As promised, here is my recipe for the millet-buckwheat groats pizza crust!🍕 I'll share the chickpea flour one soon--I've run out of chickpea flour... Let me know how it works--I'm not the greatest at writing out recipes because I don't like measuring things that much, which is ironic for someone who got a minor in Chemistry in college...😂
1/4 cup millet, soaked for at least 8 hours
1/4 cup buckwheat groats, soaked for at least 8 hours
1 tsp salt
3/4 cup water
1.5 tsp baking powder (optional—makes it fluffier)
2 tsp psyllium husk
Optional: I also added some dried rosemary and dried thyme
Place drained grains and remaining ingredients in a blender. Blend until smooth. You don’t want it too liquid, so it’s good to let it sit for a bit so the psyllium can do it’s thing. Pour it on a baking dish or cast iron skillet (I recommend lining either one to make it easier). Spread it out until it’s of the size and thickness you want. Bake it at 200C / for about 25-30min. Remove from the oven, add toppings, and bake it until the pizza looks ready to eat!
Note: I used 2 tsp psyllium husk but could probably have used just 1, so feel free to experiment!

My first attempt at a sheet-pan pizza. I brushed the unbaked crust (gluten-free) with roasted garlic and extra virgin olive oil before spreading tomato sauce over top. Then I added lots of fresh mozzarella and some sliced fresh tomatoes. I didn’t have any fresh basil on hand, but a sprinkle of chopped rosemary worked almost as well. All I added was a green salad for a simple and delicious weeknight meal.
It’s Simply Plated Monday, hooray! In the busy month of December, it’s often a struggle to get simple foods together. I know people who would rather eat a granola bar or a pre-made protein shake to stave off hunger, but if you have Food Allergies or an autoimmune disease, those options aren’t for you. For me, mastering a gluten free, dairy free pizza made from my own flour mix has been a creative work in process. , crispy bacon and kale as toppings, or keep it vegan and add mushrooms instead. The vegan cheese I made has a creamy flavor and acts as a means to help the toppings stick to the crust. You can add curry powder to give it a zesty kick, or leave it out for the other flavors to come through.
Experimenting again this time with Cauliflower. There was no dairy in my Cauliflower crust👍🏻 I’m getting lazy! I went to Trader Joe’s and bought their Cauliflower rice.
6 cups cauliflower rice boiling water for about five min. Drain the cauliflower until almost dry. Ring it out in a dry towel.This is the hardest part Make sure it is also cool. I wait about two hours.
Make flax eggs 2 tablespoons flax , 6 tablespoons water let it sit until it gels.
3 tablespoons nutritional yeast.
Mix those three things together and add whatever spices you like.
Then mix in 1 tablespoon of arrowroot or potato starch.
1/4 teaspoon salt
Place parchment paper on baking sheet.
Throw some arrowroot or rice flour on parchment paper and then spread the cauliflower crust on top spreading them down with a fork. We like Thin crust.
Bake for 50 minutes at 375 oven. Check after 40 minutes. Flip and cook 10 min more. Then put your toppings on. Any vegetable any sauce anything you like works. My husband likes Cauliflower. Easy on the sauce it makes it soggy if too much is added. Then bake another 15 minutes or until you think it’s done. This is a great Paleo ,gluten-free ,dairy free vegan recipe. Once you do it gets so much easier the key is to Find grated cauliflower rice that is not frozen. Trader Joes love the company.

famosa in tutto il mondo, puo’ essere ripiena, condita con pomodoro, mozzarella basilico fresco, sale ed olio; è, assieme alla pizza marinara e alla pizza margherita, la più popolare pizza italiana. My first attempt at making gluten free flatbread from scratch!
Turned out amazing! Slightly chewy and it didn’t want to fall apart (gluten frees biggest problem) I think I have a new fave! I may have ate the whole thing 😅😅 Recipe:
-2.5 cups of gluten free flour blend (I have tried a bunch and cup4cup is the best I have found yet)
- 1 1/4 tsp of quick rising yeast
- pinch of sea salt
- pinch of baking powder
- pinch of sugar - 1 1/4 cup of cold water
- 1.5 Tbs of olive oil
Throw dry ingredients in a bowl and add the cold water. I started with a fork and ended up using my hands to get the dough together. It was a tad sticky which seemed to work out perfect.
Sprinkle counter with some flour and knead the dough for around 10 min, add a little more flour to the counter if needed so it doesn’t stick to it.
Break dough into one/two/three round balls depending on how big you want your flatbreads.
Drizzle olive oil over the top and cover in plastic wrap and leave in a warm spot for a couple hours.
Remove dough and flatten into desired shape, I added a bit more flour to the counter so it didn’t stick, and kept it fairly thin.
Top with whatever your heart desires!
I topped mine with homemade garlic butter, Parmesan cheese and drizzled truffle oil over the top and fresh basil when I took it out of the oven! 🙌🏼 happy gluten free flatbread making!
