Coconut Mahi Mahi perfect for a Monday night dinner! 🍽💛 Try this recipe from the @toneitupnutrition tonight 👇
1 cup roasted & crushed macadamia nuts
2 Tbsp. coconut flour
2 Tbsp. coconut shavings
2 Tbsp. coconut oil, melted
2 Tbsp. olive oil
4 6 oz. fresh mahi mahi fillets
2 Tbsp. coconut milk
salt & pepper
1 Tbsp. parsley
Preheat oven to 425. Line a baking sheet with aluminum foil & brush it w/ olive oil. Place fish on top & season with salt & pepper. Bake for about 5 mins. Take it out of the oven & brush with coconut milk, then dip each fillet into nut & flour mixture. 💃 Return fish to oven & bake for 5-10 mins or until golden brown. 🌴 Enjoy! xxo

My FAV fajita seasoning recipe :: Ingredients
1/4 cup chili powder
2 tablespoons ground cumin
1 tablespoon salt
4 teaspoon black pepper
3 teaspoon dried oregano
2 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 tsp parsley
Mix up and store in glass jar.
I use 2 Tbsp when making the fajitas. #BombDotCom 💣

So...I've been living under a rock and JUST tried spaghetti squash tonight for the first time!
OMG, it was amazing and I didn't even miss the regular spaghetti noodles. The taste/texture was pretty similar. .
I made regular semolina spaghetti noodles for the kids and Aaron and just made the spaghetti squash for myself (yay leftovers!!)
Then I made a healthier (clean) marinara and turkey meatballs for all of us to put on top. .
What spurred the change?
The new timed nutrition program that I'm in a Coach test group for doesn't include carbs for dinner. My dinners are 1 portion of protein and 1 portion of veggies.
The first time I saw this meal plan I freaked out a little when I saw the daily carb, healthy fats and fruit allotment. I was eating far more than 2 servings of carbs and fruits and definitely more than just 1 serving of healthy fats everyday! .
It really forced me to get creative with my meals, but not in a bad way...I love a good challenge! .

Stuffed peppers for supper tonight. Really good but could be GREAT with some kind of sauce, I think! We just dumped ranch on it because well, ranch is everything. Jk, I’m not that big of a ranch fan. Mustard, yes. Still working on water goals for today but managed to get in a little bit of exercise! Still waiting for the scale to just behave and show me the numbers I want. ☺️ Hopefully this week!
