That moment when you create crispy sweet potatoes with vegan cheese sauce 🧀💛✨. This sauce is good on everything-tacos, pasta, stir fry, burrito bowls, fries 👌🏼. If you can’t have dairy and miss yo nacho cheese dip, this recipe is for you! Recipe below 👩🏼🍳.
Vegan Butternut Squash Cheese Sauce:
•3 cups cubed butternut squash
•32 oz vegetable broth or water (@kettleandfire
bone broth is also great in this, but it would not be vegan)
•1 medium onion, chopped
•1/4 cup reserved cooking liquid (from cooking the squash/onions)
•1/2 cup cashews, soaked in hot water for 30 min then drained
•1/2 cup nutritional yeast
•1 tsp garlic powder
•1/4 tsp smoked paprika
•2 Tbsp coconut aminos
•1 tsp Dijon mustard
•1/2 tsp black pepper
•2 tsp sea salt
•2 Tbsp lemon juice
•1 cup Native Foods canned coconut milk (I used a blend of full fat and reduced fat)
Directions: Boil squash and onions in broth or water until tender. Reserve 1/2 cup of the liquid then drain, add squash/onion to a blender, and blend with the remaining ingredients.

After shopping and walking all morning we had a break for some much needed Belgian frites. Esther took me to one of the best friteries in the city and they did not disappoint. I tried a Belgian specialty sauce called Andalouse and ate every last piece. I had frites 4 times on this trip and these were the second best #importantinfo
The smoke on this hickory burger is something. Bonus points for the crisp on the fries and the inner bun surface areas, where bread meets patty. @theapplepan
