Cherry and Cocoa Tart by @sweetcoconutdiaries

1/3 cup hazelnuts
2 tbsp ground almonds
1 tbsp raw cocoa powder
5 dried figs
1 tbsp maple syrup optional
Roast the hazelnuts for couple of minutes on a non stick dry pan tossing frequently. Just about enough to darken them very slightly. Pop the hazelnuts along all the other base ingredients into a food processor and pulse till they combine into a semi fine crumbs. Transfer onto your tart tin and form your base – I like to just take a small bowl with a flat bottom small enough to leave around 1 cm gap between the tart tin edges and press firmly to achieve a nice and even base (I than press it with my hand or a spoon to get the base into all the tin gaps. Pop into the freezer while you get your topping ready.
1/3 cup oat milk
4 tsp corn starch
1 tbsp coconut butter
2 tbsp lemon juice
2 tbsp agave syrup
Blend all in a food processor or a blender and transfer into a non stick pan. Cook on low medium heat constantly whisking to avoid any clumps. take off the heat the heat when the mixture thickens and let it cool for around 10 min whisking occasionally (this prevents the top of the custard from setting and forming clumps when transferring onto your base). Pour over the base and decorate – you can wait with the decorating till set. To set the tart you can pop it into the fridge for an hour and a half to two hours but I prefer 15-20min in a freezer! My sweet tooth is very impatient ! I hope you’ll enjoy it!

Trying a new light and fluffy paleo pancake recipe on for size. It’s a lot lighter than my go-to protein pancakes I make from scratch but it’s a lot more like the traditional glutenny pancakes I had growing up. This is my first time using a pre-mixed pancake recipe and I’m finding myself wanting to tweak it a bit to make it more “my-own”.⠀

At around 8 last night I got a random craving for banana bread. I haven't had any in about 2 years so I guess it was time. I figured since I'd just bought a bunch of bananas that morning, it was a perfect time to make banana bread. Naturally I took to Pinterest to find a recipe. I searched "gluten free banana bread" and decided to make the first recipe that came up. Luckily, I already had the flour used in the recipe so I didn't have to worry about converting the measurements. Score!! This recipe was super easy and turned out super delicious. For someone who has a past of not being a great baker, this was fool proof! The recipe called for chocolate chips but after tasting it, I've decided that if I make this again, I'd go with nuts instead of chocolate. I also added A LOT of cinnamon because in my opinion, everything is better with cinnamon
Here's the recipe⬇️⬇️⬇️
•2 cups Bob's Red Mill gluten free flour
•4-5 very ripe bananas mashed (1 1/2 cups)
•1/2 cup sugar
•1/2 cup butter, softened
•2 tablespoons milk
•1/2 teaspoon vanilla
•1 teaspoon baking powder
1 teaspoon baking soda
•1/4 teaspoon salt
•1/2-1 cup chocolate chips
In one bowl combine all dry ingredients. In a desperate bowl cream together butter and sugar then stir in eggs, milk, vanilla and mashed bananas. Add chocolate to the wet mixture then add the wet mixture to the dry mixture. Bake for 50 minutes at 350 and then you have the most perfect gluten free banana bread!!🍌🍁

Gluten free Mcdonald's 🍳
It's not healthy or beautiful, but the egg mcmuffin meal is gluten free without the bun. This and a strong black coffee was definitely what I needed after a heavy night of karaoke 🎤
The UK still haven't caught up with Europe and do not offer gluten free buns. They say it is because so many stores are franchises and therefore they would not be able to ensure the same standards to prevent cross contamination of the bun. It seems like a bit of a poor excuse given that the European stores can manage it!

My smoothie bowl is consisting of my very own blackberries that I picked - plus, banana, blueberries, raspberries, açai powder, cinnamon & coconut water. Topped with; kiwi, strawberries, buckwheat grouts, pumpkin seeds, cacao nibs & passion fruit 💛💛💛

La vecina de mi abuela también tiene huerto, y le salieron estos tomatitos tipo cherry que están llenos de sabor, y huelen a tomate fresco. Su marido cuida mucho los productos que le echa al huerto, son todos ecológicos. De ahí, el sabor y el olor tan buenos, ojalá pudierais olerlos 😍
Ahora ya en casa, aprovecho todos los tomates, tanto de mi abuela como de su vecina en los desayunos. Las tostadas de hoy son de cereales #singluten
integrales y masa madre.
🌱La primera lleva aguacate machacado + semillas de cáñamo + aceite de oliva virgen extra.
🌱La segunda, aguacate + tomates + aceite de oliva.
Otras opciones que podriamos poner es:
🌙Hummus con semillas de cáñamo. Eso seria alto en proteína. 🌙 Aguacate o mantequilla de frutos secos. Que sería rico en grasas de calidad.
🌙Con mermelada de chia y mantequilla de frutos secos. Aportamos acidos grasos omega 3, proteína y grasas de calidad gracias a la chia. 🌱🌿 Por aquí solo quedan dos sábados para volver a la Península, y hay que aprovechar bien los días. ¡Qué paséis un buen sábado!
