When dinner plan A doesn't work, the instant pot is there with dinner plan B. We got home later than expected from my nieces first birthday party yesterday, and the chicken was frozen solid. So instant pot dinner to the rescue. We decided to leave the chicken for another night and went with a coconut curry. First, I sautéed a small onion and a clove of garlic. Next, I added in a jar of tomatoes. For spices I added 1 Tbsp turmeric, 1 tsp cumin and 1 tsp salt. Then I added a few dashes of chilli powder, nutmeg, ginger, cloves, and pepper. Finally, I added 2 bay leaves. I would have added cinnamon but my son is allergic. To sweeten I added 1 Tbsp of maple syrup and 1 can of coconut milk. To give the curry some kick I added a 1/4 cup of white wine vinegar. I tasted the curry and adjusted a bit before adding in 4 chopped potatoes and a 1/2 of a half of a head of chopped cauliflower. I turned on the instant pot for 4 minutes on high. When it was finished I let it naturally release for 5 minutes. Once on keep warm I added a can of chickpeas and let them warm through. We served over brown rice and garnished with cilantro. It was delicious and from start to finish it took 1 hour. BUT, If you’re a carb addict like me try serving yours up over jasmine or brown rice. 😋🍚 - Directions: • Cover bottom of Instapot with EVOO, sauté onion + 5lbs chicken until lightly browned • Add 2qt Low sodium free range chicken broth 6 cloves garlic 2 tbsp cumin 3 tbsp smoked paprika 1 tbsp chili powder 1 tbsp cayenne 2 cans fire roasted tomatoes 1 jalapeño 1 poblano pepper • Cook on manual for 25 min • Serve up with fresh cilantro and avocado (that I forgot before I snapped the photo, duh! 🥑) - Makes roughly 10 meals Macros: 385cals 40gP/17gF/20gC (Based on 4oz serving of chicken & no rice)

Vegan 🌱and gf Italian veggie pasta 🍝 Cook gf pasta to pkg directions. Chop & sauté 2 carrots 🥕, 1 c mushrooms 🍄, 1/2 a zucchini, and 1 bell pepper🌶 over med heat in 1 tbsp grape seed oil in a large skillet. Meanwhile, dice a small onion and mince 2 cloves garlic. When carrots become a bit tender and mushrooms release their juice, add onion and garlic for a few mins. Then add a couple handfuls of spinach. When it wilts, add marinara sauce to the skillet (enough to coat the veg & pasta). Mix all ingredients and there you have it. No baking needed. I like mine seasoned w crushed rep pepper for an extra kick. It consisted of a new type of gluten-free bread I found, toasted, with butter, @chosenfoods mayonnaise, broccoli sprouts and organic roasted chicken. 🐤 Holy yum! •⠀ Not sure if you have a problem with gluten? Here's the thing: you may have a sensitivity to gluten and not even know it. Why would you not know it? First up, you could be asymptomatic. But more often I see clients who think that them and gluten have a wonderful relationship but as soon as I take them off it they are amazed by how much better they feel. Their skin improves, their gas reduces, their bloat decreases, and their mood improves. 🤗 •⠀ If we look at the scientific literature we are seeing that everyone - to one degree or another - has a problem with gluten. And gluten can jeopardize your fertility 🤰 as well as your thyroid, (which also subsequently impacts your fertility). The way it impacts your thyroid is through something called "molecular mimicry". This happens when the gluten proteins you eat cross your gut and enter the bloodstream and then your immune system raises antibodies to attack said gluten proteins. But then these antibodies get confused and start to think the thyroid is the gluten proteins, (as they look similar) so it goes after the thyroid too - when the thyroid was just minding its own business. Add pasta through it! This PRAWN SAGANAKI WITH SPAGHETTI is a surprisingly simple dish to make and is ready in less than 30 minutes. Yes you heard that correctly. It is perfect for lunch or dinner, whether it is summer or winter. However what Saganaki Prawns remind me of is the warm summer breeze on my father’s island Paros. I was not surprised when it was voted The Best Island in Europe for 2018. It has the most beautiful beaches, charming whitewashed buildings in all the villages, stunning fishing ports and most importantly, the best fresh food I have ever eaten. You simply cannot replicate the food because you cannot buy in the city seafood that fresh (we’re talking falling off the fork fresh) and you cannot buy produce that has been grown so organically. It must be something in the soil because my brother and cousins that live there hardly water the vegetation and it grows so lusciously. Each individual ingredient is full of flavour and then the combination of everything is … mouth watering. So this meal reminds me of all that and more. Ahhh Greece 🇬🇷 can’t wait to visit you again. Now, If you make this meal please try and use fresh prawns. It makes a world of difference. I have also used @dodoni_feta and @greitglutenfree pasta. If you use gf spaghetti you’ll know the torture we go through when cooking it, having to use two forks to separate spaghetti before it sticks together. Like many people, I struggle with waking up early and eating breakfast everyday, which is why I am always searching for easy healthy options. Therefore, today I decided to try and make some easy Paleo breakfast muffins. There are many variations of this muffin but I chose to make the most simplest one. In a large bowl, I mixed eggs, bell peppers of all colors, kale and pink salt. I used coconut oil and poured the mixture into a muffin pan and popped in the oven to bake for about 25 mins. The best part about these muffins is that you can refrigerate them and have them ready for the next day. I had not lost any of the weight I said I was going to lose, I had not made any more money, I had not paid off any more of my debt, I was not any happier, and I was not less stressed out. My biggest fear literally was reality. 12 months went by and NOTHING CHANGED. This was one year ago today and damn, EVERYTHING has changed. One year ago today I was on my first EARNED trip to NOLA as a coach and TERRIFIED but so so EXCITED. I always had a dream of travel but never could afford it. I went totally alone, conquered my fear of flying, and met these beautiful souls for the first time, all of whom are still the BEST friends today! I was down 25lbs and feeling confident, strong, and happy for the first time in literally YEARS. In the last 12 months, coaching has taken me to NOLA (earned), West Palm Beach, Destin FL, Kansas City, Mexico (all inclusive, all expenses paid EARNED), and Indy with a cruise to the Bahamas already lined up for the winter (all inclusive, all expenses paid EARNED). In the last 12 months I have drastically increased my income, paid down debt, made friends that have literally become family and the strongest support system I've ever had - aka I have literally built and created happiness, joy, and freedom for myself on my own terms setting my own hours. Talk about REDUCING STRESS! I challenge you. This day last year, what was your life like. Are you proud of the progress? Did you do everything you wanted, planned and said you were going to do? It’s #pancetta magic friends, and it's real. 1 box #GlutenFree Fettuccine 5 oz GF pancetta, diced 2-3 TBSP extra virgin olive oil 1/2 cup grape tomatoes, halved 1/2 cup frozen peas 1/4 cup fresh parsley, minced Parmesan cheese, shaved Kosher salt and freshly ground black pepper Cook the pasta according to package directions and drain. In a large pan over medium high heat, brown the pancetta in the olive oil. Reduce heat to medium and add tomatoes and peas, cook until warmed through. Watermelon Mint Cider Vinegar Tonic. Refreshing as well as restorative & hydrating. . 3 cups water. 1/4 teaspoon sea salt. 1 cup honey Bring to a boil, once honey is dissolved, remove from heat. Cool to room temperature. 6 cups chopped watermelon. 1 cup tightly packed fresh mint. 1 cup Braggs Apple Cider Vinegar. . Mix the above. Steep in refrigerator for 5 hours but best overnight. Strain mixture. Pour concentrate into a jar. Keeps for one week. . To serve, add 1/4 of tonic to glass and add 3/4 cup water. Add ice. Place mint, sliced cucumber and a cube of watermelon. Legit OBSESSED with this dish and recipe from @therealfoodrds 🔥⚡️ I've made it multiple times and it's too freaking good to keep from y'all. All you need is some veggies and a jar of @primalkitchenfoods chipotle lime mayo. The recipe calls for bacon which I'm sure tastes insaaaaaaaane and adds more flavor complexity than without but each time I make it I never have bacon on hand 👎🏼😭 I always have sweet potatoes , bell peppers, onion and kale and a jar of that good good mayo tho. 👍🏼🙌🏼 I love how this dish is made so tasty by using basically one ingredient to flavor it. And whatayaknow it's Monday aka meatless Monday. Andy just got home and we're going to go for a bike ride and come home and smash this food.
