Kale Salad Made Simple with Easy Tahini Vinaigrette
1 cup RAW tahini
1 cup water
1 cup fresh lemon juice
4-6 cloves garlic, to taste
2 Tbsp Bragg Liquid Aminos, to taste
dash of maple syrup
Blend all ingredients in the blender.
For Salad: Add whatever feels FALL-y into your salad bowl. We started with chopped kale and parsley, then added celery, apple, red cabbage, dried cranberries, pumpkin seeds and sweet potato curls for a pop of color. Really, it’s whatever suits your fancy! Of course, we are having fun with our Saladmaster Food Processor, but you can do it your way too!!! Just get your butts in the kitchen and have some FUN!

Tip: It is great to massage the dressing into the kale with your hands as it helps to break down the fiber in the kale and it tastes better this way. Happy cooking ya’ll. Xo 😘
Collagen Pumpkin Spice Latte 🍂✨🎃🍁👏🏽
You guys voted a big YES on my story for this recipe, so here goes it!
- ketogenic - vegan - creamy - like a big, cozy hug from Autumn herself 🍁 -
- 1 tbsp organic pumpkin purée - 1 tbsp raw almond butter (or sub for 12-16 oz mylk of choice)
- 2 tbsp tocotrienols - t heavy tsp @dandyblend
or 1/2 serving of instant coffee mix
- 1 tsp @animamundiherbals
vegan collagen - 1 tsp pumpkin pie spice - 1 tsp coconut MCT oil - a small pinch of monk fruit or stevia, or maple syrup for a delicious non-keto option
- 1/2 tsp vanilla extract - 1 small pinch sea salt - 12-16 oz hot water (12 oz will be a much thicker latte)
Blend it all up in a high speed blender, pour into an (extremely large) mug, top with cinnamon & enjoy 🎃🍁💖✨

A little grocery store tip:
When at the grocery store to ensure you’re buying organic make sure the SKU# starts with a 9. Anything other than a 9 is not organic.

But i just took the plunge & committed myself to participating in this new at home workout that a few of my friends just graduated from because... I needed a victory other than a scale, like a dress, a red dress perfect for this fall season 🍂💕🍂 I finally got tired of coming up with all sorts of excuses & also am tired of not fitting into some fun clothes, you know leggings and sweatpants are just so very comfortable and forgiving 🙌🏼! So y'all... this is my 📢 ACCOUNTABILITY POST... I am going ALL IN for the next 8 weeks.

Baigan Bhartha: A fire roasted eggplant dish cooked with onions, tomatoes,ginger & garlic and Indian spices.
Baigan also know as eggplant or aubergine in some parts of the world, is a very adaptable vegetable. It is like a sponge that absorbs any flavors or spices it is cooked in. You can fry it, bake it, stuff it, grill it etc.. It is also a great meat substitute.
One of my all time favorite vegetables that I can eat pretty much everyday. Growing up, I was a very picky eater. So picky, that I won’t even eat potatoes, but give me eggplant and I had no issues.
I am originally from the western part of India, but growing up we lived in different cities of Northern India. We were very privileged to have grown in a multi cultural environment. The food we ate was an assortment of North and West Indian dishes. My mother is a magnificent cook and this is her recipe of the Punjabi Baigan Bhartha.

Brussels sprout & sweet potato hash from a few weeks back - I think my color theory professor would be proud of this one! This complimentary color palette began on accident but then I kept going with it. Sweet potatoes, Brussels sprouts, orange bell peppers, and a sweet onion. In college I always tried to push the limit on how many projects I could turn food-related, and am happy I did because I’m still using those skills every day!

Had to stand on my balcony in the pouring rain to take this photo but this recipe was too good not to share! Honey lime sriracha meatballs with brown rice orzo, cucumber, carrot, and green onion. Made the meatballs with ground turkey, garlic, salt, pepper, egg, and gluten free bread crumbs. Baked in the oven at 375 for 25 minutes. I made the sauce with some random things I had at home- honey, sriracha, lime juice, sesame seeds, rice vinegar, and low sodium soy sauce. I mixed the sauce with the cooked meatballs and this was my final product! 😋•

It’s OFFICIALLY fall, which is my favorite season evaaaah and calls for celebration. 🍁 And if that party just so happens to include lots and lots of pumpkin-themed treats — let’s just say you won’t hear me complaining. Probably because my mouth will be full of all the foods. 😋🍪
But if you’ve been following me for a while, you know that the only thing I love more than autumn colors, festive flavors, and sweater weather is experimenting with foods to make the good stuff ALSO be health(ier) so that we can enjoy every bite and FEEL GREAT when we’re done, too!
GF/VEGAN PUMPKIN OATMEAL COOKIES
2c gluten free oats
1c pumpkin purée
1/4c coconut sugar
1/4c unsweetened applesauce
1 handful dried cranberries
1 (big) handful dark chocolate chips
1-2tsp pumpkin pie spice // cinnamon + nutmeg
• Preheat oven to 350*
• Combine all ingredients in medium mixing bowl (( stir in cranberries and chocolate chips last )) until doughy
• Place approximately 1tbs sized scoops onto a greased baking sheet
• Flatten into a cookie shape, as these will not expand when baked
• Bake for 15 minutes or more if you prefer your cookies well-done
