I’ve had a crappy day. It started with being abused by some parasitic reposter for simply asking them that if they want to use my free photos (which everyone is btw) just please not to butcher them with random dayglow filters. Wasn’t a highlight really to be confronted with the dregs of humanity so early in the morning. . And then work was a horror today too. . So I’m going to my happy place and posting an iPhone shot from a 20 mins lunch I grabbed between meetings in central London a few weeks back. It was one of the best things I’ve eaten in recent memory. Beyond all the wonderful washoku that's available in Tokyo, I often hit up places that fill a fairly large culinary void in Hiroshima. So when the Singaporean chicken rice chain, Wee Nam Kee was recommended to me, I made a plan to have that be my final meal of the trip since it's a hop, skip and jump from Shinagawa station, where I can catch the bullet train back home. I ate Hainanese chicken rice pretty regularly back in NYC at my favorite Malaysian restaurant in Elmhurst Queens (arguably the best version in the city back then). So it was with great anticipation that I approached the restaurant located in an office park and high rise jungle to revisit a familiar flavor. While the chicken rice is the shop specialty, the noodles were even more highly recommended since it's a flavor and texture that's hard to find in Japan. Rather his food evinced a mixture of joy amidst fireworks on the palate as well as the feeling of incredulity as to how the buah keluak could taste so velvety and smooth unlike any I’ve had before...was also blown away by the homemade Sago Gula Melaka ( of the orang asli variety )

The levels of intensity just did not tally with the fleshly amount of crustacea in sight. The ingredients for this dish include 1. virgin mud crab and roe 2. male mud crab (with meat extracted) 3. egg white 4. salted duck egg yolk 5. thousand year egg 6. ikura 7. scallions. _ 1 and 2 and 3 are often used together, sometimes with 4. 3,4,5 are also often combined, usually steamed as terrine or add to soup with vegetables. 6 is now occasionally added to 3-based dish as a new trendy take. All combinations almost always come with 7. Get it? 😛 _ But it is not so common to have all these together. The balance control will be key. - And the little plate with brownish “paste” with the crab is the roe of virgin mud crab. When we were led to the kitchen, the whole kitchen team was waiting for us, and a long table was set up with crab shaped plates. Plus it’ll hold your guests over while you put finishing touches on your turkey before she’s presented! *Pumpkin Soup Recipe* - 1 can of pumpkin purée (make sure you don’t get pumpkin pie filling) - 3 c Chicken broth or vegetable stock - 1 onion finely chopped - 1 T oil - 1 t ginger finely chopped - 1 t garlic finely chopped - Salt to taste - 1/4 t cayenne pepper - 1 t coconut milk powder (optional * In a pot heat oil. Once hot add onions, ginger, and garlic and sautée until onions become translucent. * Add in chicken broth and pumpkin purée and mix. Add in your cayenne pepper and coconut milk powder and bring to a simmer and turn off heat. * With a hand blender or regular blender, blend until smooth. *CAUTION* The soup is very hot so please be careful! * Pour the soup through a sieve for an extra smooth soup.
