🌱Crispy Coconut Cauliflower Bites and cabbage slaw...dressed with @havenskitchen cashew lemongrass sauce. 🌱Recipe cauliflower bites: remove florets from 1 cauliflower and cut into approximately 1-inch pieces. In a large bowl, whisk 1 cup coconut milk, 1 tbsp olive oil, 1 tbsp sriracha, 2 tsp garlic powder, 2 tsp ground cumin, 1/2 tsp chili powder, 1 tsp paprika, salt to taste. In a separate bowl, mix 1-1/2 cups whole-wheat panko bread crumbs with 1-1/2 cups shredded coconut. Add cauliflower to coconut milk mixture and let it soak for about 5 minutes. Remove cauliflower piece by piece, coat with breadcrumb mixture and place on parchment-lined baking sheet. When all florets are coated, bake at 450F about 25 minutes, flipping half way. Serve with lemongrass nut sauce. 🌱Cabbage slaw recipe: Shred 1/4 red cabbage and 1/4 green cabbage. Slice finely 3 scallions. Cut 1 carrot and 1/2 cucumber into matchsticks. Toss together with drizzle of neutral oil. Toss again with your favorite dressing. I used @havenskitchen Cashew Lemongrass sauce. Yes I am a nutritionist and yes I choose marshmallows over dried apples...here's why👇 . . Basic macro breakdown: Apples 30g serving = 0F/27C/0P Marshmallows 30g serving = 0F/23C/1P . . Virtually the same. . . Basic nutritional breakdown: Apples = 4g Fiber, 21g Sugar Marshmallows = 0g Fiber, 18g Sugar . . So if these snack items are pretty much the same in terms of numbers, why would I opt for the one containing artificial sweeteners and corn syrup as opposed to the option with just 1 ingredient? . . Because I eat what I crave as long as it is within my macros and more importantly, as long as I am getting all my nutrients with other foods throughout the day. . . If you follow my stories, you've seen that I eat a lot of veggies, eggs and lean meats. You've also seen me drinking @motiv8performance Greens which is how I keep my fiber intake up. However, I do also have foods like ice cream, pizza and chicken nuggets! . . This is called flexible dieting and believe it or not, it is how myself and ALL of my clients lose weight! . . I encourage the 80/20 rule, meaning I eat whole foods 80% of the day and whatever the fuck I want for the remaining 20%. This has helped me not only stay on track but also completely cured my binge/restrict habit! . . Now, in order to flexible diet you must have the proper set of macros. As I've explained before, you cannot follow someone else's macros and expect to look like they do! When I calculate macros I take into account a lot of factors including lean body mass, hormones, thyroid, maintenance calories, and activity level. Just a factoid for you to keep in the back of your mind ❤️ On this FREEZING day, I made this YUMMY @simplemills mix- but here’s the... RECIPE (it’s slightly different than the original because I’m allergic to eggs!): It’s the the almond flour vanilla cake, but strayed a little from the instructions and added only a can of pumpkin and some vanilla - that’s it! Coconut oil to line the @pyrexhome glass dish and into the oven at 350 for 30 minutes, top with icing (or not- this was the @simplemills icing) and EAT! This sh!t is GOOOOD. Here’s to the start of the week on a TUESDAY! 😘😘 .
Honey Sesame Cauliflower Poppers 💥This is one of our favorite side dishes, and a perfect way to change up your cauliflower game 👌🏼We've made them Buffalo and BBQ style before, and all three are amazing 💯 1 small head of cauliflower 1 egg, whisked 1 1/2 cups whole wheat panko crumbs Cut up the cauliflower into florets, dip them in the egg and then in whole wheat panko crumbs. Place them on a lined tray and drizzle with olive oil. Bake on 375 for 45 minutes. Flip midway. Sauce: 2 tbsp apricot jam or honey 1/4 cup soy sauce 1/4 cup water 2 tbsp spicy sesame oil 1 tspn red pepper flakes 1 tbsp sesame seeds Stir together in a small bowl. Heat a skillet, bring the sauce to a boil and then toss in the cauliflower until evenly coated.

this PALEO PECAN CRUMBLE PUMPKIN BREAD is just oozing with winter vibes! this was my first time making a recipe from @rachlmansfield 🙂 I reduced her recipe by 2/3rd’s and baked it in a 4” round pan, which gave me the option to eat the whole thing. I reduce recipes like this A LOT (sometimes I only make 1/12th of a recipe!) because it allows me to make lots of treats every week, and it eliminates the threat of reduced self-control. On the flip, I usually make x2-x4 portions of savory foods, and I use substitutions to make them healthier!

RECIPE INCLUDED! // I've said it before, but if my picky husband says he likes a "healthy" dish, you know it has to be alright. 😉 He told me he loved this meal, so give it a try with your pickiest eater and let me know what they think! // 🥘🌱 Creamy Vegan Spaghetti Squash Casserole // Ingredients: 1 medium spaghetti squash 2 Tbsp extra virgin olive oil 3 garlic cloves, thinly sliced 1 large shallot, minced 16 ounces mushrooms, sliced 12 ounces fresh baby spinach // “Cream” Sauce Ingredients: 1 Tbsp extra virgin olive oil 1 small shallot, diced 2 garlic cloves, minced 1 head cauliflower, cut into florets 1 1/2 cups vegetable stock 1/4 cup nutritional yeast 1 Tbsp lemon juice salt and pepper to taste // Directions: 1. Slice squash in half lengthwise, place onto a baking sheet (cut side down), and bake at 350F for about 1 hour or until tender. 2. While squash is baking, prepare the “cream” sauce. Add 1 Tbsp oil to a saucepan over medium-high heat. Add shallot and garlic and cook until browned and fragrant. 3. Stir in vegetable broth and increase heat to medium high. 4. Once bubbling, add cauliflower florets, reduce heat to medium, cover, and cook for 10 minutes or until florets are fork-tender. 5. Once tender, add the saucepan’s ingredients to a blender along with nutritional yeast, lemon juice, salt, and pepper and blend until smooth. Set aside. 6. Once squash is done cooking, allow it to cool slightly and scrape the flesh out with a fork. Place squash shreds in a mixing bowl, lightly season with salt and pepper, and set aside. 7. Place a large skillet over medium-high heat and add oil. Sauté garlic and shallot for 2 to 3 minutes. Add mushrooms and continue to sauté for 3 to 4 minutes or until caramelized. 8. Add spinach and continue to sauté until spinach has wilted. Drain excess liquid and stir mixture into the mixing bowl with spaghetti squash. 9. Pour sauce over the spaghetti squash mixture and toss together until fully combined. 10. Pour mixture into a lightly greased baking dish and bake for 15 to 20 minutes or until the top has lightly browned. 11. I bought this dried pink Guava during our Taiwan trip last month.💕 I’m not completely sure of all the condiments but these strips are tossed in both, sugar & salt in such a balanced way that it’s hard to decide whether it makes for a sweet or savory snack.💛 . With vibrant hues of pink & green, it’s kind of crusty on the outside, nice & chewy on the inside with hints of the seeds that conjure the image of the real fruit - just done better!💕 . I love pink guava & feel that it doesn’t always get its due. Citrus fruits, mangoes, apples etc often take the front seat & this poor humble guy is kind of left on the last row.💛 . We have a lot of different delicious varieties of dehydrated fruits in India, esp mangoes but I don’t recall seeing guava. Which is why, I was so excited to come across it in Taipei.💛 . We went to a local food market which had stacks of spices, snacks, fresh food & lots of awesome chilli sauces but out of all, this guava caught my attention.💕 Thank god the store owner did not ask me to pay for everything I tasted coz I literally tasted everything in the store.😋 . Ended up with a bagful of this treat & now it’s my go-to snack plus dessert. Unbelievable how such a humble fruit can transform into something so drop-dead delicious.💕💕 . Cashews are a great antidepressant, just 2 handfuls is the equivalent to a daily script of prozac the most used anti depression drug in the world. . . I first googled this because I thought it might be bs, but turns out, it really is the real deal. . My advice is though, instead of telling the people that you think may be depressed about this, start incorporating it into their diet through salads and general snacks if you can, it's 100% natural and yummy of course, and if you get a bad response try different seasoning, then if you notice a difference and or they notice a difference tell them!!.. if you don't live with them try sharing an article from online their are credible sources. . . In my experience it's hard for people to admit they are depressed and those who do some times get stuck in the poor me situation that may not be politically correct to say but in my experience is true, as love ones and friends we have the ability to effect those around is a positive way and the best way is through food 💖.. healthy does mean happy . . Maybe those family dinners or lunches that get heated from time to time because of alcohol can be a good place to try it as well 😜 . . Our favourite is Broccoli Sprouts for long term because it's the most potent natural activator of Nrf2 pathway in humans, Nrf2 is what turns on the production of defence enzymes that kill inflammation and allows the body to detox, Oxidative stress is becoming more and more known to be the main cause of more diseases and illnesses then we are yet to define, meaning if your cells are damaged it can also effect your mood, your overall health etc . . And it is only a learning tool, a tool that articulates using data, gleaming insights we may not have uncovered without them. . However, I fear we forget that food tracker data takes so much context out of food. Food is emotional. Food is social. Food is meant to be enjoyed. And as helpful it is as a learning tool and as much as eating enough calories to fuel us is important, I don’t see others using these apps as simply and only educational tools. . I see people using them without the observation of a nutritionist or dietitian or healthcare professional. I see people use these apps as a measurement to define their worth. I see people restricting, judging, and shaming themselves. . If you feel any of that, it’s probably not you. It’s the technology. These apps are designed with the psychology and intention of behavior change. As a former visual and UX designer, I see that so clearly. This is beautiful when used as a tool. But don’t let that tool make you feel unworthy, take out the joy of sharing in conversation with your friends, or take autonomy away from your choices. Taking national guidelines as blanket fact for everyone without taking into account a user’s personal medical history, lifestyle, and health goals is not only unethical; but, it is poor design. And it induces fear and shame in many of its users when they look to technology as a guide in their health journey trying to navigate this confusing wellness landscape. . Food is meant to be enjoyed and you are worthy of that.

Goodness knows how that will turn out 😬 Just sanding and base coat today. We thought it was good to recycle and reuse our own furniture instead of spending thousands on a new concrete one. Fingers crossed it works out 🤞 Happy weekend everyone 😘 ❤️ Easy Vegan Chocolate Cake 1 cup whole meal spelt flour (or all purpose or gluten free blend) 1 cup xylitol (or coconut sugar, sugar) 2 tsp baking powder 1/4 cup cacao powder 1 cup soy milk 1 tsp apple cider vinegar 1 tsp vanilla extract 1/8 tsp salt Preheat oven to 180C/350F Mix milk and vinegar and allow to stand for a few mins while you gather the other ingredients Mix all ingredients in a bowl until just mixed Spoon into a greased or lined cake tin Bake for 30 mins or until a toothpick comes out clean Allow to cool. Drizzle with your favourite icing. Good Morning! Hands up who loves a fry-up? Healthy of course! Today we have tofu scramble on a bed of wilted spinach and toasted sourdough topped with sea kelp and accompanied by avocado and extra veggies. ⠀ .⠀ The secret to the best tofu scramble? Black Himalayan salt! (kala namak). It makes it taste eggy! You can buy it easily on line (I bought mine from Amazon). Good evening! A late dinner tonight after double spin and a long day at work. ⠀ .⠀ How many veggies can you fit in one bowl? I have been experimenting a bit with my spices (hehe). We have paprika roasted sweet potatoes, crispy chilli tofu with a Sriracha sauce (yum!), roasted lemon cauli and cinnamon roasted sprouts (they work!), crispy sumac spiced kalettes, creamy avocado, fresh salad leaves, crunchy roasted smoked paprika chick peas and pumpkin seeds complimented with sweet pomegranate seeds and juicy dried goldenberries. That was a mouthful!
