Have you heard of cheese cultures or starter cultures? The first stage of cheesemaking is to ripen the milk using starter cultures. During this process lactose (milk sugar) is slowly converted into lactic acid (which give you the flavor and texture of cheese). Most (if not all) cultures come from Europe - they arrive frozen and activate when added to the milk.
Every cheesemakers plays with different cultures to develop their own distinct flavor.

But did you know that Halloween’s origins date back to the ancient Celtic festival of Samhain? (Hollow’s Eve)
The Celts, who lived in the area that is now Ireland, the United Kingdom and northern France, celebrated their new years on November 1rst.
This day marked the end of summer and the harvest but also the beginning of the dark and cold winter.
That time of year that was often associated with human death.
Celts believed that on the night before October 31rst, there was no separation between the worlds of the living and the dead 💀
They celebrated Samhain,since it was believed that the ghosts of the dead returned to earth.
In addition to causing trouble and damaging crops, Celts thought that the presence of the otherworldly spirits made it easier for the Druids, or Celtic priests, to make predictions about the future.
To commemorate the event, Druids built huge sacred bonfires,wore costumes and attempted to tell each other’s fortunes.

Fun Facts: The three most popular birds in Cobble Hill (as with nearly every other North American town/city) are not native to the continent. The sparrow and starling were both introduced to NYC in the late 1800s, largely with the help of the American Acclimatization Society. It was their goal to introduce all types of European flora & fauna to America. It’s rumored they brought both bird species as part of a goal to populate America with every bird mentioned in Shakespeare’s works. Pigeons on the other hand have called America home since at least the 1600s and were brought to the country for a number of reasons, including largely as a food source.
Stubbs (April 12, 1997 – July 21, 2017) was a cat who was the mayor of Talkeetna, Alaskafrom July 1997 until his death.
Stubbs was described as a tourist attraction, having been flooded with cards and letters, and drawing 30 to 40 tourists each day (most of whom were en route to other Alaska destinations, such as Denali) who hoped to meet "the mayor". Stubbs's position was honorary, as the town is only a historic district.
Every afternoon, Stubbs went to a nearby restaurant and drank water laden with catnipout of a wineglass or margarita glass.
At least one opinion writer for the Alaska Dispatch News insisted that the whole story was false, and that Talkeetna did not in fact have a cat mayor. Stubbs died on July 21, 2017, at the age of 20 years and 3 months.
