Oysters with Brown Sugar - Chipolte Butter from @bonappetitmag was to die for. We had a seafood feast this afternoon when we finished the last of the oysters and made calamari on the side (plus an IPA!) * * The butter had brown sugar, bourbon and chipolte chile in adobo sauce and it was so good I dipped calamari in the leftover and then licked my fingers clean. * * Thanks again for the fresh and local oysters @pleasant_bay_oysters

Yesterday after the @cobblestonefarmersmarket , I motored down curvy backroads towards Lewisville, four-way flashers on and cars whizzing around me. The van was filled with vintage linens, Market props, empty food bins and...this wedding cake. • I’m happy to report the cake arrived intact, was carried up a steep flight of back porch steps and deposited on snowy linens for an intimate wedding dinner. It’s been a dramatic week in the political world, so it was a real treat to be taken out on Friday night for (several) drinks and delicious tapas. Our favourite dishes were hake with piquillo peppers, tomato salad, seafood paella and grilled red prawns. And, of course, *those* aubergine fries with molasses (which you must order if you go!).

Cutting down sugar in my desserts and bakes isn’t easy. I try and I hope to eventually get better. Cutting down on carbs isn’t as bad but to really maintain a healthy balance, balancing and reducing sugar intake matters.. . These days, I try to minimize the carbs that I take at lunch otherwise, my brain doesn’t function as well and I feel lethargic. I don’t intend to go keto- I just eat more veggies, protein and lessen my intake of carbs and sugars.. . For a healthy breakfast start or midday treat, these no bake hazelnut cookies that I adapted slightly from @beamingbaker is great.. . HAZELNUT OATMEAL COOKIES.. . Ingredients- 1 Cup natural unsweetened hazelnut butter ( I use @renew.sg ‘s 180g jar of hazelnut butter) ¼C dark maple syrup 2C rolled oats.. . 1. Whisk the nut butter and maple syrup until well mixed. If mixture is too runny, heat in microwave for 20 secs till warm.. . 2. Add oats and mix well.. . 3. Use a teaspoon scoop out balls of mixture and drop onto a baking sheet. Flatten each with a fork.. . 4. Chill and set in freezer for about 20mins. Keep in an air tight container and store in the fridge.. . Love how chewy and tasty these are. I guess if you don’t care about the sugar, you can use Nutella. I don’t eat Nutella as it’s at least ⅓ refined sugars and barely any hazelnuts. I also did the original peanut butter version but prefer the hazelnut. Peanut butter (I use Pic’s) is very thick and intense in flavors. I’ll try this with other nut butters like cashew and almond. Ash x • INGREDIENTS • 100ml extra virgin olive oil 3 large eggs 1 1/2 cups coconut sugar (or raw / brown sugar) 2 cups almond meal (or freshly ground almonds in a food processor) 1/2 cup buckwheat flour (or another flour of your choice - plain, spelt, or whole meal - if not worried about gluten) 1 tsp baking powder 1 tbs cinnamon 1 tsp all spice 1/2 tsp sea salt 1/2 tsp bi carb soda (baking soda) 1 tsp apple cider vinegar 2 1/2 cups grated carrot (about 3 carrots) 3/4 cup walnuts, roughly chopped 1/3 cup almond milk (or milk of your choice) • METHOD • Pre-heat oven to 180C / 350F and line a loaf tin (23cm x 13cm / 9 inches x 5 1/2 inches) with baking paper, set aside. In a large mixing bowl whisk the olive oil, eggs, and sugar until well combined. Add the rest of the ingredients and fold together to combine. Pour the mixture into the pre-prepared tin and bake in the oven for 1 hour. Once cooked remove from the oven and allow to cool before turning the loaf out. You can serve this loaf warm, fresh from the oven, or allow to cool completely in the fridge overnight. Top with a thick layer of coconut yoghurt (I’ve used as it has a delicious thick texture) or super thick natural yogurt or mascarpone. Top with carrot ribbons, walnuts, pepitas, fresh rosemary sprigs, and a generous drizzle of honey or pure maple. Another hot day, another salad. This time a bit of a fridge raid which actually turned out quite well! Little gem lettuce, sun dried tomatoes, olives, avocado, egg and some leftover baguette that I soaked in the sun dried tomato oil. Gathering around the dinner table with friends doesn’t have to be complicated. Many people have said to me, ‘’I am not a cook, so having people over for dinner intimidates me.’’ • Let’s just kick that intimidation factor to the curb. Even if you’re not a fabulous cook, you can host a simple dinner party in your home. One of my favorite spur-of-the-moment menus is a charcuterie board topped with a variety of fruits, meats, cheeses and olives. Add some crusty bread with olive oil for dipping and mix up a simple bowl of pasta salad filled with summer vegetables and you’re all set. • This colorful spread was thrown together in half an hour with friends on our rooftop. We sipped Rosé and enjoyed each other’s company with meaningful conversation as we watched the sun set over the city. #revivingthedinnertable

Check the Bio! veggie loaded pasta!! 🤗🥦 zucchini, broccoli, kale & spinach, with lots of garlic, chili, lemon zest & extra virgin olive oil👌🏻 and it all comes together in about 15-20 minutes! quick + delicious! 🙌🏻 if you're interested I've included the rough recipe below... • INGREDIENTS • 4 cloves garlic, crushed or finely chopped (more or less depending on your taste - I like a lot so sometimes add more) A generous pinch of chili flakes Extra virgin olive oil 2 zucchini, sliced in half lengthways and then thinly sliced into half rounds 1 head of broccoli, roughly chopped 3 cups roughly chopped Tuscan kale or baby spinach (or a mix of both) Sea salt Zest of one lemon 190g pasta (I’ve used rigatoni) • METHOD • Cook the pasta as per packet instructions. While the pasta is cooking, in a large saucepan add about 1 tbs olive oil, the garlic and chili, and sauté for 1-2 minutes. Add the broccoli, kale and spinach and sauté on medium heat until the veggies are bright green. Add the thinly sliced zucchini and sauté for a further minute or two (the veggies will still be nice and crisp - if you like them softer keep cooking for a little while longer). Once the pasta is cooked drain and then add to the pan of cooked veggies. Add the lemon zest, sea salt to taste, and a generous drizzle of olive oil. If you like/want cheese - top with a little finely grated parmigiano reggiano or pecorino (Mike also likes a little goats cheese) 👌🏻 Serve + enjoy! veggie loaded pasta!! 🤗🥦 zucchini, broccoli, kale & spinach, with lots of garlic, chili, lemon zest & extra virgin olive oil👌🏻 and it all comes together in about 15-20 minutes! quick + delicious! 🙌🏻 if you're interested I've included the rough recipe below... • INGREDIENTS • 4 cloves garlic, crushed or finely chopped (more or less depending on your taste - I like a lot so sometimes add more) A generous pinch of chili flakes Extra virgin olive oil 2 zucchini, sliced in half lengthways and then thinly sliced into half rounds 1 head of broccoli, roughly chopped 3 cups roughly chopped Tuscan kale or baby spinach (or a mix of both) Sea salt Zest of one lemon 190g pasta (I’ve used rigatoni) • METHOD • Cook the pasta as per packet instructions. While the pasta is cooking, in a large saucepan add about 1 tbs olive oil, the garlic and chili, and sauté for 1-2 minutes. Add the broccoli, kale and spinach and sauté on medium heat until the veggies are bright green. Add the thinly sliced zucchini and sauté for a further minute or two (the veggies will still be nice and crisp - if you like them softer keep cooking for a little while longer). Once the pasta is cooked drain and then add to the pan of cooked veggies. Add the lemon zest, sea salt to taste, and a generous drizzle of olive oil. If you like/want cheese - top with a little finely grated parmigiano reggiano or pecorino (Mike also likes a little goats cheese) 👌🏻 Serve + enjoy!
