Tried the miso pork ramen and Asian fried FreeBird chicken nuggets at Chik'n & Mi. Got the ramen spicy which just put the dish over the top. Hands down the best ramen I've ever had in my life. The flavor and ingredients just meshed perfectly. The only thing I would ask for is more mushroom because I love that stuff. On the other hand, the chicken, which I assume they are known for, was okay. I got the sweet soy sauce which is good. It's a bit more subtle and not as in your face as Korean fried chicken which is fine but the crust didn't have that same eggshell crunch or chewiness of Korean fried chicken. Maybe it's because I finished the ramen first and it got a little soggy? Might just be what they use to coat the chicken. The meat itself is fantastic, tastes like quality chicken but I think it could be better with thigh meat instead of breast for juicier nuggets. I'm still thinking about that ramen though...

coming in hot with this burger 🍔🍔 It’s called “the son of a fighting cock” and it sure was good. It was filled with a massive hunk of southern fried chicken, bacon, cheese, slaw and special sauces. I would rate it 8/10 it was a decent size overall good burst of flavour but the fried chicken tasted a little burnt but the special sauces held it all together. Other than that I would recommend giving it a try burger was on my table within 5mins of ordering

Fried chicken seitan
I’ve done fried mushrooms-yummy! But I still have a craving for fried chicken - not the meat but the crunch, chewy and salty-savory flavor. This is pretty darn close!
1cup vital wheat gluten
1/4cup besan flour
1cup chopped chickpea tofu
1/2cup almond milk
2tsp poultry season
1tsp onion powder
1tsp garlic powder
Add to blender and blend until smooth
Mix dry and wet ingredients. Put dough ball in stand mixer with the dough hook and knead for 5mins.
Let rest for 10mins
* 1 cup nutritional yeast
* 2 tbsp onion powder (not onion salt)
* 2 tsp garlic powder
* 1 tsp sea salt
* 3tsp poultry seasoning * 1 tsp dried parsley
* 1Tb ground mustard
* 1/4 tsp turmeric
* 1/8 tsp celery seed
To make simmering broth
Add 4cups of water to saucepan. 2-3Tb of chicken broth, 1tsp of miso, 3-4 bay leaves, pinch of red pepper flakes, salt and pepper to taste. Bring to simmer
Roll setain out into small chicken size pieces. Make sure to flatten out and ensure there are no air bubbles.
Add pieces to simmering broth and simmer for 35mins. Remove from heat - allow to cool and place in fridge up to one hour or overnight.
Drain seitan and pat dry
1 flax egg - stir 1Tb flaxmeal and 2 1/2Tb water - let sit for 5min
1/4cup hot sauce (franks red hot)
6oz plant milk
1tsp Old Bay
1 1/2Tb mustard
1 1/2cup of spelt and besan flour mix
1Tb Old Bay
1tsp black pepper
1tsp garlic powder
1tsp onion powder
1tsp cayenne pepper
Coat chicken pieces with wet mix and then dry mix. Set on a drying rack for 20mins. Repeat and fry.
