ROASTED VEGGIES WITH CORNBREAD CRUMBLE.
Healthy roasted vegetables make a great side dish to any seasonal dinner, and this easy recipe for Roasted Veggies with Cornbread Crumble is perfect for a chilly night or Thanksgiving..
2 carrots, diced
1 cup butternut squash, cubed
1 cup green beans
1 zucchini, diced
1 cup mushrooms, sliced
1/2 cup red kidney beans, cooked
1 cup kale
1 cup cornbread, crumbled
3 garlic cloves, minced
1 1/2 tbsp olive oil
1/4 tsp dried thyme
1/4 tsp dried oregano
sea salt and freshly ground black pepper..
Pre-heat oven to 375ºF. Steam the carrots, butternut squash and green beans for about 10-15 minutes or until tender..
Transfer the steamed vegetables to a big bowl, add zucchini, mushrooms, beans, and kale, drizzle 1 tablespoon olive oil on top and season with 1 garlic clove, thyme, oregano, salt, and pepper to taste. Toss..
In a separate bowl, mix the cornbread crumbs with the remaining garlic cloves and olive oil.
Transfer vegetables to a baking pan, sprinkle cornbread crumbs on top and bake in the oven for a total of 10-15 minutes or until golden brown. Serve and enjoy!

The husband made tonight’s simple dinner of scrambled eggs + spinach, frozen steamed broccoli with hot sauce, and homemade baked crispy breakfast potatoes (the secret is to boil them with baking soda before roasting), plus some @number1sons
➰Poulet Yassa / Chicken Yassa
A Senegalese dish, also popular in other West African countries made with marinated chicken with onions and Dijon mustard. I like to make mine with olives but it’s optional.
Yassa can be served with white rice, vermicelli, couscous, fries or attieke (a side dish made from cassava).
💡 Did you know that blackberries are not true berries. Each bump on blackberry is a minuscule fruit or a drupelet (a fruit with a soft outside & a single seed inside).

Happy Sunday! 💜 I’m spending the day getting chores and errands done, mostly meal prepping for the week 💃🏼 I love cooking but over the past month I haven’t really been all that inspired in the kitchen when I get home from work, leading to me eating more takeout food than I’d like to admit 😅 I think it’s because it’s dark by 5pm and I don’t really feel like doing anything other than hibernating when I get home in the evening 🤷🏼♀️ I have always meal prepped my lunches on sundays but today I decided to also prep my dinners for the week so I’m not tempted to order pizza when I have a fridge full of food 💪🏼 Anyone else spend their Sunday’s meal prepping? .
I made up this big happy salad for my lunch today and it was seriously soooo delicious 😍 I used the last of my prepped Brussels sprouts from last week, half a red pepper, some black beans, half an avocado topped with red pepper flakes, my fave chilli lime roasted chick peas, pumpkin seeds, and cilantro avocado dressing 🥰✅ I’ve always said the key to a good salad is lots of variety and this is definitely enough variety to keep me satisfied 🙌🏻 Hope everyone is having a great day!! 💜💜
