You can scroll through my tasting notes but I’ll just put the punchline up front - for the price this is a damn near perfect bottle of bourbon. •
Nose: There is only a subtle alcohol nip. I would expect higher at this proof. Instead you are greeted with fresh vanilla, warm caramel, pie crust, a light hint of worn leather, just a hint of alcohol sharpness. After adding water – more of the oak and sharpness come forward, but so does a bit of brown sugar & medicinal cherry.
Palate: A delicious chew, apple pie crust, cinnamon, brown sugar, a warm drizzle of caramel, & a subtle ginger/white pepper bite. The vanilla moves to the foreground with water along with a bit more ginger pop & a hint of boiled peanuts.
Finish: Here comes some of that vanilla from the nose, a bit of cherry, a drying oak influence, some pure dark chocolate/cacao, cinnamon, there is definitely a warming heat on the swallow – the only hint of its proof – but it is not overwhelming. Medium-long finish. When water is added there are some herbal notes that show up – sage, basil, fresh ground pepper, oak, allspice, & clove.
