🔸1/2 tsp red pepper flakes
🔸1 Tbsp olive oil
I heat for 1.5 mins in microwave. Done!

It’s that time of year again...colds, flus, congestion, oh my. 😱 I made this super immune boosting & gut healing green soup to give me a little extra protection against sickness this season. The sweet potatoes and greens in this soup are packed full of vitamin C, the parsley is chalk full of antioxidants and the cilantro is great for detoxifying the body. Not to mention bone broth is one of the best things for healing the stomach lining!
To make: - Cube and sauté 2 Japanese sweet potatoes over medium high heat with about 2 T olive oil for about 10minutes. - Once soft, add 1 giant handful of spinach, 1 giant handful of baby kale, a bunch of parsley, and a bunch of cilantro. Add about 2 cups of bone broth and 1 T fresh grated ginger and bring to a boil. - Reduce heat and simmer for 10-20 minutes then blend.

If you’re in need of a last-minute Thanksgiving side, these maple Brussels sprouts with pomegranate seeds, toasted pecans and orange zest are 💣 and don’t require an exact recipe (which is how I prefer to cook). Flexible guide here ⬇️ Ingredients:
- Brussels sprouts (figure 1lb for each 4 people) - Pomegranate arils
- Pecan pieces - Pure maple syrup - Naval orange, zested - Olive oil - Chili powder - S&P
1. Preheat oven to 400F. Rinse sprouts, remove outer leaves and cut off core. Slice in half.
2. Place on a sheet pan and drizzle with a couple of tablespoons each of olive oil and maple syrup, so they are covered but not drowning. Season with salt and pepper.
3. Roast 30-35 minutes, tossing halfway, until very caramelized.
4. In the meantime, toast pecan pieces in a dry skillet over medium-low heat, shaking frequently, until fragrant (5-7 mins but let your nose guide you and be careful not to burn). Remove from heat.
5. Place roasted sprouts in a large bowl with pom seeds, pecans, a squeeze of orange juice, dash of chili powder and orange zest to taste. Toss to combine. Finish with an extra drizzle of maple syrup if desired. .

Pork taco salad for dinner tonight - made in the #instantpot

This was a cheat taco mince, I had an old fajita seasoning in the cupboard that I used. I also didn’t have any peppers - so it’s only pork mince, garlic, onions and the seasoning packet with some tomato paste, browned on sauté and then cooked on high pressure for 10 minutes - super yummy still! .
My guacamole is hidden under the sour cream and cheese - the avocados weren’t great, so I spiked it with red onion, tomatoes and lime juice to try to bring them back to life - kind of worked, but it was still a brown mess. .
I am out for Mexican tomorrow night for dinner... wonder which meal will be better 😜

These Rosemary Prosciutto Wrapped Apples might be the easiest appetizer of all time 🍎
To prepare, cut up as many apples as you like and wrap each slice with prosciutto (I get mine at Trader Joe’s). Place on a parchment paper lined pan and brush each slice with melted coconut oil + cinnamon. Bake for 10 minutes at 375° then flip each slice and coat the other side with coconut oil, cinnamon, and fresh rosemary. Bake for another 10 minutes and enjoy ‘em while they’re hot 🔥

Weight Loss vs. Weight Gain with Deconstructed Cheeseburger Bowls from The Meal Prep Manual- 60 Minute Meals. I made a batch of these on Sunday with 2 other meals and it only took me 92 minutes to finish up 15 meals 🤠🤠
Included in the book are tips for how to make the recipes more weight loss and weight gain friendly. I get asked so often if the books are good for people trying to lose weight or trying to gain weight and the answer is yes to both but it may be necessary to adjust the serving sizes to fit your needs. I can’t say it enough times, WEIGHT LOSS AND WEIGHT GAIN ARE DIFFERENT FOR EVERYONE. What one person needs to gain/lose weight can be worlds away for what it takes another individual. It is 100% not possible to create recipes that work for everyone’s goals. You can certainly use the recipes as written and fill in other calories throughout your day as needed!!
On the weight loss side there is less meat and half of the amount of potatoes. The left side uses ground turkey instead of beef for a leaner option thus reducing calories. There is also a greater amount of shaved Brussels sprouts to add volume without stacking up the calories. I find that mixing the meat and the Brussels sprouts together helps make them suck less 😇
The weight gain side has double the potatoes and more beef than the weight loss side. Depending on what diet protocol you follow, you can adjust the meal as needed. Obviously if you are a keto dieter then adding more potatoes is the opposite thing to do if you were trying to gain weight. Increase the amount of beef in this case and cook the Brussels sprouts in more oil. I like to serve this dish with a vinegar based BBQ sauce for some moisture and extra flavor. It is calorie sparing when compared to ketchup and gets the job done just as well 👍👍
Got that pre thanksgiving cleanse going STRONG 💪🏻 jk jk you don’t need a cleanse before or after Thanksgiving. Tomorrow should be a day spent rejuvenating the soul with the people you love 💗 Your worth or value is not determined by what you eat. So spend less time worrying about your food choices and more time cherishing the quality time with your loved ones, I sure know I will. It’s not often that all my family is together so I’m very excited for tomorrow’s craziness. Especially when my grandmas had a little too much 🍷 and starts using a turkey baster as a mic to sing her “Bruno [mars]” What are you guys most excited for tomorrow? For me it’s board games after dinner, 🥓+ brussels, and the mashed potatoes (plus quality time obvi! Also let’s be real, I’m excited for all the food!!)
Also speaking of potatoes- did you know when you cook and cool potatoes 🥔 it increases their resistant starch content. Resistant starch is a carb that is also considered a fiber. This starch resists digestion in the small intestine and moves to the large intestine where bacteria feed on it and produce SCFAs or short chain fatty acids. These fatty acids are the preferred fuel for your intestine and have a myriad of health benefits stated in the scientific literature like protection against colon cancer, blood sugar regulation, improved insulin sensitivity, increased absorption of minerals like iron and calcium, decreased inflammation markers, etc. (DM me for peer reviewed studies and I can share them)
So all that to say I had a delicious breakfast this morning which was leftover red potatoes cooked in @organicvalley
cultured butter, 2 pasture raised eggs, @applegate
turkey bacon, @ottos_cassava_flour
cassava flour tortillas (recipe on back of flour bag), guac, @miyokos_kitchen
chive cream cheese, and all the hot sauce.
I hit the jackpot with this meal 😎 These are the types of meals that make me really question why unhealthy food has ever existed. You guys, healthy meals can be SO flavorful and delicious when you allow them to be. Load on the spices and healthy fats and some healthy salt and you will always have a delicious meal 😋
The next time I make this meal I will try to get more precise measurements of the ingredients to share the recipe! But honestly, if you just throw the food together and go with your instincts, then you’ll surely come out with something scrumptious 🤩
Meal deets: on a little below medium heat, I cooked some brussel sprouts, cauliflower, and cabbage in a pan with butter (you could also use another healthy fat), fresh minced garlic, black pepper, and pink salt. After about 10 minutes I added beef broth to add more flavor. Then once the brussel sprouts were cooked enough, I added ground beef and cooked it till ready. Then I put some avocado on the side!

Haven’t been on here a lot lately because we’re moving and things are crazy! Realized at 2:30 I hadn’t eaten anything yet so I broke out some Lily’s and sugar free marshmallows my mom got me for a quick snack so I can keep packing🤘🏻
🍁Gluten free, grain free, soy free, dairy free, egg free, plant based Pumpkin Pie with a Maple Pumpkin Pie Spiced “Icing”🍁 that’s a mouthful😅 but it’s what I’m making this Thanksgiving! And let me tell you—it’s drool worthy🤤 and doesn’t leave you feeling all gross and heavy after eating it like most pie🙌🏼 this is one you could definitely eat for breakfast😉 hope you guys enjoy, and have a happy, healthy Thanksgiving!
•1 cup water
•1/2 can or more of organic pumpkin purée (I did 1/2 can but I’d be interested to try it with a whole can)
•1.5 cups almond flour
•1 1/3 cups cassava flour
•1 tsp baking powder
•1/2-1 tsp pumpkin pie spice
•4 tbsp raw honey or 2 tbsp coconut sugar •1 tsp coconut oil
-Maple Pumpkin Pie Spice “Icing”-
•10-12 medjool dates •dash of pumpkin pie spice
•1 tsp maple syrup
•water to thin
Preheat oven to 350 degrees. Add all of the pumpkin pie ingredients, except coconut oil, into the blender and blend until smooth. Take the coconut oil either in your hand or on a paper towel and generously grease the pie dish—this is very important in preventing it to stick. If you want to omit, you can try using parchment paper but since I didn’t go that route I’m not sure how the final product will turn out🤷🏽♀️. Pour the pie batter into the dish and spread it out evenly. Pop it into the oven for about 50 min-1 hour (I did 50 min) until the top is golden and the inside passes the toothpick test. Take out and let cool/firm up until you start icing and cutting.
While the pie is baking, add all the icing ingredients into the blender and blend until smooth. Taste and adjust as necessary. Spread evenly onto the top of the pie. That’s it!🍁🍂

Let’s talk about SUGAR for today’s #wednesdaywhy
I think it’s important to understand that sugar is a source of energy with no nutritional benefits that can have some negative repercussions. Eating sugar can cause your body’s blood sugar to spike and crash, making you feel hangry, light headed, headachey, etc. Excess sugar is also stored as fat if it’s not used. It can have negative impacts on your gut health, which in turn impacts so many other parts of your body.
Perhaps most importantly, sugar is ADDICTIVE! Eating sugar activated your brain in a similar way to drugs. Eating sugar activates parts of your brain that make you crave even MORE sugar. That’s why it’s so easy to turn into a crazy person around the holidays 😬
I definitely still eat sugar, but I try to minimize its presence in my daily life. I also try to balance it with lots of healthy fats, protein, and fiber to minimize its impact on my blood sugar.
This holiday season (and any other time), I encourage you to notice how sugar impacts you! If you find yourself crabby, moody, hangry, bloated, etc., it may be time to ask yourself if it’s worth it 🙃
