DINNER **Freezer Stash Creamy Lemony Chicken • Cauliflower Mash . . Another Dinner... Another Freezer Stash Moment. I’m seriously in love with my Stash! . . . CREAMY LEMONY CHICKEN . . Here's what you need: 6 bone-in, skin-on chicken thighs
1 Tbsp. paprika
Salt and Pepper to taste
1 tsp. dried thyme
3 Tbsp. unsalted butter
3 cloves of garlic
1/2 cup chicken stock 1 tbsp. Meadow & Marrow Lemon & Herb 1/2 cup heavy cream
1/4 cup Parmesan
1 lemon
2 cups baby spinach
. .
Instructions:
1. Season chicken thighs with salt, pepper, and paprika.
2. Melt 2 Tbsp. butter in a large ovenproof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown. Drain excess fat and set aside.
3. Melt 1 Tbsp. butter in the skillet. Add garlic, stir until fragrant, then add chicken broth, Meadow & Marrow Lemon & Herb bone broth, heavy cream, Parmesan, lemon juice, thyme, and stir. Bring to boil, then reduce heat to low.
4. Stir in spinach, simmer until spinach has wilted and the sauce has thickened. Return chicken to the skillet.
5. Bake at 400˚F / 200˚C for 25 minutes.
6. Brunching 😍 . . Thought I’d share this amazing brunch I made the other day. I love smoked salmon as a treat and had it on thin bagels with low fat cream cheese - they are as good as they look! I then had some lightly fried tomatoes and red onions with them 🍅 . . I slept in over the weekend, so had a brunch style meal at about half 11! It doesn’t matter if your meals are a little messed up sometimes and you’re not quite eating at ‘normal’ times. I used my last teaspoon of blue spirulina powder to make these blue ombre chia pudding jars 🤤. I am happy because I got to eat these 😊, but so, so, so sad because my podwer is gone 😭💙 (not the reason why I am feeling blue though 😁😉). This time I grounded my chia seeds before soaking them in the liquid, but to be honest I prefer the consistency of the pudding made with whole seeds 😁🤷‍♀️. Happy Tuesday, my friends!😀🤗 . . BLUE OMBRE CHIA PUDDING 💙 🌟6 tbsp chia seeds (grounded or whole) 🌟2 tbsp sweetener of choice 🌟a pinch of sea salt 🌟 1 tsp vanilla extract 😊 🌟300 ml milk of choice 🌟1-2 tsp blue spirulina powder 😉 . Can’t get over the amazing summer we’re having this year and it’s been a long time since we’ve had traditional ice cream. We drastically reduced our intake of cows milk a year ago. The main reason being to reduce our chronic inflammation - we suffered from a lot of joint and back pain! We found that it made a huge difference to us and decided to stick with it. So since we’re limiting our dairy (and don’t want to miss out on ice cream!) I’ve been experimenting with making kulfi with coconut milk instead. These were flavoured with cardamom, vanilla, saffron and sweetened with maple syrup. The coconut milk was boiled for about 30-40 mins before pouring into moulds and freezing. Coconut milk has a creamy richness and a strong flavour which works well with kulfi and overall I was pretty impressed 😊 still need to tweak the recipe though - it could have done with a touch more maple syrup and I might try vanilla pods next time. Tried 3 new things from North End (finally) 😎 apart from our all-time favorite chili cheese croissant we took Biscotti ~ it was actually tasty. We didnt expect much but gobbled it up in a minute honestly. Try it out! 9/10 Plain bagel w cream cheese ~ we had this a couple of months ago but had it first time in Dhaka. It was great! Cream cheese is love 10/10 Hazelnut latte~ we’ve had this in other coffee shops. And it tasted the same (for obvious reasons) 9/10 Both of us love this place so much.
