I think the first time I came across the name Ferran Adria, I was reading this tiny, tucked away article in some random food magazine. It was a food writers take on the epitome of gastronomic excellence, dinning at this little coastal spot in Spain called elBulli. Heard of it? It’s long since closed it’s doors, as Ferran Adria has moved on to far more radical food think tank pastures. I was just watching a Netflix show called “Abstract”... I’m kind of obsessed with it. It made me think of all of those food architects, that make my jaw drop. Those innovators that redefine what you think is possible, those inspirational minds that have you scratching your head in amazement, those folks who do what seems as though it cannot be done. Sometimes I think with the right tools, time and resources it would be so interesting to explore the endless applications of creating surprising and delighting food. Here’s to the dreamers, the doers and the ones who inspire us... to eat better, dream bigger and think beyond the tip of our our nose. With a little vision and imagination, everyday things can be made extraordinary. ✌🏻🌱💚✨

We love this team. Two former pastry chefs who decided to start pushing sugar in a different way. Yeah tbh I have no idea what the nutritional value of some of these trendy af edible flowers are but I have to admit that sometimes the aesthetic value of food can really impact the experience of eating it. I’d never been that much of a “plater” until about a year ago when I really began experimenting with “what would happen if I made this food *look* good too?” It immediately began getting more compliments and I enjoyed eating it more too. Sometimes the obsessive instaplating thing is a bit much, but just arranging a few things or adding extra garnish gives a different dimension to the act of eating and engaging with the meal you just made. Psychologist Marc David talks about how the immune and hormonal response to food can shift based on the attentional relationship we have with our food. 🌹
Think about it: if you stop what your doing, and really focus on enjoying every bit of your meal, the systems in the body designed to process that food are getting signals from your mind and subsequent neurochemistry that indicates it’s time to optimally digest that food. In the other hand, if you eat in a rush while your doing 3 other things, you end up sending very mixed signals. 🌱
So, in the age of smart phone ADHD-flavored everything, how can you anchor your attention to your meal? Make it delicious, make it right for your body, and making it beautiful goes one step farther. Staying and present and engaged with your food is the goal. I’ve been kind of surprised to have seen how plating has effected me.. It’s a funny little feedback loop you can take advantage of..Oh and pause and breathe between bites (full tantric eating is another story though)

Taco bar included black beans sautéed with onion, garlic and seasonings, walnut taco meat, salsa verde, fresh guacamole and fried corn tortillas! Good food is always better shared 😋 happy eating 🍴
Crispy Kelp Noodle Salad w/ Avocado 🥑, Herbs & Tahini Dressing
300 g kelp noodles
2 medium carrots 🥕
300 g red cabbage
250 g green soybeans
250 g forest mushrooms 🍄
2 Tbsp tamari
1 Tbsp rice vinegar
1 Tbsp cold pressed coconut 🥥 oil
Two handfulls of garden tomatoes 🍅, 2 avocados 🥑, fresh mint 🌿, fresh cilantro and lime🍈 wedges
3 Tbsp light tahini
1 Tbsp tamari
1 garlic clove
1 tsp freshly squeezed lime🍈 juice
2-3 Tbsp water💦
Himalayan salt and black pepper
1) Drain kelp noodles and put in a bowl w/ cold water 💦 while preparing the veggies.
2) Peel and julienne carrots 🥕, finely slice the cabbage, and cut the tomatoes 🍅 into quarters.
3) If soybeans are frozen: pour hot water 💦 over them to defrost.
4) Slice the mushrooms 🍄 and sauté in coconut 🥥 oil until slightly browned.
5) Rinse noodles, carefully drain, and then massage with tamari and vinegar until they soften a bit. Allow to sit while preparing the dressing.
6) Combine all the ingredients for the tahini dressing. Salt and pepper to taste.
7) Toss noodles and veggies 🌶 together. Put in a wide bowl and top with tomatoes, avocado 🥑 and herbs. Drizzle the dressing on top. Serve w/ lime 🍈wedges.
