BRING ON THE CARNE!!! (And avocado!)
My favorite part of my meal plan is that I don't have to avoid or forget some of my of my favorite things! Tonight I just wanted something that reminded me of home... so it's taco time! Some carne, salsa, avocado, plain Greek yogurt, and a sprinkle of cheese... bring it on!

I finally busted out the #zoodler tonight! I made my own sauce with sautéed onion, garlic, red bell pepper, fresh tomato and veggie stock. I blended that up, mixed it with browned chicken sausage and #zoodles and some parmesan. Yum. #girlswhocook#fridaydinner
today’s lunch on my patio was in this incredible 70 degree weather in Denver. notice my nugget bear 🐶 lurching in the background hoping for a sweet potato to hit the floor. that face wins every time. •
Spinach & mandolin brussels w/ avo egg salad (4 hard boiled eggs, s/p, avocado, fresh dill, diced onion, lemon, evoo), sweet potato + broccolini sautéed in avo oil, cherry tomatoes, + kimchi on top. and the goodness doesn’t stop there, make sure to snag yourself a @healthade kombucha (my fave is ginger lemon) to help your gut health when all this crazy flu is running amuck nation wide. REMEMBER a huge portion of your immune system is in your GI tract.
🙌 TURKEY CHILI for the win! This is my favorite recipe to make no matter if it's winter or summer. Less than 30 minutes for prep, only takes 30 minutes to cook and it's healthy! Tzatziki almost automatically makes anything Greek to me. But at upwards of $5 a containers with a shelf life of ~1 week?? Not in my budget!! My Greek friend put me on to this life hack of dried dill ($5/bottle), Chobani ($1/cup), cucumber ($0.49), and lemon (3/$1). Add 1 tsp dry dill, grated cucumber, juice of 1/2 lemon, to Chobani. Mix and refrigerate for up to 4 days. Note: Chobani 2% tastes 10x better, and whole fat even better than that, but nonfat was all I had on hand and it still tastes good to me! 👅 #klpkitchen#itsdoneson#girlswhocook#girlswhoeat#mealprep#mealprepideas
