The Vegan Migas made with tofu scramble, soy chorizo, cashew cheese, avocado salsa verde, pinto beans and crispy tortilla slices. This was mouthwatering DELICIOUS. I still prefer the Vegan Eggs, but the cashew cheese and soy chorizo were amazing together. 🌱

Turmeric is anti-inflammatory and chemoprotective (cancer-protecting). Chemoprotective agents are divided into groups, based on the stage of cancer development they target - carcinogen blockers and antioxidants prevent the initial triggering of DNA mutation, antiproliferatives prevent tumors from growing in size and spreading. Turmeric is special in that it has been shown to exert effects from each of these 3 groups, at least in the lab.
To see if the turmeric we eat is actually absorbed and exerts an effect in our body, researchers commanded some participants in a study to eat turmeric for a week, some participants to eat other spices for a week, and some not to. They then dripped the plasma (liquid part of the blood) onto white blood cells that had been exposed to oxidized cholesterol (as they would after someone has had a nice meaty meal), as this would cause an inflammatory response (as it would in the blood vessels). They then measured the amount of tumor necrosis factor (TNF - an inflammatory cytokine released by white blood cells) released, as a measure of inflammation.
The blood from those that had eaten turmeric daily was able to significantly dampen the inflammatory response.
The great thing about turmeric is that is hardly has a flavor - so add it to curries, oats (like I’ve done in the picture above), soups etc. 💛

- top w/ chicken, kalamata olives, feta, fresh basil & balsamic reduction
These flavors pop & took less than 30 min to prepare

🐷 katsu enveloped in egg batter over perfectly cooked rice 🍚 - now that’s what I call a proper lunch 👍 The pork loin was crispy yet tender, while the cracked egg gave the dish enough moisture. Best part was the rice on the bottom - it soaked up all that delicious juice!
