I'm from Oklahoma, so any dish that involves biscuits gets my heart pumping 😋
The shortcake biscuits featured here are gluten-free and just sweetened a tad with a sprinkling of turbinado sugar on top. Sandwiched between the halves of the biscuits are macerated sliced strawberries and lightly sweetened whipped cream. Even with the biscuits, these make for a delicate summer treat 🍓
Gluten-free Shortcake Biscuits
320g gluten-free all-purpose flour blend
8g xanthan gum
5g fine sea salt
10g baking powder
30g granulated sugar
6 tablespoons of really cold cubed butter (I cut into 1cm chunks/cubes)
3/4 cup cold buttermilk
1. In a medium-large bowl, whisk together the dry ingredients--flour, xanthan gum, salt, baking powder, and sugar--until thoroughly mixed.
2. Dump in the butter. Quickly cut the cold butter into the dry ingredients with a pastry blender or your fingers (I use my fingers since I hate cleaning the blender). Stop once you get course cornmeal consistency with smattering of petite pea sized chunks.
3. Slowly stir in the buttermilk. You want to get a shaggy, cohesive dough. I used the whole 3/4 cup since it's dry here, but you might not need it all.
4. Move the dough to a lightly floured surface and lightly knead it a few times. Pat the dough into a 1.5 inch thick square. Cut the dough into 9 equal squares with a sharp knife. Place the squares on a baking sheet lined with parchment.
5. Brush the tops of the squares with buttermilk. Place into an oven preheated to 425F and bake for about 15 minutes, until the tops are golden. It is best served warm

Making poached eggs is not as difficult as you think. Add 200 ml vinegar to 1,500 ml water and then add enough salt to balance the taste. Wait till the water started to boil, then slip the (freshest) egg (you can find ) gently into the water, give it a swirl and wait for few minutes for the egg to be cooked to your liking.
In spite of the very tight schedule this weekend, the girls and I managed to have our breakfast together on Sunday morning. They’d made really nice poached eggs even thought they were not confident at first. We had them with cream cheese, smoked salmon on bagel and salsa on a side. There was no time for whipping up the Hollandaise sauce, so the Brown butter with cayenne and lime was just perfect for the occasion.
Threw together a bunch of random veggies/leftovers in my fridge for an on-the-go lunch today.. Can’t ever go wrong with a salad bowl for lunch😄 also featuring my FAV dressing by @panerabread

Park City Culinary Institute’s Salt Lake location is hosting seasonal chef demonstrations and tasting dinners throughout the summer. Chef Jordan Miller, recently invited to cook at the James Beard Foundation, developed a tasting menu that showcased some of the very best that Utah has to offer: raw milk butter from West Jordan, local trout, pine nuts, pepperweed, dandelion, and Morgan Valley lamb.
