Veggies for dinner 🙌🏼 since winter is around the corner I try to fuel my body with lots of healthy greens and good fats like hummus 🌱Fried egg | baby spinach | beet root | grained cream cheese | fennel | tomato | hemp seeds | orange, olive oil dressing | baby carrots | hummus
Roasted kabocha squash,cauliflower and broccoli with Avocado Tahini Drizzle
Makes 8 servings
Per serving with one tablespoon tahini drizzle
4 cups cauliflower, cut into florets
3 cups kabocha squash, cubed
1 cup broccoli florets
4 teaspoons extra virgin olive oil
2 teaspoons paprika
2 teaspoon cumin
1 teaspoon garlic powder
For the Avocado Tahini Drizzle:
1 1/2 ounces avocado
2 tablespoons tahini
1 teaspoon sesame oil
3 tablespoons olive oil
4 tablespoons water
1 tablespoon lime juice
1/2 teaspoon salt
Preheat oven to 400 degrees F.
In a large bowl toss cubed squash, cauliflower and broccoli florets, salt , paprika,garlic powder cumin and 2 tablespoon olive oil.
Bake on aluminum foiled lined baking sheet in single layer for 25-35 minutes or until soft and cooked through.
In a food processor combine the ingredients for the avocado tahini drizzle and process until smooth (adding more water if needed to reach desired consistency)

One big bowl of chocolate mocha chickpea cookie dough 🙃🙌🏼 Threw the following in the vitamix, then chilled and topped with raw cocoa nibs.
2ish cups of chickpeas, 1/2 cup of thick date paste (blended softened dates + warm water), 1 spoonful of vanilla whole food plant protein, dark decaf coffee, almond milk, cocao powder, oat flour and salt. I pretty much eyeball the quantities of each ingredient, taste, adjust, and repeat until it’s just right! 😉🍫 Thick and smooth chocolate goodness 😍

Several years before starting my journey I simply existed. My day to day focus was doing as little as possible. I was miserable and a prisoner in my own body. I sent the photo on the left to my husband a few moments ago and he sent back heart eyes 😍 My immediate response was ' How?' How could he love that girl that didn't love herself? Truth is, he has always loved me.....I stopped loving myself, I stopped giving myself the basic care and respect that I try to show others, and that every person deserves—that I deserve. Too often, I haven’t treated myself with the respect that I deserve.
My health has suffered as a result of not taking care of myself. Hitting over 400 pounds was the final straw. Losing the weight did not ensure self care and self love. There was an entire mental shift that had to take place and it took time and dedication. I’ve had to go through mental health counseling to get to where I'm at today. I'm the healthiest, both physically and mentally, and happier than ever ❤

6 large apples (3 Granny Smith + 3 sweet apples)
2 packages Love Beets Organic Cooked Beets
2 tablespoons fresh squeezed lemon juice
1/2 cup cane sugar
1/3 cup water
3 tablespoons arrowroot powder
2 teaspoons ground cinnamon
1 teaspoon vanilla extract
1/2 teaspoon ground ginger
1/8 teaspoon nutmeg
1 3/4 cup rolled oats
1 cup almond flour
1 cup brown sugar
3/4 cup coconut oil, melted
1/2 cup walnuts, chopped
1 1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon Himalayan salt
1. Preheat oven to 350 degrees °F.
2. Peel half of the apples, quarter all, and remove their cores.
3. Cut apples lengthwise into very thin slices and place into large mixing bowl.
4. Cut beets into small cubes, add them and all remaining filling ingredients to the large mixing bowl and toss until well combined.
5. Scoop filling mixture into a 9x13 oven safe pan.
6. In a large bowl mix all topping ingredients together until thoroughly combined.
7. Evenly spread topping mixture over filling layer.
8. Bake for 45-50 minutes, until the edges start boiling and the topping is golden brown.
9. After baking, let sit for 30 - 45 minutes to cool.

ROASTED SQUASH W/ QUINOA
slice 1 acorn squash in half, rub with olive oil & sprinkle with sea salt. Place on pan and roast for 35 minutes at 425. While cooking, cook quinoa (bring 1/2 C quinoa + 1 C water + 1 tsp sea salt to a boil, then lower heat and let simmer until all water is soaked up). Add 1/4 C craisins + 1/4 C sliced almonds + 1/4 C pumpkin vinaigrette from @aldiusa
Remove ready and roasted squash from oven, fill with mixture and done!

One of my new fav batch lunches. So quick and easy to make this yummy colourful mixed bean salad. This makes 4 lunches 🍋🥗🧂🥫 🌶 .
1 x yellow pepper, 1 x green pepper, 1 x orange / red pepper, 1 x can sweet corn, 1 x red onion, 3 x cans of mixed beans, 1 x lemon juice, 100ml of olive oil and 100ml white wine vinegar, 1/2 teaspoon chilli powder, 1/2 tablespoon of cumin, 2 tablespoons of sugar to counter act the acidic flavour. And of course season it! .

and these Sage Brown Butter Yams were the jam. ⚖️You might think I’m crazy for saying these are “lightened up” when butter is in the title, but for 5 lbs of potatoes I only used a few tablespoons! 👌🏼They’re so simple (3 ingredients), it’s a refreshing rival to the heavier dishes in the line-up. 🙅🏻♀️Also, I ditched the traditional marmalade bc why did that have to happen in the first place??! 💡Learning: Usually my trick with mashed potatoes is boiling then ricing, but the texture was a bit too soft. #thanksgivingday
I plan to rice half, and hand mash the other with skins for a bit more chew.
