Most of my Canadian friends know exactly what this soup is and my American friends have never heard of such a thing! SO! Here I am a happy bridge in the middle of the two countries I love🥰. We call this soup Borscht (beet soup in Ukrainian I think?). Growing up in California, I was not familiar with this until I married a Canadian and I avoided eating it for the first 4 or 5 times it was offered by @mamalinda
before I finally tried it and learned that it is DELICIOUS!!! Anyways, here’s how I make it (roughly, since you know I’m not much of a recipe gal) •sauté chopped onions, celery, carrots, cabbage and beets in oil (I use coconut oil)•add fresh chopped dill, seasonings such as salt, garlic powder, and I have an “all seasoning” mix• add broth, I prefer bone broth for borscht but any will do •add two bay leaves and simmer• add more seasoning to taste• serve bowls with a dollop of sour cream (or plain yogurt) and a sprinkle of dill. 👉🏻👉🏻Sourdough and salad on the side! Pro tip: don’t be alarmed when everyone is peeing pink... this is a fun side effect of enjoying beets☺️!
