This has been a rough weekend for our family. Our son had some difficulties with friends at school, and I won’t lie, a lot of tears 😢 were shed by this mama. Parenting is hard work. . . . Has anyone ever been to @waffluv ? Their gooey, caramely, crystally Belgian waffles are 😍😍😍😍 but not safe when made in their normal waffle makers so it’s one of those places I don’t think to go very often. They sell their gf dough so I’ve made it at home before in my gluten-free waffle maker and it was good but I never understood why people were obsessed with this place. The @maceys_store in Orem carries sugar pearls in their baking aisle that I’ve contemplated buying so many times without a good enough excuse until now. Christmas. Having friends over. Waffle time. The package has the recipe on the back and I just subbed GF flour in it. And now the obsession is so real. 👅👅👅 Belgian Sugar Waffles: 3.5 cups gf flour (I used cup4cup) 1 packet instant dry yeast 3/4 cup lukewarm almond milk (or normal milk if you do dairy) 1 cup softened butter (2 sticks) 2 eggs 1/2 tsp salt 1/2 tsp cinnamon 1 tsp vanilla 1/2-1 package Belgian pearl sugar Dissolve yeast in lukewarm milk. Let sit five minutes. Add all other ingredients into a bowl and mix. Add yeast after 5 mins. Cover and let rise in a warm place for 30 mins. Dough will grow but won’t quite double. Use gf waffle maker. Spray with cooking spray before each new clump of dough. ❤️❤️❤️❤️

I like to get back to a regular routine. Today I am back to homemade yoghurt, hot cereal, chia seeds, pumpkin seeds, sesame seeds, raisins and fresh oranges. It tasted so good! . Holidays are great for the change, seeing new things, experiencing new things and trying new foods and combinations of foods. But then I am glad to come home and get the house under control and make homemade meals! . I have some whole wheat bread on the go - added carrots to the mixture and, I need to make sugar cookie dough for my kids to cut out the cookies after school. One of my favourite simple breakfasts here in Brazil is tapioca crepes (crepioca!). It's just a couple spoonfuls of tapioca flour mixed up with an egg and fried in ghee or oil. I researched how to make authentic Huevos Rancheros, and apparently it all comes down to the sauce! This was my first time making them and damn....so delish! Here's how I made the sauce: 1. Boil 2 jalapeno peppers, 2 serrano peppers, 1 chili pepper, 3 cloves of garlic, and 1 onion together until soft. 2. Remove from water, cut off pepper stems, and toss in your blender. (For a less spicy sauce, remove the seeds from the peppers). 3. Add 4 tomatoes to the leftover boiling water, and cook until skin begins to peel. 4. Add the tomatoes to the blender, as well as a handful of fresh cilantro. Blend until smooth and set aside. 5. Sautee 1 onion in a sauce pan, until tender. 6. Pour the tomato sauce into the pan with the onions, and add salt and pepper to taste. Continue to cook it for 25-30 mins on medium low heat. 7. “Mote” - Delicious Ecuadorian breakfast dish that’s #naturallyglutenfree ⁣ ⁣ You can easily make this at home folks. Although I’m not sure you can get the “choclo” or “mote” (white corn) they have here back home in Australia or anywhere else for that matter. Sweet corn wouldn’t really go. ⁣ ⁣ We adapted the recipe to what we had but it still went down a treat with some paprika potato chunks. ⁣ ⁣ 🔹 eggs⁣ 🔹 black beans⁣ 🔹 choclo - white corn ⁣ 🔹 tomato⁣ 🔹 cilantro⁣ 🔹 onion and garlic if you like ⁣ 🔹 lime⁣ ⁣ ➡️ Lightly pan fry all ingredients except for eggs. To my mind, there is nothing better after a night out than to enjoy a breakfast of gluten free Huevos Rancheros.
