Vegan Lentil Tostadas 🌱🌮🥑
❀ ❀ ❀ ❀ ❀ ❀ ❀ ❀ ❀ RECIPE❀ ❀ ❀ ❀ ❀ ❀ ❀ ❀ *1 can lentils or 2 cups homemade.
*1 TBS minced garlic
*cumin + chili powder
*1 can diced tomatoes
*1/4c chopped walnuts ~texture~
*handful spinach or mixed greens
*chopped green onions
*corn tortillas -warm oil then toast walnuts, green onion, garlic for a couple mins. Throw in cumin + chili powder. How much you add depends on preference. Toast another couple mins.
-add lentils and tomatoes and simmer for 10 mins.
-while that simmers, toast corn tortillas. I dip mine in oil then broil for 3 mins each side.
-add greens too lentils and cook another 5 mins.
-assemble tostadas and add toppings of choice . Suggestions: guac, salsa, more green onion, cilantro, sour cream.
I got this recipe from a video my MIL sent me. I’ve never cooked with lentils before so this was something different in the best way! Happy eating!! ♡ em

Friends, good weather, a swimming pool… The only way to make this plan even better is to take this Boiled eggs with green and black olives tartare. Everyone will ask you to try it! #OlivesFromSpain
***Ingredients to serve 4***.
· 4 eggs.
· 6 green olives.
· 6 black olives.
· 1 slice of white bread.
· Virgin olive oil.
· Salt and pepper.
· Sherry vinegar.
. ***Method*** .
Boil the eggs in salted water with a few drops of vinegar for four minutes. Chop the Olives and mix with 2 spoonfuls of oil and black pepper. Cut the bread into small cubes and fry until golden, drain on kitchen paper and sprinkle with a few drops of vinegar.
Presentation: Place the eggs in egg cups or short glasses, open and remove the top part. Season with salt and pepper. Fill with the fried bread and olive tartare. Sprinkle with finely chopped olives.
