Been having a lot of yogurt bowls for dinner lately. They take five minutes to throw together, and at the end there’s only a bowl and a spoon to wash up. In this one: plain yogurt, salted peanut butter, fresh blueberries, shredded coconut, cinnamon. All organic.👌🏻✨
To my vegan followers look away...🙊🙊 These sweet potatoes pancakes have been a new staple with incorporating eggs into my diet.
1c sweet potato (boiled then mashed)
1/2c nut butter or tahini
1 tbsp coconut flour
1 tsp cinnamon
1 tsp baking powder
Separate the egg yolk and egg whites then beat the whites untill fluffy. Combined the rest of the ingredients but the egg whites in a large bowl then fold in the egg whites, batter should be airy and not to thick. Cook on low- med heat for 1-2 minutes a side.
Enjoy with your fave fruit on top! 🍌🍓🍑
The strawberry cheesecake from Junior’s was delightful. The slice showcased classic east coast cheesecake which is dense, creamy thick filling, and graham cracker crust. We loved that it’s not overwhelmingly sweet and the strawberries on top were huge! We would recommend to anyone who love cheesecakes. 🌟🌟🌟🌟🌟 out of five.

Meatballs are a decent choice for meal prep because they can be flavored however you like and they reheat well. The only thing I don’t love about them is how messy they are to form. One thing you can do is to take a bland meat, like turkey, and make a gigantic batch of meatballs at once and then freeze them. On weeks you didn’t want to prep you could pull them out, add whatever flavoring you’re feeling that week, and add some sort of frozen vegetable to your dish. You could do an Asian flavor like in this picture, BBQ, Buffalo, Swedish, or marinara sauce. .
On the weight loss side the Meatballs are made from ground turkey and the quantity is less than on the right. If you want to eat the same kind of foods during your weight loss then you have to eat less. Of course you can maintain a similar volume of food but to do so you need to fill your dishes with less calorie dense ingredients like vegetables. The weight loss side is also served on top of a bed of zucchini noodles. These provide some of the volume in the meal to help keep you fuller. It is nearly impossible to overeat vegetables so go ahead and load them up, even in weight loss, because the chances you eat enough to sway your relationship to calorie balance is not very likely. .
The right side is made with ground pork instead of turkey. Ground pork is used a lot in Asian cuisine and it is much more flavorful than ground turkey. It has more moisture and fat than turkey which makes it a better choice for weight gain. Ground pork is much higher in calories than ground turkey. The quantity of meatballs you make also helps to increase the calorie load of the meal. The biggest difference between these two meals is the base. The weight gain has a cup of white rice instead of the zucchini noodles which adds carbs!!!

I'm reading an old Gourmet Traveler at the cafe with a coffee before mums and bubs yoga. Oh and the bub is currently sleeping 🤗. Yes!!!!!!! This is one of the ways that I love to relax. Flipping through food mags always give me ideas and inspiration for meals.
Oh and I'm done with summer salads. I think I'm done with summer. It's been too hot for my liking. So looking forward to autumn and winter cooking.
