make it several different ways. This way is more like the kind you'd find at a "pancake house" type of restaurant. Not your basic milk/egg/cinnamon. I also had a package of "street taco" size mini flour tortillas so I used up the leftover batter to dip and cook them up. I made a "McGriddle style" taco with a scrambled egg & half a sausage patty.
🥚🍞Extra Special French Toast (makes approx a dozen slices)
1/3 cup whole milk
1/3 cup half and half
1/3 cup sugar
1/3 cup all purpose flour
1/4 tsp salt
1 tsp ground cinnamon
2 tsp pure vanilla extract
Blend all the ingredients until smooth. I use my stick immersion blender or a standard blender to get a light and fluffy batter. Pour into a shallow bowl or pie pan. Preheat griddle or pan over medium-low flame. Dip bread (or tortillas) to coat both sides. Brush your griddle or pan with a light coat of clarified butter or oil (regular butter burns). Cook each side on medium-low heat until golden brown (around 1 1/2-2 mins each side). You don't even really need syrup. 😋
*I've also tried other variations of sugars and flours. It works with coconut palm sugar and whole wheat pastry flour beautifully.
