Today marks 5 months since I started following the ketogenic diet!! 🙌🎉One thing that was obvious early on was that keto doesn't even feel like a diet, which is why I love it and find it to be very sustainable long term.
I thought it would be fun to share 5 things I love about keto!! !
⭐️ I am in control of what I eat because my carb cravings are gone. Before keto I had the biggest sweet tooth, but now I feel so satisfied eating all the savory foods. I don't miss sugar or those insane cravings that come with it.
⭐️ I no longer experience hunger like I did when I was a "sugar burner." My body is fat adapted, so my body will burn body fat for fuel when I haven't eaten. Hunger shows up in a different way now, it's like I feel distracted when I need to eat rather than experncing "hunger pains."
⭐️ I have so much energy! It's hard to explain, but I feel like I'm on some type of energy high most of the time. I find I need less sleep and the sleep I do get is very restful. This is something that started in the last month, so it was a welcomed change.
⭐️ I don't feel like I'm on a "diet." Most diets or meal plans that promise a quick fix leave you starving and unsatisfied which is why you usually fail. Keto is the opposite because the food is so delicious and satisfying. I've had so much fun learning to make low carb versions of recipes. Guess what, most things can be made low carb!
⭐️ I'm thankful for keto and this community because I have met so many inspiring people over the last 5 months!! Weightloss is just an added benefit to a long list of why keto is the best way to eat. I was skeptical when I started this journey 5 months ago, but now I get it. I've never felt better. Those ketones are magical I tall ya! 🦄

Keto blueberry muffins! Husband and kid approved! 🤤
2c Almond flour
1/2c sugar free sweetener (I used stevia)
2tsp baking powder
1/4c melted butter
1/4c unsweetened almond milk
3 eggs beaten
1tsp vanilla extract
Combine dry ingredients. In a separate bowl melt the butter. Add almond milk, vanilla and eggs to melted butter and beat together. Add wet ingredients to dry ingredients and gently mix. Be careful not to over mix. Gently add in blueberries. Pour into muffin cups and fill 1/2 way. Bake at 350 for about 20mins or until golden brown. Remove promptly from muffin tin and cool on wire rack. Muffins will firm up once cool.

post his ..but last minute change up. Greek Pizza instead. .
I wanted to try my marinated eggplant and red pepper from Trader Joe’s so figured that would be perfect on this. The pizza was crispy (toasted Lavish bread) crunchy and so fresh from the cucumbers. I’ll definitely be making it again.
Toppings: garlic and oil with mozzarella cheese. Then marinated eggplant and red pepper. Red onion, Greek marinated chicken, feta, dill, garlic sauce and cucumbers. I wish I had some Greek olives👌🏼I added the slightest drizzle of balsamic at the end.
