Summertime cucumber rolls. Peel cucumber into ribbons with a vegetable peeler. Place between sheets of paper towel to dry them out. Soften a few tablespoons of goat cheese and mix with finely diced herbs (basil, chives, cilantro) and spread thinly over the cucumber ribbons. At one end (where you will begin rolling) add small fry cuts of radishes, the tops of asparagus, and pea sprouts.

I spent this weekend eating lots of amazing food.
I spent time with my family driving to France to see the Tour de France zoom past.
We ate packed rolls for breakfast, shared packets of fruit pastilles, drank tea at motorway services, and snacked of on fruit.
We sat in a French town eating lunch.
We were served a delicious home cooked meal and wine with a starter, as well as a cheese course and lemon sorbet pudding.
We ate fresh French bakery pastries for Sunday breakfast and drank orange juice.
We sat in a sunny garden for lunch eating bread, roasted potatoes, more cheese, meats, salad and finished it with fruit salad and creme fraiche.
On our way home we ate baguettes in the eurotunnel car park filled with leftovers of cheese or sausage plus chocolate biscuits from the French supermarket.
I am extremely grateful for the weekend of eating. And I am aware of the privileged position I am in to have had this opportunity.
I feel nourished. And yes I ate more than I normally do by myself. Yes I sat in the car for hours and didn't move. And no this week I will not be changing what I eat.
Food is pleasurable.
Food is flexible.
Food is sociable.
Food is nourishing.
Food is satisfying.
Food is not something to deprive yourself of.
Food is not to be over analysed.
Food is meant to be enjoyed.
