I’m not at home by my pool and it’s not sunny. So I’ll be staring at this picture all day.
Sweet potato pancake mix recipe!
📍1 c cooked sweet potato
📍3/4 c unsweetened plant-based milk e.g. oat milk
📍2 tspn maple syrup
📍1 tspn canola oil + more for spraying the pan
📍1 c whole wheat flour
📍1 1/2 teaspoons baking powder
1. In a bowl, mash the cweet potato and add the plant-based milk, maple syrup, and canola oil. Give it a quick whisk.
2. Add the flour and baking powder to the wet ingredients. Whisk until incorporated. Fold in the chocolate chips. Let the batter sit for a few minutes.
3. Spray a flat pan or griddle with oil and heat it up to medium to low heat. Add a small ladle of pancake batter*. Let it cook until the middle becomes bubbly and the corners set, then flip with a spatula. Let it cook on the other side until done.
4. Repeat for all the pancakes. You should be able to get 8 pancakes out of the batter.
5. Plate & drizzle with maple syrup.
👉🏾 Notes: If the batter spreads too much in the pan, whisk a bit more flour into the batter. If it doesn't spread enough, add a bit more plant-based milk.

Here comes another brilliant new style udon! A dessert udon in a iced coffee! We did get a lot of dessert udon suggestions but this one really stood out! Loaded with Japanese peach jelly, kiwi and sugar syrup, this sweet coffee flavour udon is for adventerous food lovers!

Speaking of mind-blowing, who would of thought this!! From the outside it's really a beer but the beer is actually our Bukkake broth soup and bubbles are actually grated yam. Served cold with edamame! Enjoy!

Curried Halloumi & Spinach 🍽
This is a quick quirky meal you could use as a starter!
It only takes about 5 minutes to make and is delicious. All you do it fry the halloumi in 2 tsp Of curry powder, add cream and 1 more tsp of curry powder and add as much spinach into the pan as you like.
The flavours really work for being so simple 👍🏽
