This no-bake, high-protein Rainbow Breakfast Brownie Cake made with sweet potato and my favourite Tahini Date Caramel. Topped with coconut, yogurt, and fruit!

RAINBOW BREAKFAST BROWNIE CAKE:
1 cup cocoa powder
1 cup coconut flour
2 scoops @noudderprotein
chocolate 🌱 protein powder
1 cup sweet potato, mashed
1/2 cup tahini
1/2 cup pecan peanut butter
1/2 Tahini Date Caramel*
3/4 cup maple syrup (or to taste)
Optional: chopped dark chocolate, chopped pecans
vanilla coconut yogurt
*Tahini Date Caramel:
6 medjool dates, soaked 5 minutes
3 tbsp tahini
1 tbsp almond milk
1/4 tsp sea salt
Blend Tahini Date Caramel ingredients in your #vitamix
until smooth. Combine Brownie Cake dry ingredients, then add wet ingredients. Press dough into a parchment-lined cake pan and refrigerate. Divide coconut yogurt in 6 and colour with powders. Spread the coconut yogurt on the Brownie Cake to create a rainbow pinwheel and top with fruit. ENJOY! .
