My morning beverage of choice; Green Protein PowerStart, plant-based. 🌱 Makes enough for two, but you probably won't want to share. 2 scoops vanilla protein powder (I like @drinkorgain
), 1 scoop @vitalproteins
collagen peptides, half a green or tart apple, handful of spinach, slice of lemon with peel, a few coin size pieces of fresh ginger, 1 cup cucumber chunks, same for frozen mango chunks, and a few pieces of frozen zucchini, 1 tsp powdered spirulina, 1 tsp cinnamon; 🌪️ in Vitamix or high powered blender. for the inspiration! Produce hack ALERT: keep your plastic container or bag of spinach or kale right in the freezer and use frozen, it comes out in shards (and won't rot in the produce drawer). And ginger does not have to be peeled, just wash, then grate as is (most of the brown will stay on top of the grater) OR just cut in small pieces and toss in the blender. Parenting is hard. Some days it makes you not only want to throw in the towel, but literally throw it on the ground, stomp on it and shout a few expletives. 🤬
Every one of our three children are entirely different, making parenting a bit like whack-a-mole. 🙅🏼♀️
We’re in the midst of the teen years, the pre-teen years, and the terrible 8’s (didn’t even know that was a freaking thing!). Let’s not forget the myriad of other things that aren’t kid related that come at us every day. 🤷🏼♀️
I will tell you this, ever since I can remember, my husband and I flop down on the bed (usually by 9pm...I need my sleep people), look at each other, sigh, say how terrible they are then say how much we love them them all in one breath. 👫
Maybe it’s age, maybe it’s Maybelline, but the more I see, feel and do, the more I realize the importance of keeping my feet rooted in the ground so I have enough to give. Enough for myself, Jeff, the kids, family and friends. 🧘🏼♀️

1. Slice baby eggplants lengthwise, toss in olive oil and salt

What if food rules were fun. All the things we tell ourselves we have to do/eat in order to be healthy. Some things we read on the internet, some things other people have shared with us, some things we have read in books and at the end of it all we have a picture of what we think we should be doing but we have no idea why or how we got here. To take it a step further, we have no idea how to keep up with all of our own rules. What if i told you to start over and said it was okay to have fun experimenting new things and seeing what works for Y O U. Something might be healthy, but it doesn’t mean you have to lock yourself into doing that thing every single day. Our health is a gift and I really do think we should have fun learning how to fuel our bodies while we keep our eyes on our own plates. What have you found to be the hardest part of “keeping up?”

Low carb collagen zucchini muffins by @alimillerrd
The banana added just a hint of sweetness w/o non-caloric sweeteners (which I’ve been trying to minimize lately). These have very Keto friendly macros and the perfect muffin consistency. I used 5 eggs, vanilla extract instead of almond and about 1/4 cup of tigernut flour in place of some almond flour b/c I was short. Still worked beautifully. Thx Ali for a great muffin recipe! Perfect for a Sat morning!

Food time. I bought quite a few pantry items this week because they ran out (creamed coconut, lemon juice, white wine vinegar) or were on offer (walnuts, my favourite mustard, sandwich spread), but otherwise it's the usual load of vegetables, some fruit, and some organic meat, eggs, and sustainably caught fish. Reintroductions are eggs, chocolate, rice, walnuts, and several seeds.
I'm particularly looking forward to cooking with the spaghetti squash and round courgettes, I don't have anything specific in mind yet but I thought they would be fun. I also couldn't resist the cassava, I haven't prepared fresh cassava for ages.
All in all I spent just over €45 this week, a bit more than usual because of all the pantry items. Most things are from @lidlnederland

I keep hearing people critique the bar game for being high in sugar, but this bar isn’t sweet — it’s electric. [⚡️⚡️] No sugars need apply when you have sensations of tangy lemon and spicy ginger coming out to play. Regardless, H8rs gonna h8, and last I checked, ain’t nobody died from eating chewy bars—so y’all health coaches can calm down about natural sugars. If it comes from the dirt, then it’s probably a-okay.
